Paneer Kali Mirch or Pepper Paneer or Paneer Kalimirch Recipe - With Lakshmi Recipes

A creamy and delicious Paneer curry dish, with soft paneer cooked in creamy gravy and spiced up with freshly ground black pepper. It is great twist to the regular sweet and spicy curry dishes of paneer.

Serve Paneer kalimirch curry with roti/chapati/phulka or paratha and you are sure to woo the hearts of your friends and family.

Given below is a detailed recipe to making Paneer Kali Mirch:

Preparation Time: 15 minutes

Cooking Time: 15-20 minutes

Recipe Yield: 4 servings

Procedure for making Paneer Kalimirch or Pepper Paneer:

  1. Heat some ghee in a kadhai.
  2. When the ghee is hot enough for cooking, then add the freshly  ground paste of ginger-garlic-green chilli to it. Saute this paste for a few seconds.
  3. Now add freshly ground paste of onion to the kadhai. Mix and cook the ingredients togethertill you can feel the aroma for sauteed onion.
  4. Then add the freshly ground paste of soaked almonds to the kadhai. Stir, mix and cook the ingredients together till the oil begins to seperate from the cooking ingredients.
  5. At this moment add fresh cream (or malai) to the kadhai and stir rigorously to mix with the cooking ingredients. (Stir rigorously to avoid formation of lumps.)
  6. Now add cumin powder, black pepper powder, red chilli powder and mix well. Cook only over low flame.
  7. Then add milk or water as per your requirement of gravy. I have added 1/2 cup milk for the gravy.) Allow the gravy to come to a boil for 1-2 time.
  8. Add paneer pieces, freshly crushed black pepper, garam masala powder and salt to the kadhai. Cover the kadhai with a lid and cook the ingredients for 2 minutes.
  9. After 2 minutes remove the lid and add crushed kasturi methi and finely chopped coriander leaves. Paneer Kalimirch is ready to be served with hot roti.

(Always, cook the Paneer Kalimirch only over low to medium flame.)

पनीर कालिमिर्च या पेपर पनीर बनाने की प्रक्रिया:

  1. कढ़ाई में थोड़ा घी डालकर गरम करें।
  2. जब घी खाना पकाने के लिए पर्याप्त गरम होजाए तो उसमें अदरक-लहसुन-हरी मिर्च के ताजा पिसा हुअ पेस्ट को इसमें डालें। कुछ सेकंड के लिए इस पेस्ट को भुनें।
  3. अब कढ़ाई में प्याज का ताजा पिसा हुआ पेस्ट डालें। सामग्री को चलाकर मिलाएं और भुने हुए प्याज की सुगंध आने तक सामग्री को भूनें।
  4. फिर कढ़ाई में बादाम के ताजा पिसा हुआ पेस्ट डालें और मिलाएं।
  5. अब कढ़ाई में ताजा क्रीम (या मालाई) डालें और कल्छी से जल्दी-जल्दी चलाकर मिलाएं जिस्से कि कोई गांठ न बने।
  6. अब इसमें जीरा पाउडर, काली मिर्च पाउडर, लाल मिर्च पाउडर डालें और अच्छी तरह से मिलाएं। केवल कम आंच पर ही पकाएं।
  7. फिर ग्रेवी के लिए अपनी आवश्यकता के अनुसार दूध या पानी डालें। (मैंने ग्रेवी के लिए 1/2 कप दूध डाला है।) ग्रेवी में 1-2 बार के लिए उबाल आने दें।
  8. अब कढ़ाई में पनीर के टुकड़े, ताजा कुचली हुई काली मिर्च, गरम मसाला और नमक डालें। कढ़ाई को ढक्कन से ढक दें और सामग्री को 2 मिनट तक पकाएं।
  9. 2 मिनट के बाद ढक्कन को हटा दें और इसमें कस्तुरी मेथी को मसल कर डालें और साथ ही बारीक कटा हुई धनिया की पत्ती भी डालें। पनीर कालिमिर्च को गरम चपाती/रोटी/फुल्का/पराठा के साथ परोसें।

(पनीर कालिमिर्च को केवल कम से मध्यम आंच पर ही पकाएं।)
