Aloo Gobhi Ki Bhujia Recipe - Phool Gobhi Aloo Bhurji Recipe With Lakshmi Recipes

With winters creeping in, you can see fresh cauliflowers everywhere in the market. Spiced up and when cooked with thin potato pieces this Aloo Gobhi Bhurji is sure to make every bite of your dal and rice or roti and paratha even tastier. It is really easy to make and can be carried for lunch and tiffin boxes, and as poori or paratha roll for journeys.

Procedure for making Aloo Gobhi Ki Bhujia:

  1. Wash the potatoes well with water and cut them along their length. Transfer the chopped pieces of potato to a vessel containing water.
  2. Then cut out the cauliflower florets and wash then well with water. Keep the pieces of potato and cauliflower florets together in a plate.
  3. Now heat some mustard oil in a thick based kadhai, and then add chopped onion and green chilli to it. Saute the ingredients till they turn light red in color.
  4. Then add potato pieces, cauliflower florets, turmeric powder, red chilli powder, cumin powder, black pepper powder and salt to the kadhai. Mix all the ingredients well.
  5. Now cover the kadhai with a lid and lower the flame to lowest level. Cook in this manner for 5 minutes.
  6. Remove the lid after 5 minutes and you will see that the cauliflower florets have released some water and must have become soft.
  7. Now increase the flame and stir and cook the aloo gobhi ki bhujia, until all the moisture dries and the ingredients appear red and crispy.
  8. At this moment take out a piece of potato and cauliflower floret into a plate. Mash them with your fingers to check if they are cooked or not.
  9. Then turn off the flame and transfer the prepared hot and tempting Aloo-Gobhi Ki Bhujia to a plate and serve with hot roti, paratha or poori.

आलू गोभी की भुजिया बनाने की प्रक्रिया:

  1. आलू को पानी से अच्छी तरह से धो लें और फिर उन्हें लंबाई में काट लें। आलू के कटे हुए टुकड़ों को पानी से भरे हुए एक पतीले में डाल दें।
  2. फिर फूलगोभी को काटें और पानी से अच्छी तरह धो लें। एक प्लेट में आलू और फूलगोभी के टुकड़े रखें।
  3. अब एक मोटे तले की कढ़ाई में थोड़ा सरसों का तेल डालकर गरम करें, और उसके बाद गरम तेल में कटा हुआ प्याज और हरी मिर्च डालें। उन्हें हल्का लाल होने तक भूनें।
  4. फिर कढ़ाई में आलू के टुकड़े, फूलगोभी फ्लोरेट्स, हल्दी पाउडर, लाल मिर्च पाउडर, जीरा पाउडर, काली मिर्च पाउडर और नमक डालें। अच्छी तरह से सारी सामग्री को मिलाएं।
  5. अब कढ़ाई को ढक दें और आंच को एकदम कम कर दें। 5 मिनट तक सारी सामग्री को इसी तरह से पकने दें।
  6. 5 मिनट के बाद ढक्कन को हटाएं और आप देखेंगे कि फूलगोभी फ्लोरेट्स ने थोड़ा पानी छोड़ा होगा और नरम होगए होंगे।
  7. अब आंच तेज कर लें और लगातार चलाते हुए आलू गोभी की भुजिया को भूनें, जब तक कि सारा पानी सूख न जाए और आलू और गोभी लाल और क्रिस्पी सी न दिखाई देने लगे।
  8. अब आलू और फूलगोभी का एक-एक टुकड़ा एक प्लेट में निकाल लें और अपनी अंगुलियों से मैश करके देखें कि वे पक गये हैं या नहीं।
  9. फिर गैस बंद कर दें और तैयार गरमा-गरम आलू-गोभी की भुजिया को एक प्लेट में निकालें और गरम रोटी, पराठा या पूरी के साथ परोसें।
