  • All Purpose Flour or refined flour or maida - 1 table spoon
  • Water or pani - 1/2 cup
  • Refined Oil - as per requirement for frying the Bread Kachori

Procedure for making Bread Kachori:

  1. To prepare the stuffing for bread kachori, heat a kadhai and add some refined oil to it. Allow the oil to become hot enough for cooking.
  2. Now add peanuts to the kadhai and lower the flame to low level. Fry the peanuts till turn crispy and appear nice crispy red in color. Then transfer the fried peanuts to a plate to be used in later steps of making the stuffing for bread kachori.
  3. Now add cashews to the same kadhai and fry them till they turn golden red in color. Then transfer the fried cashews to a plate to be used in later steps of making the stuffing for bread kachori.
  4. Then in the same kadhai add the green peas. Saute the green peas over low flame. Then transfer the sauteed green peas to a plate to be used in later steps of making the stuffing for bread kachori.
  5. Now add ginger, green chilli, all the powdered spices (turmeric powder, red chilli powder, black pepper powder, cumin seeds powder and coriander powder) and salt to the same kadhai. Saute the ingredients together for 2 minutes over low flame.
  6. Then add the mashed boiled potato to the kadhai. Stir to mix and cook the ingredients together.
  7. Now add chopped coriander leaves, fried peanuts, cashews, green peas and raisins to the cooking ingredients. Then mix all the ingredients well.
  8. Add 1/2 tea spoon garam masala powder to the kadhai and mix well again. The stuffing for bread kachori is now ready to be used for making bread kachori.
  9. Now take the bread slices and cut out round pieces from them (as shown in the images below), using a sharp edged bowl or stensil.
  10. Then take 1 table spoon all purpose flour or maida in a bowl containing 1/2 small cup water. Dissolve the all purpose flour or maida in water.
  11. Now take one bread piece and apply the flour solution on the edge.
  12. Then take a spoonful stuffing prepared for bread kachori and place it at the centre of the bread piece.
  13. Now take another bread piece and place it above the stufing.
  14. Press the edges of the bread pieces together to bind the edges. Press nicely so that the edges do not open while frying the bread kachori. Prepare the remaining bread kachori in the same manner.
  15. Now heat a kadhai and add refined oil to it. The amount of oil should be enough so that the bread kachori is completely submerged in it while frying them.
  16. When the oil is hot enough for frying the bread kachori then transfer the bread kachori to it to fry.
  17. Flip the bread kachori to fry them till they turn uniform golden brown on both sides. Fry all the bread kachori in the same manner. Transfer them to a plate cover with tissue papper to soak off the extra oil. Serve hot bread kachoris with chutney or sauce.

(Tips: Fry the bread kachoris only over high flame, because the bread will absorb less oil when it is fried over high flame.)
