Hare Matar Ka Nimona is an age-old dish that is made in almost every household during winters. Prepared with fresh green peas of the season this dish tastes amazingly delicious. However, it can be made with frozen green peas at any time of the year. Hare Matar Ka Nimona can be enjoyed with hot roti or phulkas, plain or lachha paratha and even rice.

Given below is an easy and detailed recipe, step by step photos and recipe video for making Hare Matar Ka Nimona:

Ingredients for making Matar Ka Nimona:

  • Fresh Green Peas or taji hari matar or हरी मटर - 1 big cup
  • Potato  or aloo or आलू - 1 medium size, chopped into pieces of desired
  • Onion or pyaz or प्याज - 1, finely chopped
  • Tomato or tamatar or टमाटर - 1, finely chopped
  • Muddled paste of ginger-garlic-green chilli or adrak-lehsun-hari mirch la kuta hua paste or कुटी हुई अदरक-लहसुन-हरी मिर्च का पेस्ट - 1 table spoon
  • Asafoetida or hing or हींग और एक छोटा टुकड़ा - 1 pinch
  • Turmeric Powder or haldi powder or हल्दी पाउडर - 1 tea spoon 
  • Cumin Seeds Powder or jeera powder or जीरा पाउडर - 1/2 tea spoon
  • Black Pepper Powder or kali mirch powder or काली मिर्च पाउडर - 1/2 tea spoon
  • Red Chilli Powder or lal mirch powder or लाल मिर्च पाउडर - 1/2 tea spoon
  • Coriander Powder or dhaniya powder or धनिया पाउडर - 1 tea spoon
  • Cloves or laung or लौंग - 2-3
  • Cinnamon Stick or dalchini or दालचीनी - 1 small size
  • Salt as per taste or namak swaad anusar
  • Mustard Oil or sarson ka tel or सरसों का तेल - as per requirement

Procedure for making Matar Ka Nimona:

  1. Transfer the fresh and clean, green peas to a mixer jar and grind them to get a granular form. Leave some green peas as it is without grinding them. Do not add water while grinding the green peas for making Matar Ka Nimona" curry.
  2. Then heat some mustard oil in a kadhai and add 1 pinch asafoetida, 2-3 cloves and one small cinnamon stick to it.
  3. After a few seconds add finely chopped onion to the kadhai. Saute the onion till it turns golden brown in color over medium flame.
  4. Then add potato pieces and ground paste of ginger-garlic-green chilli to the kadhai. Saute the ingredients together.
  5. When the potato pieces appear partially cooked then add chopped tomato to the kadhai. Stir nd cook the tomato pieces with all the ingredients.
  6. Now add the powdered spices (turmeric powder, red chilli powder, coriander powder, cumin seeds powder and black pepper powder) and salt to the kadhai. Stir and cook the spices for 1 minute.
  7. After 1 minute add ground green peas and the remaining whole green peas to the kadhai. Stir and mix the ingredients. Saute the green peas with the other ingredients for 1 minute.
  8. Now add water to the kadhai for making the gravy for Matar Ka Nimona" curry. Add water as per your requirement. (Here, I have added 2 cups water, for making the gravy.)
  9. Increase the flame and allow the gravy for Matar Ka Nimona" curry to boil.
  10. When the gravy begins to boil, then lower the flame to low level and cover the kadhai with a lid. Cook the ingredients in the kadhai in this mannner for 20 minutes.
  11. Remove the lid after 20 minutes and check if the potato pieces and the green peas are cooked. Then turn off the flame.
  12. Transfer the yummy "Matar Ka Nimona"curry to a serving bowl and serve it hot with phulka, paratha or rice.

मटर का निमोना बनाने की प्रक्रिया:

  1. ताजा और साफ, हरी मटर को एक मिक्सर जार में डालें और दरदरा पीस लें। कुछ हरी मटर के दानों को साबुत ही छोड़ दें। मटर का निमोना बनाने के लिए हरी मटर को बिना पानी डाले ही पीसें।
  2. फिर एक कढ़ाई में सरसों का तेल डालकर गरम करें और फिर उसमें 1 चुटकि हींग, 2-3 लौंग और एक छोटा दालचीनी टुकड़ा डालें।
  3. कुछ सेकेंड्स के बाद कढ़ाई में बारीक कटा हुआ प्याज डालें। प्याज को मध्यम आँच पर रंग में सुनहरा भूरे रंग का होने तक भूनें।
  4. फिर कढ़ाई में आलू के टुकड़े और कुटी हुई अदरक-लहसुन-हरी मिर्च का पेस्ट डालें। सामग्री को एक साथ चलाते हुए पकाएँ।
  5. जब आलू के टुकड़े आंशिक रूप से पक जाएं तो कढ़ाई में कटा हुआ टमाटर डालें। टमाटर को बाकि सामग्री के साथ अच्छे से पकायें।
  6. अब कढ़ाई में सारे पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, धनिया पाउडर, जीरा पाउडर और काली मिर्च पाउडर) और नमक डालें। सारी सामग्री को मिलाएं और 1 मिनट तक मसालों को भूनें।
  7. 1 मिनट के बाद दरदरी पिसी हुई हरी मटर और साबुत हरी मटर के दानों को कढ़ाई में डालें। हरी मटर को सारी सामग्री के साथ 1 मिनट तक चलाते हुए भूनें।
  8. अब मटर का निमोना की ग्रेवी बनाने के लिए कढ़ाई में पानी डालें। आप अपनी आवश्यकता के अनुसार पानी डाल सकते हैं। (यहां, मैंने मटर का निमोना की ग्रेवी बनाने के लिए 2 कप पानी डाला है।)
  9. आँच को बढ़ाएं और मटर का निमोना की ग्रेवी में एक बार उबाल आने दें।
  10. जब ग्रेवी में उबाल आजाए, तो आँच को कम कर दें और कढ़ाई को ढक्कन के साथ ढक दें। 20 मिनट तक इसी तरह से सामग्री को पकने दें।
  11. ढक्कन को 20 मिनट के बाद हटाएं और देखें कि सामग्री अच्छे से पक गई हैं या नहीं। फिर गैस बंद कर दें और
  12. स्वादिष्ट "मटर का निमोना" को एक कटोरे में परोसें। "मटर का निमोना" को गरम फुलका, पराठा या चावल के साथ परोसें।
