Moong Dal Halwa is one of the most relished desserts of Rajasthan and Uttar Pradesh. Moong Dal Halwa is prepared during auspicious occasions like Holi, Diwali and other celebrations.

Given below is an easy recipe of making Moong Dal Halwa, followed by step by step photos and a recipe video:

Preparation Time: 4 hours for soaking moong dal in plain water + 5 minute for preparing the ingredients required for making Moong Dal Halwa and grinding the Moong Dal for making Moong Dal Halwa

Cooking Time: 15-20 minutes for cooking the ground Moong Dal in ghee for making Moong Dal Halwa + 10 minutes for cooking Moong Dal Halwa after adding sugar, water and khoya

Ingredients for making Moong Dal Halwa:

  • Splitted and Dehusked Green Gram or Dhuli Moong Dal or धुलि मूंग दाल - 1 small cup, soaked in plain water for 4 hours
  • Clarified Butter or Shudh Ghee or Desi Ghee or देसी घी - 1 small cup
  • Khoya or Mawa or खोया या मावा - 150 gm
  • Dry Fruits or ड्राई फ्रूट्स - as per taste and requirement
  • Raisins or kismis or किसमिस - as per taste and requirement
  • Sugar or cheeni or चीनी - as per taste and requirement
  • Water or paani or पानी - as per requirement; The amount of water should be enough so that the moong dal is completely submerged in it and there is some water above the layer of moong dal.

Procedure for making Moong Dal Halwa:

  1. Transfer the soaked Splitted and Dehusked Green Gram or Dhuli Moong Dal to a mixer jar and coarsely grind it.
  2. Then chop the dry fruits into small pieces. Use dry fruits as per your taste and requirement.
  3. Now heat 1 small cup clarified butter or desi ghee in a kadhai and lower the flame to medium level.
  4. Then add the coarsely ground Splitted and Dehusked Green Gram or Dhuli Moong Dal to it. Stir the dal from the base of the kadhai and cook it till the ghee begins to seperate from the cooking ingredient.
  5. As the moong dal will get cooked it will change its color and ghee will begin to seperate from it. When the moong dal will be completely cooked it will stop sticking to the surface of the kadhai and appear granular (as shown in the images below).
  6. At this point add sugar to the kadhai followed by water. The amount of water should be enough so that the moong dal is completely submerged in it and there is some water above the layer of moong dal.
  7. Allow the moong dal to cook.
  8. Slowly the sugar will get dissolved and moong dal will soak up all the water and swell. (Remember, do not completely dry the water. The texture of the moong dal should be moist and not dry.)
  9. Then add chopped dry fruits and crumbled khoya or mawa to the kadhai. Stir and mix the ingredients well. When the ingredients attain a uniform halwa like testure then turn off the flame and transfer the prepared Moong Dal Halwa to a serving plate.
  10. Garnish it with chopped dry fruits, raisins and crumbled khoya or mawa. The mouth-watering and satiating Moong Dal Halwa is ready to be served.

मूंग दाल हलवा बनाने की प्रक्रिया:

  1. धुलि मूंग दाल को एक मिक्सर जार में डालें और दरदरा पीस लें।
  2. फिर ड्राई फ्रूट्स को छोटे टुकड़ों में काट लें। अपने स्वाद और आवश्यकता के अनुसार ही ड्राई फ्रूट्स का उपयोग करें।
  3. अब एक छोटा कप देसी घी को कढ़ाई में डालकर गरम कर लें और फिर आंच को मध्यम स्तर तक कम कर दें।
  4. इसके बाद कढ़ाई में पिसी हुई धुली मूंग दाल डालें। मूंग दाल को कल्छी से अच्छे से कढ़ाई के तले से सटा कर चलाएं और दाल से घी के अलग होने तक चलाकर पकाएँ।
  5. जैसे-जैसे मूंग दाल पकेगी, इसका रंग बदल जाएगा और मूंग दाल से घी अलग होने लगेगा। जब मूंग दाल को पूरी तरह से पक जाएगी है तो यह कढ़ाई की सतह से चिपकना बंद हो जाएगी और दानेदार सी दिखाई देने लगेगी (जैसा कि नीचे दी गई छवियों में दिखाया गया है)।
  6. इस समय कढ़ाई में चीनी और पानी डालें। पानी की मात्रा इतनी होनी चाहिए कि मूंग दाल पूरी तरह से पानी में डूब जाए और मूंग दाल की परत के ऊपर भी थोड़ा पानी हो।
  7. मूंग दाल को पानी में पकने दें।
  8. धीरे-धीरे चीनी घुल जाएगी और मूंग दाल पानी सोखकर फूल जाएगी। (याद रखें, पानी पूरी तरह से सूखाना नहीं। मूंग दाल में पर्याप्त नमी रहनी चाहिए।)
  9. फिर कढ़ाई में कटे हुए ड्राई फ्रूट्स, किसमिस और कसा हुआ खोया या मावा डालें। सामग्री को अच्छी तरह से चलाकर मिलाएं जब तक कि सारी सामग्री एक साथ मिलकर हल्वे के जैसी न दिखने लग जाए, तब गैस को बंद कर दें और तैयार मूंग दाल हलवा को एक सर्विंग प्लेट में निकाल लें।
  10. इसे कटे हुए ड्राई फ्रूट्स, किसमिस और कसा हुआ खोया या मावा के साथ गार्निश करें। मन-मोहक मूंग दाल हलवा परोसने के लिए तैयार है।
