Paalak Ka Saag Recipe - Palak ka Saag or Spinach Curry Recipe

Paalak Ka Saag or Spinach Curry is a fresh, highly nutritious and highly delicious curry dish, that goes well with plain roti, paratha, naan or kulcha. It is rich in iron and fibre and extremely healthy.

Ingredients for making Paalak Ka Saag:

  • Fresh Spinach Leaves or taaza paalak - 1/2 kg
  • Water or paani - 1/2 cup
  • Onion or pyaaz - 1 medium size, finely chopped
  • Finely Chopped Green Chilli or hari mirch - 1 tea spoon, finely chopped
  • Finely Chopped Garlic Petals or lehsun - 1 tea spoon, finely choppedToma
  • Fenugreek Seeds or methi dana - 1 tea spoon
  • Tomato or tamatar - 1, finely chopped
  • Turmeric Powder or haldi powder - 1/2 tea spoon
  • Cumin Seeds Powder or jeera powder - 1/2 tea spoon
  • Black Pepper Powder or kali mirch powder - 12 tea spoon
  • Coriander Powder or dhaniya powder - 1/2 tea spoon
  • Red Chilli Powder or lal mirch powder - 1/2 tea spoon
  • Salt as per taste
  • Mustard Oil or sarson ka tel - 1 table spoon
  • Garam Masala - 1/2 tea spoon

Procedure for making Paalak Ka Saag:

  1. Wash the fresh spinach leaves with plain water 2-3 times nicely, and then chop them into roughly equal sized small pieces.
  2. Now transfer the chopped spinach leaves to a kadhai and add 1/2 cup water to it. Transfer the kadhai to the gas stove and cover it with a lid. Cover and cook the spinach leaves till they become soft.
  3. After some time, remove the lid to check if the spinach leaves have become soft. Then turn off the gas, and remove the kadhai from the stove.
  4. Take another clean and dry kadhai, add 1 table spoon mustard oil to it and heat it.
  5. When the oil is hot enough for cooking, add 1 tea spoon fenugreek seeds to it, and allow it to crackle.
  6. Then add finely chopped onion, green chilli and garlic to the hot oil. Stir and cook the ingredients till they appear translucent and red.
  7. Take all the powder spices (turmeric powder, cumin seeds powder, black pepper powder, red chilli powder, coriander powder) and salt in a seperate bowl. Add a little water to it and mix to form a smooth paste like solution. (Do not add garam masala to this spices solution, we shall add it later.)
  8. Add this solution of salt and spices to kadhai. Stir and cook for sometime.
  9. Then add chopped tomato and again stir and cook till the oil begins to seperate from the cooking ingredients and tomato oieces become soft. The salt and spices will help to soften the tomato pieces and cook easily.
  10. When the tomato pieces become soft, then mash them with a ladle and add the boiled spinach leaves (along with water) to the kadhai.
  11. Increase the flame, stir to mix the ingredients and cook for sometime. Then again cover the kadhai with a lid and cook the ingredients in this manner for 5-7 minutes over high flame.
  12. Then remove the lid and add garam masala powder. Stir to mix and then cook for 1 minute.
  13. After 1 minute, turn the gas off, snd transfer the prepared Paalak Saag, to a serving bowl and serve with hot rotis.

पालक का साग बनाने की प्रक्रिया:

  1. ताजे पालक के पत्तों को सादे पानी से 2-3 बार अच्छी तरह धो लें, और फिर उन्हें लगभग बराबर और छोटे टुकड़ों में काट लें।
  2. अब कटे हुए पालक के पत्तों को एक कढ़ाई में डालें और इसमें 1/2 कप पानी डालें। कढाई को गैस स्टोव पर रखें और इसे ढक्कन के साथ ढक दें। पालक के पत्तों को नरम होने तक ढक कर पकाएं।
  3. कुछ समय बाद ढक्कन हटा कर देखें कि पालक के पत्ते नरम हुए हैं या नहीं। और फिर गैस बंद कर दें, और कढाई को स्टोव से हटा दें।
  4. एक दूसरी साफ और सूखी कढ़ाई लें, उसमें 1 बड़ा चम्मच सरसों का तेल डालकर गर्म करें।
  5. जब तेल खाना बनाने के लिए पर्याप्त गर्म होजाए, तो इसमें 1 छोटी चम्मच मेथी डालें, और इन्हें चटकने दें।
  6. फिर गर्म तेल में बारीक कटा हुआ प्याज, हरी मिर्च और लहसुन डालें। चलाते हुए सामग्री को हल्का लाल होनें तक भूनें।
  7. एक अलग कटोरे में सारे पाउडर मसाले (हल्दी पाउडर, जीरा पाउडर, काली मिर्च पाउडर, लाल मिर्च पाउडर, धनिया पाउडर) और नमक डालें। इसमें थोड़ा सा पानी डालें और मिलाएं। (इस मसाले के घोल में गरम मसाला न डालें, हम इसे बाद में मिलाएँगे।)
  8. नमक और मसालों के इस घोल को कढ़ाही में डालें। लगातर चलाते हुए कुछ देर पकाएं।
  9. फिर कटे हुए टमाटर डालें और फिर से लगातर चलाते हुए पकाएं जब तक कि तेल अलग न होता हुआ दिखने लगे और टमाटर नरम न हो जाएं। नमक और मसाले, टमाटर के टुकड़ों को नरम करने और आसानी से पकने में मदद करेंगे।
  10. जब टमाटर के टुकड़े नरम हो जाएं, तो उन्हें एक करछुल से मैश करें और उबले हुए पालक के पत्तों (पानी के साथ) को कढ़ाही में डालें।
  11. आंच को बढ़ाएं, सामग्री को मिलाएं के लिए लगातार चलाते हुए और कुछ देर पकाएं। फिर कढ़ाही को फिर से ढक्कन से ढक दें और इस तरह से सामग्री को 5-7 मिनट तक तेज आंच पर पकाएं।
  12. फिर ढक्कन हटाकर गरम मसाला पाउडर डालें और मिलाएं। और फिर 1 मिनट के लिए पकने दें।
  13. 1 मिनट के बाद, गैस को बंद कर दें, और तैयार पालक साग को एक सर्विंग बाउल में निकाल लें करें और गर्म रोटियों के साथ परोसें।
