Here's another traditional recipe to make gajar ka halwa without milk or khoya, which is no less in taste than the gajar ka halwa prepared in milk or with khoya and can be prepared in very less time. Learn how to make this extremely tasty, aromatic and beautiful dish with the help of step by step photos, recipe video and detailed recipe given below:

Ingredients:

  • Carrots (gajar) - 500 gm
  • Sugar - 60 gm
  • Desi Ghee - 1 big spoon
  • Dry Fruits - 2 table spoon
    • Almonds (badaam)
    • Cashews (kaju)
    • Raisins (kismis)
  • Green Pistachios (hara pista) - 1 table spoon
  • Cardamom (chhoti elaichi) - 2 or you can also use 1/2 tea spoon of Cardamom Powder (chhoti elaichi powder)
  • Cloves (laung) - 3

Procedure:

  1. Wash the carrots (gajar) nicely with plain water and then peel off the outer layer. Then finely grate the carrots (gajar).
  2. Now heat 2 table spoon ghee in a kadhai. When the ghee is hot enough for cooking then add the grated carrot (gajar) followed by sugar to it.
  3. Keep stirring continuously and during this process add the cardamom (chhoti elaichi) or cardamom powder (choti elaichi powder) and cloves (laung).
  4. Cook the ingredients initially over high flame. This will help the sugar to melt and the grated carrots (gajar) to cook and release water. The halwa will get a beautiful reddish orange color and aroma while it is cooking.
  5. The grated carrots (gajar) will get cooked in 10-15 minutes. Keep stirring as it cooks and cook till all the moisture is evaporated. (Kindly note there shouldn't be any moisture left in the halwa being prepared.)
  6. Now add the dry fruits (badaam, kaju, kismis) and the green pistachios (hare pista) to the halwa being prepared. Mix all the ingredients and then turn off the flame. The gajar ka halwa is now ready to be served hot.

बिना खोये या दूध का गाजर का हलवा बनाने की प्रक्रिया:

  1. गाजर को अच्छी तरह से सादे पानी से धो लें और फिर बाहरी परत को छील कर हटा दें। फिर गाजर को बारीकी से कद्दु-कस कर लें।
  2. अब एक कढ़ाई में 2 बड़ा चम्मच देसी घी डालकर गरम करें। जब घी खाना पकाने के लिए पर्याप्त गरम होजाए तो उसमें कद्दु-कस की हुई गाजर और चीनी डालें।
  3. लगातार चलाते हुए पकाएं और इस प्रक्रिया के दौरान सामग्री मेंछोटी इलाइची या छोटी इलायची का पाउडर और लौंग डालें।
  4. शुरूआत में तेज आँच पर सामग्री को लगातार चलाते हुए पकाएं। इससे चीनी को पिघलाने में मदद मिलेगी और गाजर से भी पानी छूटने लगेगा।
  5. सामग्री को 10-15 मिनट के लिए या पानी के सूखने तक पकाएं। (ध्यान रखें कि तैयार हलवे में नमी न हो।)
  6. अब तैयार गाजर के हलवे में ड्राई-फ्रूट्स (बदाम, काजू, किस्मिस) और हरा पिस्ता डालें। एक बार सारी सामग्री को मिलाएं और फिर गैस बंद कर दें। बिना खोये या दूध का गाजर का हलवा तैयार है।
