Makhana Chiwda is a famous snack to munch upon during fasts or vrats. It is a good source of protein, carbohydrates and good fats along with delicious taste. When prepared using normal salt this Makhana Chiwda snack can also be enjoyed with evening tea or any other beverage. Its crispy texture and slight spicy taste will always make you crave for more. 

Prepare this amazingly tasty and easy snack with the help of a detailed recipe, step by step photos and video given below:

Ingredients for making Makhana Chiwda:

  • Lotus Seeds or Makhana - 1 small cup; (मखाने)
  • Almonds - 1 table spoon; (बादाम)
  • Cashews - 1 table spoon; (काजू) 
  • Flattened Rice or Chura or Chiwda - 1 small cup; (चूरा या चूड़ा या चिवड़ा)
  • Curry Leaves - as per requirement; (करी पत्ता)
  • Green Chilli - as per taste, cut into 2 pices along the length; (हरी मिर्च)
  • Turmeric Powder - 1 pinch; (हल्दी पाउडर)
  • Black Pepper Powder - 1/2 tea spoon; (काली मिर्च पाउडर)
  • Rock Salt or Sendha Namak - as per taste, you can also use normal salt if you are not making Makhana Chiwda during fasting or vrats; (सेंधा नमक / सामान्य नमक)
  • Desi Ghee - as per requirement; (देसी घी)

Procedure for making Makhana Chiwda:

  1. Place a thick based kadhai on the gas stove and heat it. (If you have a kadhai made or iron metal then it is better to use it otherwise you can use any kadhai.) 
  2. When the kadhai is hot enough then add the flattened rice or chura or chiwda to it. Stir regularly from the base of the kadhai to dry roast the flattened rice or chura or chiwda. Roast the flattened rice or chura or chiwda until it turns light red in color and crispy.
  3. When the flattened rice or chura or chiwda is uniformly roasted and is crispy then transfer it to a plate.
  4. Then add 1 table spoon ghee to it.
  5. As soon as the ghee melts, add cashews and almonds to the kadhai to roast them till then turn uniform crispy red in color. Remove the roasted cashews and almonds to the plate containing the roasted flattened rice or chura or chiwda.
  6. Now add finely chopped green chilli and curry leaves to the same kadhai.
  7. After 1-2 seconds add turmeric powder to the kadhai and then quickly add the lotus seeds or makhane to the kadhai.
  8. Stir and roast the lotus seeds or makhane till all of them turn crispy. Take one lotus seed or makhana in your hand and press it with your fingers. If it gets crushed easily then it means the lotus seeds or makhane are now roasted and ready to be used for next step. If the lotus seeds or makhane do not get crushed easily then you need to stir and cook them for some more time.
  9. When all the lotus seeds or makhane are nicely and uniformly roasted then remove the ingredients of the kadhai to the same plate containing roasted flattened rice or chiwda.
  10. Add rock salt or sendha namak as per your taste. (You can also use normal salt if you not making this dish for fasting).
  11. Add black pepper powder and mix all the ingredients well.
  12. The makhana chiwda is ready. Transfer it to serving dish and serve. This snack can eaten during fasts and you can also munch upon this tempting makhana chiwda with evening cup of tea during normal days. 

मखाना चिवड़ा बनाने की प्रक्रिया:

  1. गैस स्टोव पर एक मोटे तले की कढ़ाई रखें और इसे गरम करें। (यदि आपके पास लौहे की कढ़ाई है तो इसका इस्तेमाल करें, नहीं तो आप किसी भी कढ़ाई का उपयोग कर सकते हैं।)
  2. जब कढ़ाई अच्छी गरम होजाए तो चूरा या चूड़ा या चिवड़ा को इसमें डालें। कल्छी को कढ़ाई के आधार से सटाकर लगातार चलाते हुए चूरा या चूड़ा या चिवड़ा को भुनें। चूरा या चूड़ा या चिवड़ा को हल्का लाल रंग का और कुरकुरा होने तक भूनें।
  3. जब चूरा या चूड़ा या चिवड़ा समान रूप से हुने हुए और कुरकुरे दिखाई दें तो उन्हें एक थाली में निकाल लें।
  4. फिर कढ़ाई में 1 बड़ा चम्मच देसी घी डालें।
  5. जैसे ही घी पिघल जाए, तो कढ़ाई में काजू और बादाम को डालें और उन्हें भी चलाते हुए क्रिस्पी लाल रंग का होने तक भूनें। भुने हुए काजू और बादाम को उसी थाली में निकालें जिसमें भुना हुआ चूरा या चूड़ा या चिवड़ा निकाल कर रखा हुआ है।
  6. अब इसी कढ़ाई में बारीक कटी हुई हरी मिर्च और करी पत्ता डालें।
  7. 1-2 सेकंड के बाद ही कढ़ाई में हल्दी पाउडर डालें और फिर तुरन्त ही इसमें मखाने डाल दें।
  8. मखाने को कल्छी से चलाते हुए भूनें, जब तक कि वे सभी कुरकुरे न हो जाएं। एक मखाने को अपने हाथ में लें और इसे अपनी उंगलियों से दबाएं। अगर यह आसानी से कुचल हो जाता है तो इसका मतलब यह है कि मखाने अब भुन चुके हैं। यदि मखाने को आसानी से नहीं दबते हैं तो आप उन्हें कुछ और समय के लिए चलाते हुए भूनें।
  9. जब सभी मखाने अच्छी तरह से और समान रूप से भुन जाएं तो कढ़ाई की सारी सामग्री को उसी थाली में निकालें जिसमें भुना हुआ चूरा या चूड़ा या चिवड़ा निकाल कर रखा हुआ है।
  10. अब इस थाली में अपने स्वाद के अनुसार सेंधा नमक डालें। (यदि आप मखाना चिवड़ा को उपवास के लिए नहीं बना रहे हैं तो आप इसमें सेंधा नमक की जगह सामान्य नमक का भी उपयोग कर सकते हैं)।
  11. अब इसमें काली मिर्च पाउडर डालें और फिर सारी सामग्री को अच्छी तरह से मिलाएं।
  12. आपका मखाना चिवड़ा तैयार है, इसे एक सुन्दर से बर्तन में डालें और परोसें। यह नाश्ता उपवास के दौरान खाया जा सकता है और आप इसे अन्य सामान्य दिनों के दौरान शाम को चाय के साथ भी खा सकते हैं।
