Curd Rice is a dish famous across the southern states of India. It is usually served at the end of the main course meal because it helps is easing out the effect of spices used in main dishes. It is also known for aiding in digestion. Learn how to make this tasty and soothing dish with the help of step by step photos and detailed recipe given below:

Ingredients for making Curd Rice / सामग्री:

  • Steamed Rice - 1 big cup  or 250 ml cup (चावल)
  • Curd - 1 big cup or 250 ml cup (दही)
  • Bengal Gram - 1 tea spoon (चना दाल)
  • Black Mustard Seeds - 1 tea spoon (राई दाना)
  • Curry Leaves - as per requirement (करी पत्ता)
  • Whole red chillis - 2-3 (साबुत लाल मिर्च)
  • Green Chillis - 2-3; chopped along the length (हरी मिर्च)
  • Refined oil - 1 tea spoon (रिफाइंड तेल)
  • Salt as per taste (स्वाद के अनुसार नमक)

Procedure for making Curd Rice:

  1. Take the rice in a big mixing bowl and curd to it. Add salt as per taste and mix all the ingredients well.
  2. Now heat 1 tea spoon refined oil in a kadhai and lower the flame when the oil is hot.
  3. Then add the splitted bengal gram to the hot oil. Saute the splitted bengal gram till it turns golden brown in color.
  4. As the splitted bengal gram becomes slightly brown in color add the curry leaves, black mustard seeds and the whole red chillis. Saute the ingredients over low flame.
  5. Then add the chopped green chillis and saute them too. The tadka for the curd rice is now ready.
  6. Then pour the tadka into the curd and rice mixture and mix. Transfer the curd rice to a beautiful diah and serve.

कर्ड राइस बनाने की प्रक्रिया:

  1. एक बड़े कटोरे में चावल लें और इसमें दही डालें। फिर स्वाद के अनुसार नमक डालें और अच्छी तरह से सभी सामग्री को मिलाएं।
  2. अब एक कढ़ाई में 1 चम्मच रिफाइंड तेल गर्म करें और जब तेल के पूरी तरह से गर्म हो जाने पर आॅच कम करें।
  3. फिर गर्म तेल में चना दाल डालें। चना दाल को सुनहरा भूरे रंग का होने तक भूनें।
  4. जब चना दाल हल्का भूरे रंग का होता हुआ दिखे, तब कढ़ाई में करी पत्ता, राई दाना और साबुत लाल मिर्च डालें। कम आॅच पर सारी सामग्री को भूनें।
  5. फिर कटी हुई हरी मिर्च को डालें और उसे भी भूनें। कर्ड राइस के लिए तड़का अब तैयार है।
  6. फिर कर्ड राइस के मिश्रण में यह तड़का डालें और अच्छे से मिलाएं। अब एक सुन्दर सी प्लॆट में कर्ड राइस को डालें और परोसें।
