Sabut Urad Dal Recipe - Learn How To Make Kaali Dal or Punjabi Dal

Sabut Urad Dal or Maa Ki Dal or Mah Ki Dal or Kaali Dal or Punjabi Dal is an all time favorite and among the regularly eaten dal in Northern states of India, specially Punjab. The dal serves as a wholesome dish with tawa paratha, tandoori roti and hot phulkas. Top it with a spoonful desi ghee and you are ready with one special dish for your guests tonight.

Given below is an easy recipe to prepare this tasty dish along with step by step photos and recipe video:

Preparation Time: 30 minutes for soaking the Black Gram Lentils in clean water + 10 minutes for preparing the required ingredients for making Sabut Urad Dal

Cooking Time: 5 minutes for cooking the Black Gram Lentils for 1 whistle over high Flame + 5 minutes for cooking the dal over low flame + 5 minutes for preparing the masala for sabut urad dal + 5 minutes for cooking the dal with the masala and final serving

Ingredients for making Sabut Urad Dal:

  • Black Gram Lentils or Sabut Urad Dal or Chilka wali urad dal - 1 small cup
  • Salt - as per taste
  • Turmeric Powder or haldi powder - 1/2 tea spoon
  • Water - 3 small cups
  • Ingredients for making masala for Sabut Urad Dal:
    • Clarified Butter or Desi Ghee - 2 table spoon
    • Tomato or tamatar - 1 medium size, roughly chopped
    • Green Chilli or hari mirch - 2
    • Ginger or adrak - 1 inch big piece
    • Garlic or lehsun ki kali - 4-6 petals
    • Onion or pyaaz - 1 medium size, finely chopped
    • Turmeric Powder or haldi powder - 1/2 tea spoon
    • Red Chilli Powder or lal mirch powder - 1/2 tea spoon
    • Cumin Seeds Powder or jeera powder - 1/2 tea spoon
    • Black Pepper Powder or kali mirch powder - 1/2 tea spoon
    • Garam Masala Powder - 1/2 tea spoon
    • Asafoetida or hing - 1 pinch

Procedure for making Sabut Urad Dal:

  1. Take 1 small cup Black Gram Lentils and soak them in clean water for 1/2 hour.
  2. Then take roughly chopped tomato, ginger, garlic petals and green chilli in a mixer jar. Grind the ingredients together to form a fine paste.
  3. Now rinse the soaked Black Gram Lentils again and transfer them to a pressure cooker.
  4. Add turmeric powder, salt as per taste and 3 small cups of water to the pressure cooker. Pressure cook the Black Gram Lentils for 1 whistle over high flame. Then reduce the flame to low level and cook the Black Gram Lentils like this for 5 minutes. Then turn off the flame.
  5. Allow the cooker to cool on its own and then open the lid. Stir and mix the cooked Black Gram Lentils with a ladle. (Remember: Do not mash the cooked Black Gram Lentils.)
  6. Heat a kadhai and add 1 table spoon desi ghee to it.
  7. When the ghee is hot enough for cooking then add asafoetida to it, followed by chopped onion. Allow the onion to turn golden pink in color.
  8. Then add turmeric powder, red chilli powder, cumin seeds powder and black pepper powder. Stir and mix all the ingredients and cook them together for a few seconds.
  9. Now add the fine paste of tomato-garlic-ginger-green chilli to the kadhai. Stir and cook the ingredients together till the oil/ghee begins to seperate from the cooking masala.
  10. Then add 1/2 tea spoon garam masala powder and a little salt to the cooking ingredients and mix them. (Remember: Ghee reduces the taste of salt, so add some salt as per your taste.)
  11. Add the cooked Black Gram Lentils to the kadhai. Stir and cook the ingredients together for 5 minutes over medium flame for 5 minutes. Then turn off the flame.
  12. Transfer the prepared Sabut Urad Dal or Black Gram Lentils or Maa Ki Dal or Mah Ki Dal or Kaali Dal or Punjabi Dal to a serving dish. Top it with a spoonful desi ghee and serve hot with tawa paratha, or phulka or tandoori roti.

साबुत उरद दाल बनाने की प्रक्रिया:

  1. 1 छोटा कप साबुत उरद दाल लें और उसे 1/2 घंटे के लिए साफ पानी में भिगो दें।
  2. फिर एक मिक्सर जार में कटा हुआ टमाटर, अदरक, लहसुन और हरी मिर्च लें। सारी सामग्री को एक साथ पीस कर बारीक पेस्ट बना लें।
  3. अब भिगोई हुई साबुत उरद दाल को साफ पानी से धो लें और फिर कुकर में डालें।
  4. अब कुकर में स्वाद के अनुसार नमक, हल्दी पाउडर और 3 छोटे कप पानी डालें। कुकर को बन्द करके सामग्री को तेज आंच  पर 1 सीटी आने तक साबुत उरद दाल को पकालें। फिर गैस को कम कर दें और धीमी आंच पर 5 मिनट तक पकाएं। फिर गैस को बंद कर दें।
  5. कुकर को अपने आप ठंडा होने दें और फिर उसका ढक्कन खोलें। एक कल्छी से पकी हुई साबुत उरद दाल को चलाकर मिलाएं। (याद रखें: पकी हुई साबुत उरद दाल को मैश न करें।)
  6. एक कढ़ाई गरम करें और इसमें 1 बड़ा चम्मच देसी घी डालें।
  7. जब घी पर्याप्त गरम होजाए तो उसमें हींग और कटा हुआ प्याज डालें। प्याज को सुनहरा गुलाबी रंग होने तक भूनें।
  8. फिर कढ़ाई में हल्दी पाउडर, लाल मिर्च पाउडर, जीरा पाउडर और काली मिर्च पाउडर डालें। सारी सामग्री को एक साथ मिलाएं और उन्हें कुछ सेकंड के लिए एक साथ पकाएं।
  9. अब कढ़ाई में टमाटर-लहसुन-अदरक-हरी मिर्च का बारीक पिसा हुआ पेस्ट डालें। सामग्री से तेल/घी अलग होने तक पकाएं।
  10. फिर कढ़ाई में 1/2 छोटी चम्मच गरम मसाला पाउडर और थोड़ा सा नमक डालें मिलाएं। (याद रखें: घी नमक के स्वाद को कम कर देता है, इसलिए अपने स्वाद के अनुसार थोड़ा सा नमक और डाल लें।)
  11. फिर कढ़ाई में पकी हुई साबुत उरद दाल डालें। 5 मिनट के लिए मध्यम आंच पर सामग्री को चलाते हुअ पकाएं। फिर गैस बंद कर दें।
  12. तैयार साबुत उरद दाल या ब्लैक ग्राम या मां की दाल या काली दाल या पंजाबी दाल को एक सर्विंग डिश में डालें। इसके ऊपर एक चम्मच देसी घी डालें और तावा पराठा, या फुल्का या तंदूरी रोटी के साथ परोसें।
