Bihari Chokha Recipe - Learn How To Make Bihari Chokha

Bihari Baingan Bharta or Bihari Chokha is a dish that is traditionally served with Sattu Ki Litti. Both these dishes go hand in hand complementing the taste of each other. This procedure of making Baingan Bharta helps in preserving the nutrients of the ingredients and the smoky flavor of roasted brinjals adds to its taste. Not just littis, but you can also enjoy this Bihari Baingan Bharta or Bihari Chokha with plain or sattu ke parathe and Sattu ki Kachori. Given below is an easy and detailed recipe, step by step photos and recipe video of making Bihari Chokha or Bihari Baingan Bharta.

Preparation Time: 5 minutes (If we take boiled potatoes, otherwise it will take 7-10 minutes for preparing all ingredients)

Cooking Time: 15-20 minutes (5 minutes for cooking the tomatoes in boiling water + 5 minutes for roasting the brinjal over the gas stove + 5 minutes for cooling and mashing them + 5 minutes for final preparation of Bihari Chokha or Bihari Baingan Bharta)

Ingredients for making Bihari Chokha:

  • Brinjal or baingan - 1, big size
  • Tomato or tamatar - 2, medium size
  • Boiled Potato or ubale huye aloo - 2, medium size
  • Coriander Leaves or hara dhaniya - as per requirement, finely chopped
  • Green Chilli - 3-4, can vary as per taste and finely chopped
  • Ginger or adrak - 1 inch piece, finely chopped
  • Onion or pyaz - 1, medium size, finely chopped
  • Garlic or lehsun - 4-5 petals, finely chopped
  • Salt as per taste
  • Mustard Oil or sarson ka tel - as per requirement (I have use2-3 tea spoon mustard oil over here)

Procedure for making Bihari Chokha:

  1. Wash the tomatoes well with water and fill some water in a deep vessel. Set the water to boil. When the water begins to boil add the tomatoes in it. Cook the tomatoes in boiling water, till they become soft and tender.
  2. Remove the tomatoes to a plate and allow them to cool a little. Then remove the peel of these cooked tomatoes.
  3. Wash the brinjal well with water and make a cut at its centre to check if it is not rotten inside. (Do not cut the brinjal completely. It should remain intact at one end.)
  4. Now place a steel stand over the gas stove and lower the flame to low level. Place the this brinjal over this stand and then flip and cook the brinjal till it is nicely roasted and becomes soft at the centre.
  5. When the brinjal is nicely roasted then turn off the flame and remove it to a plate. Allow the brinjal to cool and then remove the peel.
  6. Then take 2 boiled potatoes, peel and finely mash them for making Bihari Chokha.
  7. Now take a big plate and place the cooked toamtoes and roasted brinjal in it. Then mash both the ingredients together.
  8. Then add the mashed boiled potatoes to the plate and mash all ingredients together again to mix them nicely.
  9. Now add finely chopped green chilli, garlic, ginger, coriander leaves and onion to it.
  10. Add salt as per taste and 2-3 tea spoon mustard oil to the ingredients in the plate and mix all of them together.
  11. Transfer the prepared Bihari Chokha to a beautiful dish and serve with hot sattu ki litti.

बिहारी चोखा बनाने की प्रक्रिया:

  1. टमाटर को पानी से अच्छे से धो लें और फिर एक गहरे पतीले में थोड़ा पानी भर लें। पानी को उबाल लें। जब पानी उबलने लगे तो उसमें टमाटर को डाल दें। उबलते पानी में टमाटर को पकने दें, जब तक वे नरम न हो जाएं।
  2. एक प्लेट में पके हुए टमाटर को निकाल लें और उन्हें थोड़ा ठंडा होने दें। फिर इन पके हुए टमाटर का छिलका हटा दें।
  3. बैंगन को पानी से अच्छी तरह से धो लें और उसके बीच में चीरा लगा कर देखें कि यह अंदर से टीक है या नहीं। (बैंगन को पूरा नहीं काटना है।)
  4. अब गैस स्टोव पर एक स्टील का स्टैंड रखें और आँच को कम कर दें। इस स्टैंड पर इस बैंगन को रखें और फिर उलट-पलट कर बैंगन को कम आँच पर अच्छे से भूनें।
  5. जब बैंगन को अच्छी तरह से भुन जाए तो गैस को बंद कर दें और इसे प्लेट में निकाल दें। बैंगन को ठंडा होने दें और फिर बैंगन का छिलका हटा दें।
  6. फिर 2 उबले हुए आलू लें, उन्हेम छीलें और बिहारी चोखा बनाने के लिए उन्हें अच्छे से मैश कर लें।
  7. अब एक बड़ी प्लेट लें और इसमें पके हुए टमाटर और भुना हुआ बैंगन रखें। फिर दोनों सामग्री को एक साथ मैश करें।
  8. फिर मैश किये हुए उबले आलू को उसमें डालेम और सारी सामग्री को एक साथ फिर से मिश्रण करने के लिए अच्छी तरह से एक साथ मैश करें।
  9. अब इसमें बारीक कटा हुआ प्याज, हरी मिर्च, लहसुन, अदरक और धनिया पत्ति डालें।
  10. स्वाद के अनुसार नमक और 2-3 बड़ा चम्मच सरसों का तेल डालें और सारी सामग्री को एक साथ फिर से मिलाएं।
  11. तैयार बिहारी चोखा को एक खूबसूरत कटोरे या बरतन में निकालें और गर्म सत्तू की लिटी के साथ परोसें।
