Besan Ka Dhoka Recipe - Learn How To Make Besan Ki Sabji

A traditional Bihari Recipe that is sure to add a lip-smacking taste to your lunch and dinner.

Its easy to make but the taste is just awesome. Given below is its easy recipe. Do try it out.

Alternate Names: Besan Curry, Besan Ka Dhoka, Besan Ki Sabji, Dhoka Tarkari 

Ingredients for making Besan Ka Dhoka:

  • Gram Flour or Besan - 1 small cup
  • Salt or namak - 1/2 tea spoon
  • Turmeric Powder or haldi powder - 1/2 tea spoon
  • Cumin Powder or jeera powder - 1/2 tea spoon
  • Black Pepper Powder or kali mirch powder - 1/2 tea spoon
  • Red Chilli Powder or lal mirch powder - 1/2 tea spoon
  • Water or pani - as per requirement
  • For gravy of Besan Ka Dhoka:
    • Mustard Oil - 2 table spoon
    • Salt as per taste
    • Turmeric Powder or haldi powder - 1 tea spoon
    • Cumin Powder or jeera powder - 1/2 tea spoon
    • Black Pepper Powder or kali mirch powder - 1/2 tea spoon
    • Red Chilli Powder or lal mirch powder - 1/2 tea spoon
    • Coriander Powder or dhaniya powder - 1 tea spoon
    • Garam Masala Powder - 1/2 tea spoon
    • Onion or pyaz - 1 medium size, finely chopped
    • Bay Leaf or tej patta - 1
    • Asafoetida or hing - 1 pinch
    • Cumin seeds or jeera - 1 tea spoon
    • Tomato or tamatar - 1, finely chopped
    • Ginger-garlic paste - prepared using 3-4 garlic petals and 1 inch ginger piece

Procedure for making Besan Ka Dhoka:

  1. Take gram flour or besan in a a plate or mixing bowl and add a little salt to it. (add less salt at this stage)
  2. Then add 1/2 tea spoon of the following powdered spices (turmeric powder, red chilli powder, cumin powder and black pepper powder) the mixing bowl. Mix the dry ingredients well.
  3. Add a little water and mix again, as if forming a tight dough.
  4. Now prepare small lemon sized balls from this dough (as shown in the images below).
  5. Now take some water in a deep pan and set it to boil over high flame.
  6. When the water starts boiling then add the small lemon sized balls prepared in the previous step to it. Allow these dough balls to cook in boiling water for 7-8 minutes.
  7. After 7-8 minutes poke one of these dough ball with a knife to check if they are cooked. If the knife comes out clean then turn off the flame and transfer the cooked dough balls to a plate. Allow them to cool.
  8. Then cut each of them into 2 equal halves (as shown in the images below).
  9. Now heat a kadhai and add 2 table spoon mustard to it.
  10. When the oil is hot enough for cooking then add cumin seeds, bay leaf and asafoetida to it. Allow the cumin seeds to crackle.
  11. Then add the finely chopped onion. Saute the chopped onion till it turns golden red in color.
  12. Now add the paste of tomato-ginger-garlic-green chilli to the cooking ingredients. Stir and cook the ingredients together.
  13. After a few seconds add the powdered spices (turmeric powder, red chilli powder, cumin powder, black pepper powder and coriander powder) and salt to the cooking ingredients. Stir, mix and cook the ingredients together till the oil begins to seperate from them.
  14. At this point add the garam masala powder. Stir, mix and cook again.
  15. Now add water as per requirement to the kadhai and stir and mix again. Allow the gravy being prepared to come to a boil. (The amount of water added should be slightly more than required for gravy. Because the dough balls prepared earlier will soak up some gravy when added to it.)
  16. When the gravy thickens a little then add the dough balls to it and lower the flame. Allow the dough balls to cook in the gravy for 5 minutes.
  17. Turn off the flame after 5 minutes and transfer the prepared gravy or Besan Ka Dhoka dish to a serving bowl. Garnish with coriander leaves and serve.

बेसन का धोका बनाने की प्रक्रिया:

  1. एक प्लेट या कटोरे में बेसन और थोड़ा सा नमक डालें। (नमक जरूरत से थोड़ा कम ही डालें)
  2. फिर इस मिश्रण में पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, जीरा पाउडर और काली मिर्च पाउडर) डालें और अच्छी तरह से मिलाएं।
  3. थोड़ा पानी डालें और फिर से मिलाएं, और सख्त आटे के जैसा गूधें।
  4. अब इससे से छोटी-छोटी नींबू के आकार की गोलियां तैयार करें (जैसा कि नीचे दी गई छवियों में दिखाया गया है)।
  5. अब एक गहरे पैन में थोड़ा पानी डालें और इसे तेज आंच पर उबलने के लिए सेट कर दें।
  6. जब पानी उबलने लगे तो उसमें पिछले चरण में तैयार की हुई छोटी-छोटी नींबू के आकार की गोलियों को डालें। इन गोलियों को उबलते पानी में 7-8 मिनट तक पकाएं।
  7. 7-8 मिनट के बाद इन गोलियों को चाकू से काट कर देखें कि वे पक गई हैं या नहीं। यदि चाकू साफ रहता है तो गैस को बंद कर दें और पकी हुई गोलियों को एक प्लेट में निकाल लें और ठंडा होने दें।
  8. फिर गोलियों को 2 बराबर के हिस्सों में काट लें (जैसा कि नीचे दी गई छवियों में दिखाया गया है)।
  9. अब एक कढ़ाई गर्म करें और इसमें 2 बड़ा चम्मच सरसों का तेल डालें।
  10. जब तेल खाना पकाने के लिए पर्याप्त गर्म होजाए तो उसमें जीरा, तेज पत्ता और हींग डालें। जीरा को चटकने दें।
  11. फिर बारीक कटा हुआ प्याज डालें। कटा हुआ प्याज को रंग में सुनहरा लाल होने तक भूनें।
  12. अब कढ़ाई में टमाटर-अदरक-लहसुन-हरी मिर्च का पेस्ट डालें। लगातार चलाते हुए सामग्री को एक साथ पकाएं।
  13. कुछ सेकंड के बाद पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, जीरा पाउडर, काली मिर्च पाउडर और धनिया पाउडर) और नमक डालें। लगातार चलाते हुए सामग्री को तेल अलग होने तक एक साथ पकाएं।
  14. इअब कढ़ाई में गरम मसाला पाउडर डालें। लगातार चलाते हुए सामग्री को एक साथ कुछ सेकंड तक पकाएं।
  15. अब कढ़ाई में आवश्यकता के अनुसार पानी डालें और मिलाएं। एक उबाल आने दें और फिर आंच कम करके सामग्री को पकने दें जब तक ग्रेवी थोड़ी गाढ़ी न होजाए। (पानी के पानी की मात्रा ग्रेवी की मात्रा से थोड़ी अधिक होनी चाहिए। क्योंकि पहले तैयार की गई बेसन की गोलियां में थोड़ी ग्रेवी को सोख लेंगी।)
