Begun Bhaja Recipe - Learn How To Make Baingan Bhaja

Baigan Bhaja or Begun Bhaja is a Bengali dish and is famous across West Bengal, Bihar and Jharkhand. Prepare this delicious recipe by following the below instructions, and enjoy it in combination with rice,  hot chapatis, or tawa parathas.

Preparation Time: 10-15minutes
Cooking Time: 20-25 minutes
Nutritional Content: Brinjal has very less calories and is rich in soluble dietary fibres and anti-oxidants.
Recipe yield: 8 servings

Alternate Names: Begun Bhaja, Baingan Bhaja, Baigan Bhaja, Baingan Katri, Baigan Katri

Ingredients:

  • Brinjal (baigan) - 2 big size and round, each cut round slices of equal width
  • Spices:
    • Turmeric powder (haldi powder) - 1 tea spoon
    • Cumin Seed powder (jeera powder) - 1/2 tea spoon
    • Red Chilli powder (lal mirch powder) - 1/2 tea spoon
    • Coriander powder (dhaniya powder) - 1/2 tea spoon
  • Salt to taste
  • Mustard oil to pan fry the brinjal

Procedure:

  1. In a small bowl put in all the spices (haldi powder, jeera powder and lal mirch powder) and add a little water to form a paste for marination of thick consistency.
  2.  Add salt as per taste requirement to the paste.
  3. Marinate the brinjal slices with the paste prepared and keep the marinated brinjal slices in a seperate plate.
  4. Now heat some mustard oil in a pan. Pan fry the marinated brinjal slices till the marination turns golden brown. Flip slowly such that both the sides of the brinjal slices are fried and cooked. With a Knife or fork check if the brinjal slices at the center, to check that they are cooked.
  5. Serve hot with dal chawal, or kadhi chawal, or chapatis or tawa parathas.

(Tips: 1. Use big and round variety of brinjals  for this dish, like the ones used for Baigan Bharta)

बेगुन-भाजा/ बैंगन-भाजा बनाने की प्रक्रिया:

  1. सभी मसालों (हल्दी पाउडर, जेरा पाउडर और लाल मिर्च पाउडर) को एक छोटे कटोरे या प्लेट में निकालें और थोड़ा पानी डालकर मोटी स्थिरता का मसालों का पेस्ट बनालें।
  2. पेस्ट में स्वाद के अनुसार नमक डालें।
  3. इस मसाले के पेस्ट में बैंगन के स्लाइसेस को एक-एक करके डालकर अच्छे से मसाले से कोट करें और फिर इन मैरीनेटेड बैंगन के स्लाइसेस को एक अलग प्लेट में रखें।
  4. अब एक पैन में थोड़ा सरसों के तेल डालकर गरम करें। मैरीनेटेड बैंगन के स्लाइसेस को एक-एक करके गरम तावा पर तलने केलिए रखें और दोनों तरफ सुनहरा भूरे रंग का होने तक भूनें। जब बैंगन के स्लाइसेस एक तरफ पर अच्छे से पक कर लाल होजाएं तो उन्हें धीरे से दूसरी तरफ भी पकने केलिए पलट दें।
  5. आपके स्वादिष्ट बेगुन-भाजा/ बैंगन-भाजा तैयार हैं। इन्हें दाल चावल, या कढ़ी चावल, या चपाती या तावा पराठा के साथ गरमा-गरम परोसें।

(टिप्स: 1. बेगुन-भाजा/ बैंगन-भाजा बनाने के लिए बड़े और गोल आकर के बैंगन का उपयोग करें, जैसे बैंगन बैंगन-भर्ता बनाने के लिए इस्तेमाल किए जाते हैं।)
