Shahi Tukda Recipe - Learn How To Make Shahi Tukda

Shahi Tukra is a bread pudding dessert made from fried bread slices soaked in rabri. This dish is also called Double ka meetha and is famous specially in Hyderabad and Telangana. Learn how to make this easy and delicious dessert with step by step photos and detailed recipe given below: 

Preparation Time: 5 minutes

Cooking Time:  30 minutes (20 minutes for rabri + 8 minutes for sugar syrup + 2 minute for cooking)

Ingredients for making Shahi Tukda:

  • Bread - 4 slices, big size
  • Sugar - 1 small cup
  • Milk - 1/2 litre
  • Dry Fruits - as per requirement
    • Almonds
    • Raisins 
    • Cashewws
  • Refind Oil for frying
  • Crushed Cardamom - as per requirement

Procedure for making Shahi Tukda:

  1. Take 4 bread slices and cut it into 2 halves, by cutting the slices diagonally into 2 triangular halves.
  2. Then pour 1/2 litre milk in a deep vessel and set it to boil.
  3. When the milk starts to boil then lower the flame to medium level and stir it continuously to prepare thickened milk like rabri.
  4. When the quantity of milk reduces to 1/2 its initial volume then turn off the flame.
  5. Now take another pan or deep vessel and add sugar to it.
  6. Then add water to the sugar. The amount of water should be 1.5 times the amount of sugar taken for preparing the sugar syrup.
  7. Allow the sugar to melt in water over high flame for 5-7 minutes. Stir continuously till the sugar syrup thickens. Turn off the flame just before the sugar syrup begins to become sticky. The consistency of this sugar syrup or chashini should be same as the sugar syrup or chashini prepared for gulab jamun.
  8. Then add crushed cardamom to it. The sugar syrup or chashini for the shahi tukda is ready. Allow it to cool while you fry the bread slices. The sugar syrup or chashini should cool down a little before being used for dipping the fried bread slices in it.
  9. Now heat a kadhai and add refined oil to it.
  10. When the oil is heated completely then add a bread piece to it. Flip quickly and carefully to fry the bread piece till it turns crispy red uniformly. Do not fry the bread piece for long in the oil, because it may turn black. Deep fry all the bread pieces in the same way.
  11. Now take one fried bread piece and dip it in the sugar syrup or chashini nicely. Then keep it in a serving dish. Repeat the same process for all fried bread pieces.
  12. Then pour generous amount of thickened milk or rabri prepared earlier over it.
  13. Garnish with chopped dry fruits, raisins and saffron strand. The rich, creamy, tempting and easy to make shahi tukda is ready to served.

शाही टुकड़ा बनाने की प्रक्रिया:

  1. 4 ब्रेड स्लाइसेस लें और इसे दो हिस्सों में काटें। ब्रेड स्लाइसेस को डायगोनाली या 2 त्रिकोणीय आकार में काटें।
  2. फिर एक गहरे पतीले में 1/2 लीटर दूध डालें और इसे उबलने के लिए तेज आँच पर रख दें।
  3. जब दूध में उबाल आना शुरू होजाए तो आँच को मध्यम स्तर तक कम कर दें और रबड़ी के जैसे दूध को गाढ़ा होने के लिए लगातार चलाते हुए उबलते रहने दें।
  4. जब दूध की मात्रा 1/2 से कम रह जाए, तब गैस बंद कर दें।
  5. अब एक दूसरा पैन या गहरे बर्तन लें और उसमें चीनी डालें।
  6. फिर इसमें पानी डालें। पानी की मात्रा चीनी की मात्रा से 1.5 गुना होनी चाहिए।
  7. चीनी को 5-7 मिनट के लिए तेज आँच पर पानी में पिघलने दें। चाशिनी में एक तार बनने से पहले ही गैस बंद कर दें। शाही टुकड़ा के लिए बनाई गई चाशीनी गुलाब जामुन की चाशिनी के समान होनी चाहिए।
  8. फिर इसमें कुचली हुई इलायची डालें। शाही टुकड़ा के लिए चाशीनी तैयार है। जब तक आप ब्रेड स्लाइसेस को तलेंगे, तब तक चाशीनी ठंडी होने दें।
  9. जब तेल पूरी तरह से गरम होजाए तो इसमें ब्रेड स्लाइसेस डालें। ब्रेड स्लाइसेस को जल्दी और सावधानी से पलट दें और क्रिस्पी लाल होनें तक तलें। ध्यान रहे कि ब्रेड स्लाइसेस को काला नहीं करना है।
  10. अब एक फ्राइड ब्रेड स्लाइस लें और इसे चाशिनी में अच्छी तरह से डुबो दें। फिर इसे एक प्लेट में रखें। सभी तले हुए ब्रेड स्लाइसेस को इसी तरह तैयार करें।
  11. उसके बाद पहले से तैयार की हुई रबड़ी को तले हुए ब्रेड स्लाइसेस के ऊपर फैला कर डालें।
  12. कटे हुए ड्राई फ्रूट्स, किशमिश और केसर के साथ गार्निश करें और परोसें।
