Sehjan or shehjan or drumstick or munga is a vegetable with Indian origin and incredible amount of nutritional and health benefits. The abundant amount of medicinal benefits of this vegetable are just amazing. They can be eaten as a Shehjan Ki Sabji curry dish or in combination with highly proteinacious mixed dal.

Ingredients for making Shehjan Yellow Dal:

  • Mixed Pulses (Red Lentils, Split Pigeon Peas, Yellow Lentils) - 1/2 small cup
  • Drumsticks or shehjan - 15-20 pieces of 1.5 inches size
  • Onion or pyaz - 1, finely chopped
  • Garlic or lehsun - 5-6 petals, finely chopped
  • Green Chilli or hari mirch - 3-4, finely chopped
  • Ginger or adrak - 1/2 inch piece, finely chopped
  • Tomato or tamatar - 1, finely chopped
  • Turmeric Powder or haldi powder - 1 tea spoon
  • Cumin Seeds Powder or jeera powder - 1/2 tea spoon
  • Red Chilli Powder or lal mirch powder - 1/2 tea spoon or as per requirement
  • Black Pepper Powder or kali mirch powder - 1/2 tea spoon
  • Salt as per requirement
  • Mustard Oil (sarson ka tel) or Refined oil - as per requirement
  • Coriander Leaves or hara dhaniya - as per requirement for garnishing

Procedure for making Shehjan-Yellow Dal:

  1. Wash the mixed yellow pulses well with water and the chop the drumsticks or shehjan into equal size pieces of 1.5 inches. Wash the drumstick or shehjan pieces well with water.
  2. Now heat some oil in a kadhai and add finely chopped garlic, ginger and green chilli to it. Saute the ingredients till they turn golden brown in color.
  3. Then add finely chopped onion to the kadhai and saute it too, till it turns golden brown in color.
  4. Now add all the powdered spices (turmeric powder, red chilli powder, black pepper powder, cumin seeds powder) and salt to the kadhai. Stir and saute the spices over low flame for 1 minute.
  5. Then add the chopped tomato to the kadhai. Mix and cook the tomato pieces with the other ingredients till they become soft and tender.
  6. When the tomato pieces appear cooked then add chopped pieces of drumstick or shehjan to it. Mix the ingredients well.
  7. Now add the yellow pulses to the kadhai and mix.
  8. Cook for 1 minute and then add 1.5-2 big cup water. You can also add water as per your requirement.
  9. Now transfer the contents of the kadhai to a pressure cooker and then pressure cook the ingredients for 1 whislte over high flame.
  10. Then lower the flame and cook the for 2 minutes more and then turn off the flame.
  11. When the pressure cooker cools and opens by itself, then transfer the hot Shehjan-Yellow Dal to a serving bowl. Garnish with chopped coriander leaves and serve.

शेहजन-पीली दाल बनाने की प्रक्रिया

  1. पीली दाल के मिश्रण को पानी के साथ अच्छी तरह से धो लें और शेहजन को 1.5 इंच के बराबर आकार के टुकड़ों में काट लें। शेहजन के टुकड़ों को पानी के साथ अच्छी तरह धो लें।
  2. अब कढाई में थोड़ा तेल गरम करें और उसमें बारीक कटा हुआ लहसुन, अदरक और हरी मिर्च डालें।उनको रंग में सुनहरा भूरे होने तक भूनें।
  3. फिर कढ़ाई में पतला और बारीक कटा हुआ प्याज डालें, और इसे भी रंग में सुनहरा भूरे होने तक भूनें।
  4. अब सभी पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, काली मिर्च पाउडर, जीरा पाउडर) और नमक डालें। 1 मिनट तक कम आँच पर मसाले को भूनें।
  5. फिर कढ़ाई में कटा हुआ टमाटर डालें। टमाटर के टुकड़ों को बाकि सामग्री के साथ पकाएं जब तक वे नरम न हो जाएं।
  6. जब टमाटर पक जाए है तो कढ़ाई में शेहजन के टुकड़े डालें। अच्छी तरह से सामग्री मिलाएं।
  7. अब पीली दाल के मिश्रण को कढ़ाई में डालें और मिलाएं।
  8. 1 मिनट के लिए पकाएं और फिर कढ़ाई में 1.5-2 बड़ा कप पानी डालें। आप अपनी आवश्यकता के अनुसार पानी डाल सकते हैं।
  9. अब कढ़ाई की सामग्री को एक प्रेशर कुकर में डालें और फिर 1 सीटी आने तक के लिए तेज आँच पर सामग्री को पकाएं।
  10. फिर आँच को कम करें और 2 मिनट के लिए पकाएं और फिर गैस बंद करदें।
  11. जब प्रेशर कुकर ठंडा होजाए तो, गरम शेहजन-पीली दाल को एक कटोरा में परोसें। कटे हुए धनिया के पत्तों के साथ गार्निश और परोसें।
