Lauki Ka Halwa or Doodhi Ka Halwa Recipe - With Lakshmi Recipes

Lauki Ka Halwa is among the famous dessert dish prepared using a vegetable. You do not need any special occasion for making this dish, however it makes a great dessert for house parties or any get togethers. It is very easy to make and tastes very good.

Ingredients for making Lauki Ka Halwa / सामग्री:

  • Bottle Gourd - 1/2 kg; (लौकी)
  • Mawa or Khoya - 200 gm, lightly crumbled with hands; (मावा या खोया)
  • Sugar - 100 gm; (चीनी)
  • Ghee - 1 table spoon; (घी)
  • Green Cardamom Powder - 1/2 tea spoon; (कुचली हुई छोटी इलायची का पाउडर)
  • Dry Fruits - as per requirement
    • Almonds - roughly chopped; (बादाम)
    • Raisins; (किशमिश)

Procedure for making Lauki Ka Halwa:

  1. Peel off the bottle-gourd or lauki nicely and cut it along its length.
  2. Now remove the seeds and pulp/fibre from the center of the bottle-gourd or lauki and then grate it nicely.
  3. Then heat a kadhai and add the grated bottle-gourd or lauki and sugar to it.
  4. Increase the flame and stir to cook both the ingredients together over high flame. This will allow the sugar to melt and water to release from the grated bottle-gourd or lauki.
  5. When the grated bottle-gourd or lauki begins to release water then lower the flame to lowest level and cover the kadhai with a lid. Cook the ingredients in this mannere for 10 minutes.
  6. Remove the lid to stir the ingredients from the base of the kadhai at regular intervals. Also check if the water released from the bottle-gourd or lauki has dried up completely.
  7. After 10 minutes when the water released from the bottle-gourd or lauki has dried up completely, then add 1  table spoon ghee to it. (You can also skip this step, as the halwa tastes equally tasty without the use of ghee. Here, we have not added ghee while making the lauki ka halwa.)
  8. Now take the crumbled mawa or khoya and add half of it to the kadhai.
  9. Add crushed cardamom powder and mix the ingredients well.
  10. When the grated bottle-gourd or lauki mixes well with the mawa or khoya and halwa prepared appears uniform then turn off the flame.
  11. Transfer the hot lauki ka halwa to a plate and spread it in the desired shape or manner.
  12. Garnish with remaing crumbled mawa or khoya, roughly chopped almonds and raisins. The tasty "Lauki Ka Halwa"is ready to be served.

लौकी का हलवा बनाने की प्रक्रिया:

  1. लौकी को अच्छी तरह से छीलकर इसको लंबाई में बीच से काट लें।
  2. अब लौकी को बीच से बीज और गूदा को हटा दें और फिर इसे अच्छी तरह से कद्दु-कस कर लें।
  3. फिर एक कढ़ाई गरम करें और इसमें कद्दु-कस करी हुई लौकी और चीनी जोड़ें।
  4. आँच को बढ़ाएं और दोनों तत्वों को तेज आँच पर एक साथ पकाने के लिए चलाएं। ऐसा करने से चीनी पिघलने शुरु होजाएगी और लौकी भी पानी छोड़ने लगेगी।
  5. जब कद्दु-कस करी हुई लौकी से पानी छूटने लगे तो आँच को एकदम कम कम कर दें और कढ़ाई को ढक्कन के साथ ढक दें। इस तरह से सामग्री को 10 मिनट तक पकाएं।
  6. नियमित अंतराल पर कढ़ाई का ढक्कन हटा कर कढ़ाई के आधार से सामग्री को चलाएं। चलाते हुए यह भी देखें कि लौकी का पानी पूरी तरह से सूखा है या नहीं।
  7. 10 मिनट के बाद जब लौकी से निकला हुआ पानी पूरी तरह से सूख जाए, तो इसमें 1 बड़ा चम्मच घी डालें। (आप चाहें तो घी क उपयोग नहीं भी कर सक्ते हैं। यह लौकी का हलवा घी के उपयोग के बिना भी बहुत ही स्वादिष्ट लगता है। यहां, हमने लौकी का हलवा बनाने में घी का उपयोग नहीं किया है।)
  8. अब हल्के हाथों से मसले हुए मावा या खोया को लें और इसका आधा हिस्सा कढ़ाई में डालें।
  9. कुचली हुई छोटी इलायची का पाउडर जोड़ें और अच्छी तरह से सामग्री को चलाकर मिलाएं।
  10. जब मावा या खोया और लौकी के साथ मिल कर एकसा दिखाई देने लगे तो गैस बंद कर दें।
  11. गरम लौकी के हलवा को एक प्लेट में निकालें और इसे चाहे आकार या तरीके से फैलाएं।
  12. बाकि बचे हुए मावा या खोया, मोटी तौर पर कटा हुआ बादाम और किशमिश के साथ गार्निश करें। आपका स्वादिष्ट "लौकी का हलवा" परोसने के लिए तैयार है।
