Paneer Pakoda Recipe - Learn How To Make Paneer Pakoda

Crispy on the outside, but soft, spongy and creamy inside with a spicy twist of hari chuntey, makes Paneer Pakoda a perfect companion of evening tea. They are really easy to make and a perfect quick snack when you have some guests coming over for tea.

Go ahead and try out this delicious snack with the help of an easy and detailed recipe given below:

Preparation Time: 5 minutes

Cooking Time:  22-25 minutes (10 minutes to make batter and keep it to rest + 5 minutes to prepare paneer and hari chutney sandwich + 10-12 minutes to fry all Paneer Pakoda)

Recipe Yield: 2 servings (2 Paneer Pakode in one serving)

Ingredients for making Paneer Pakoda:

  • Cottage Cheese or Paneer or पनीर  - 200 grams
  • Gram Flour or बेसन - 2 table spoon
  • Salt as per taste or नमक
  • Turmeric Powder or हल्दी पाउडर- 1/2 tea spoon
  • Cumin Seeds Powder or जीरा पाउडर - 1/2 tea spoon
  • Black Pepper Powder or काली मिर्च पाउडर - 1/2 tea spoon
  • Red Chilli Powder or लाल मिर्च पाउडर - 1/2 tea spoon
  • Water or पानी - as per requirement to make the Gram Flour batter for coating the Paneer pieces for making Paneer Pakoda
  • Mustard Oil or सरसों का तेल - as per requirement, for frying the Paneer Pakoda
  • Green Chutney or Hari Teekhi Chutney - as per requirement for layering the Paneer Pieces

Procedure for making Paneer Pakoda:

  1. Take gram flour in a big mixing bowl and add all the powdered spices (turmeric powder, black pepper powder, cumin seeds powder, red chilli powder) and salt to it.
  2. Now slowly add water to the dry ingredients and mix well to form a thick batter to coat the paneer pieces for making Paneer Pakoda. Remember that no lumps should be formed in the batter. The batter should be of thick consistency and smooth.
  3. Leave the batter to rest for 10 minutes.
  4. During this time, cut out 8 square shaped thin paneer pieces from 200 gram paneer block .(as shown in the images below)
  5. Then take 4 paneer pieces and spread a layer of Green Chutney or Hari Teekhi Chutney over all of them.
  6. Now take other 4 paneer pieces and place them over the layer of Green Chutney or Hari Teekhi Chutney (like a sandwich, as shown in the images below). The paneer sandwiches are ready to prepare Paneer Pakoda.
  7. Now heat a thick based kadhai and add mustard oil to it.
  8. When the oil is hot enough for frying then take one paneer sandwich and dip it in the gram flour batter. Coat it nicely with the batter and then carefully put it in the hot oil for frying. Lower the flame to medium level. You can fry 3-4 paneer pakode at one time.
  9. Fry the paneer pakoda slowly on medium flame so that they get nicely cooked and become crispy. Transfer the hot and crispy paneer pakoda to a plate and fry the remaining paneer pakode in the same way. Then serve the hot, crispy and tasty paneer pakode with chutney, tomato sauce or any dip.

पनीर पकोड़ा बनाने की प्रक्रिया:

  1. एक बड़े कटोरे में बेसन डालें और फिर उसमें सारे पाउडर मसाले (हल्दी पाउडर, काली मिर्च पाउडर, जीरा पाउडर, लाल मिर्च पाउडर) और नमक को डालें।
  2. अब सूखी सामग्री में धीरे-धीरे पानी डालकर मिलाएं और पनीर पकोड़े बनाने के लिए बेसन का गाढ़ा घोल तैयार करें। याद रखें कि बेसन के घोल में कोई गुठली नहीं होनी चाहिए। बेसन का घोल गाढ़ा और चिकना होना चाहिए।
  3. बेसन के घोल को तैयार करके 10 मिनट तक अलग रख दें।
  4. इस समय के दौरान, 200 ग्राम पनीर को 8 चौकोर आकार के पतले टुकड़ों में काट लें (जैसा कि नीचे दी गई तस्वीरों में दिखाया गया है)
  5. फिर चार पनीर टुकड़े लें और उन सभी पर हरी तीखी चटनी की एक परत फैलाएं।
  6. अब दूसरे बाकि 4 पनीर के टुकड़े लें और उनको हरी तीखी चटनी की परत के ऊपर रखें (जैसे कि एक सैंडविच बनाया जाता है या जैसा कि नीचे दी गई तस्वीरों में दिखाया गया है)। पनीर और हरी तीखी चटनी का सैंडविच, पनीर पकोड़ा बनाने के लिए तैयार हैं।
  7. अब एक मोटे तले की कढ़ाई गरम करें और इसमें सरसों का तेल डालें।
  8. जब तेल पनीर पकोड़े तलने के लिए पर्याप्त गर्म होजाए तो एक पनीर और हरी तीखी चटनी का सैंडविच लें और बेसन के घोल मे डालकर अच्छे से डुबोएं। पनीर और हरी तीखी चटनी के सैंडविच को बेसन के घोल से अच्छी तरह से कोट करें और फिर इसे तलने के लिए गरम तेल में सम्भाल कर डाल दें। आँच कद मध्यम स्तर तक कम कर दें।
  9. पनीर पकोड़े को धीरे-धीरे मध्यम आँच पर तलें ताकि वे अच्छे से पक कर कुरकुरा हो जाए। गरम और खस्ता पनीर पकोड़े को एक प्लेट में निकाल लें और शेष पनीर और हरी तीखी चटनी के सैंडविच को उसी तरह से तल लें। फिर गर्मा-गरम, खस्ता और स्वादिष्ट पनीर पकोड़ों को चटनी, टमाटर सॉस या किसी अन्य डिप के साथ परोसें।
