Parwal Ka Chokha - Parwal Chokha or Parval Ka Bharta Recipe With Lakshmi Recipes

A tasty Bihari dish that scales high on health meter as well as in taste is Parwal Ka Chokha. Loaded with nutrition, the recipe is completely zero oil and has a spicy & tangy taste.

Preparation Time: 10 minutes

Cooking Time: 10 minutes to boil the pointed gourds or parwal + 30 minutes to allow the cooker to cool + 10 minutes to mash and mix the boiled pointed gourds or parwal with the other ingredients

Ingredients for making Parwal Ka Chokha Recipe or Parval Ka Bharta Recipe:

  • Pointed Gourd or Parwal - 8-10
  • Salt - as per taste
  • Garlic or lehsun - 1 table spoon, finely chopped
  • Green Chilli or hari mirch - 1 table spoon, finely chopped
  • Coriander Leaves or dhaniya patti - 1 table spoon, finely chopped
  • Lemon Juice or nimbu ka ras - 1 table spoon
  • Water or pani -1 small cup

Procedure for making Parwal Ka Chokha Recipe or Parval Ka Bharta Recipe:

  1. Scrape off the pointed gourds or parwal lighlty to remove the dirt. Do not peel off the parwal or pinted gourds.
  2. Now chop off both the ends of the pointed gourds or parwal, and wash them with clean water.
  3. Transfer these pointed gourds or parwal to a pressure cooker and add 1 small cup water to it. Then pressure cook these pointed gourds or parwal for one whistle. 
  4. Turn off the gaas after one whistle and allow the pressure cooker to cool.
  5. When the pressure cooker is cooled, then remove the lid and take out the pointed gourds or parwal. Remove a few seeds and leave the remaining.
  6. Then mash these boiled pointed gourds or parwal, and add chopped green chilli, garlic and coriander leaves.
  7. Add salt and lemon juice and mix all the ingredients well. Parwal Ka Chokha or Pawal Chokha or Parval Ka Bharta is ready to be served.

(Tips: Use only fresh and small sized pointed gourds or parwal to prepare this chokha. Never use old pointed gourds or parwal with big seeds for making this dish.)

परवल का चोखा रेसिपी या परवल का भर्ता रेसिपी बनाने की प्रक्रिया:

  1. परवल को हल्के से खुरच कर इसकी गंदगी को हटा दें। परवल को छील कर न रखें।
  2. अब परवल के दोनों सिरों को काट लें, और फिर उन्हें साफ पानी से धो लें।
  3. फिर इन परवल को एक प्रेशर कुकर में डालें और इसमें 1 छोटा कप पानी डालें। फिर इन्हें एक सीटी आने तक पकाएं।
  4. एक सीटी के बाद गास को बंद कर दें और प्रेशर कुकर को ठंडा होने दें।
  5. जब प्रेशर कुकर ठंडा हो जाए, तब ढक्कन को हटा दें और परवल को निकाल लें। कुछ बीज हटा दें और कुछ बीज छोड़ दें।
  6. फिर इन उबले हुए परवल को मैश करें, और इसमें कटी हुई हरी मिर्च, लहसुन और धनिया पत्ती डालें।
  7. उसके बाद नमक और नींबू का रस डालें और सभी सामग्रियों को अच्छी तरह मिलाएँ। परवल का चोखा या परवल चोखा या परवल का भर्ता परोसने के लिए तैयार है।

(टिप्स: इस चोखा को तैयार करने के लिए केवल ताजे और छोटे आकार के परवल का उपयोग करें। इस व्यंजन को बनाने के लिए बड़े बीजों वाले परवल या बासी परवल का उपयोग न करें।)
