Methi Ka Saag Recipe - Learn How To Make Methi Ka Saag

Fenugreek Leaves or Methi Ka Saag, is a protein rich winter special leafy vegetable that is available throughout the Northern parts of the country and is known as a wonder herb. Other major ingredients include calcium, potassium, phosphorus, iron, Vitamin K and dietary fibre, that contribute to its various medicinal and health benefits.

It is eaten in various forms throughout the nation. One such healthy form is Methi Ka Saag, which is a tasty, yet healthy for everyone, specially people with diabetes. It is prepared using very less oil and has all its nutrients intact.

Prepare this healthy, guilt-free, less oily and yet delicious methi ka saag with the help of a detailed recipe, step by step photos and recipe video given below:

Ingredients for making Methi Ka Saag:

  • Fresh Fenugreek Leaves or taza methi ka saag or मेथी के साग - 1/2 kg
  • Tomato or tamatar or टमाटर- 1, big size, finely chopped
  • Onion or pyaz or प्याज - 1, finely chopped
  • Muddled paste of ginger-garlic-green chilli or adrak-lehsun-hari mirch ka kuta hua paste or कुटी हुई अदरक-लहसुन-हरी मिर्च का पेस्ट - 1 table spoon
  • Salt as per taste or namak swaad anusar or नमक
  • Turmeric Powder or haldi powder or हल्दी पाउडर - 1 tea spoon
  • Cumin Seeds Powder or jeera powder or जीरा पाउडर - 1/2 tea spoon
  • Black Pepper Powder or kali mirch powder or काली मिर्च पाउडर - 1/2 tea spoon
  • Coriander Powder or dhaniya powder or धनिया पाउडर - 1/2 tea spoon
  • Red Chilli Powder or lal mirch powder or लाल मिर्च पाउडर - 1/2 tea spoon
  • Mustard Oil or sarson ka tel or सरसों के तेल डालें - as per requirement
  • Cloves or laung or लौंग - 3
  • Cinnamon or dalchini or दालचीनी - 1, small size

Procedure for making Methi Ka Saag:

  1. Cut the fresh and green Fenugreek leaves or methi ka saag leaving 1-1.5 inches from the roots and then leave it submerged in clean water for atleast 5-10 minutes. This process will help remove all the dirt and fertilizers on the leaves or stem.
  2. Now wash Fenugreek leaves or methi ka saag well with clean water water for atleast 2-3 times.
  3. Then finely chop the Fenugreek leaves or methi ka saag and prepare the other ingredients for making Methi Ka Saag.
  4. Now heat a kadhai and add 1 table spoon mustard oil to it.
  5. When the oil is hot enough for cooking then add 3 cloves and cinnamon stick to the kadhai.
  6. After a few seconds add the finely chopped onion to the kadhai. Saute the onion till it turns golden brown in color.
  7. Now add ground paste of ginger-garlic-green chilli to the kadhai. Saute the ingredients together.
  8. Then add the powdered spices (turmeric powder, red chilli powder, coriander powder, cumin seeds powder and black pepper powder) and salt to the kadhai. Stir and cook the spices for 1 minute.
  9. When the spices are cooked then add the chopped pieces of tomato to the kadhai and allow them to cook.
  10. When the tomato pieces become soft and tender, then add the chopped Fenugreek Leaves or Methi Ka Saag to it. Mix it well with the cooking ingredients.
  11. Do not add water, reduce the flame to lowest level and cover the kadhai with a lid. Allow the Fenugreek Leaves or Methi Ka Saag to cook with the spices for 15 minutes in this manner.
  12. Remove the lid at regular intervals (atleast 2-3 times) and stir the cooking Fenugreek Leaves or Methi Ka Saag.
  13. Remove the lid after 15 minutes and you will see that all the water has dried and the Fenugreek Leaves or Methi Ka Saag is completely cooked. Stir and cook the Fenugreek Leaves or Methi Ka Saag for a few seconds and then turn off the flame.
  14. Transfer the hot, tasty and highly nutritious Methi Ka Saag to a serving bowl. Serve it with hot parathas or phulkas.

मेथी का साग नाने की प्रक्रिया:

  1. मेथी के साग को जड़ से 1-1.5 इंच छोड़कर काट लें और इसे एक पानी से भरे बड़े बरतन में डालकर छोड़दें। फिर उसे 2-3 बार साफ पानी से अच्छी तरह धो लें।
  2. अब मेथी के साग को बारीक रूप से काट लें और मेथी का साग बनाने के लिए अन्य सामग्री तैयार करें।
  3. अब एक कढ़ाई गरम करें और इसमें 1 बड़ा चम्मच सरसों के तेल डालें।
  4. जब तेल पर्याप्त गरम होजाए तो कढ़ाई में 3 लौंग और दालचीनी का टुकड़ा डालें।
  5. कुछ सेकंड के बाद कढ़ाई में को बारीक कटा हुआ प्याज डालें। प्याज को मध्यम आँच पर रंग में सुनहरा भूरे रंग का होने तक भूनें।
  6. फिर कढ़ाई में कुटी हुई अदरक-लहसुन-हरी मिर्च का पेस्ट डालें। सामग्री को एक साथ चलाते हुए पकाएँ।
  7. अब कढ़ाई में सारे पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, धनिया पाउडर, जीरा पाउडर और काली मिर्च पाउडर) और नमक डालें। सारी सामग्री को मिलाएं और 1 मिनट तक मसालों को भूनें।
  8. जब मसाले अच्छे से भुन जाएं तो कढ़ाई में कटा हुआ टमाटर डालें। टमाटर को बाकि सामग्री के साथ अच्छे से पकायें।
  9. अब कढ़ाई में कटा हुआ मेथी का साग डालें और अच्छे से चलाकर बाकि सामग्री के साथ मिलाएं।
  10. कढ़ाई में पानी नहीं डालें, आँच को कम करदें और कढ़ाई को ढक्कन के साथ ढक दें। अब मेथी के साग को कम आँच पर 15 मिनट तक पकने दें।
  11. नियमित अंतराल (कम से कम 2-3 बार) पर ढक्कन को हटाएं और मेथी के साग को कल्छी से अच्छे से चलाएं।
  12. 15 मिनट के बाद ढक्कन को हटा दें और आप देखेंगे कि सारे पानी सूख चुका होगा और मेथी का साग पक चुका होगा। कुछ सेकंड के लिए मेथी के साग को चलाते हुए भूनें और फिर गैस बंद कर दें।
  13. गर्म, स्वादिष्ट और अति पौष्टिक मेथी के साग को एक कटोरे में निकाल लें। इसे गरम पराठे या रोटी के साथ परोसें।
