Chhuhara Ki Burfi Recipe - Learn How To Make Chhuhara Ki Burfi

Chhuhara or dry dates are loaded with high amount iron and other nutrients. Chhuhara Ki Burfi is a nice and beautiful way of enjoying the healthy chhuhara or dry dates in a tasty way once in a while. It can be prepared during fastings or vrats, festivals, auspicious occasions.

PreparationTime: 6 hours for soaking the Chhuhara or dry dates in water + 5 minutes for gathering ingredients

Recipe Yield: 9 servings

Ingredients for making Chhuhara Ki Burfi / सामग्री:

  • Chhuhara or Dry Dates - 15-20; (छुहारा)
  • Milk - 1 small cup; (दूध)
  • Desi Ghee - 1 table spoon; (देसी घी)
  • Mawa or Khoya - 150 gm; (मावा या खोया)
  • Almonds and Pistachios - 1-2 table spoon or as per requirement, roughly chopped or roughly ground; (बादाम और पिस्ता)

Procedure for making Chhuhara Ki Burfi:

  1. Soak the dry dates or chuhara in clean water overnight, so that they become soft. Next morning cut them to take out and remove their seeds.
  2. Transfer these soaked dry dates or chuhara to a mixer jar and 1 small cup milk to it. (Add milk if required.)
  3. Grind the soaked dry dates or chuhara to form a fine paste.
  4. Now heat a thick based kadhai and add 1 table spoon desi ghee to it.
  5. Add the paste of dry dates or chuhara to the kadhai and lower the flame to medium level. Stir and cook paste for 15 minutes over medium flame only.
  6. Now crumble the khoya or mawa with your hands and add it to the kadhai. Mix the ingredients well. Stir regularly and cook the ingredients together for 5 minutes over medium flame.
  7. When the ingredients blend in together and the mixture appears uniform light pink in color, then turn off the flame.
  8. Transfer the cooked mixture to a plate or tray to cool and set for forming burfis out of it. Allow the hot mixture to cool and set for 1/2 hour.
  9. Now take some roughly ground almonds and spread like a uniform layer over the cooled mixture.
  10. Then spread a layer of roughly chopped pistachios over it.
  11. Press this layer of almonds and pistachios lightly with hands and then cut out burfis of desired shape from the cooled and set mixture. The beautiful and tasty "Chhuhara Ki Burfi" or "Dry Dates Burfi" are ready to be served.

छुहारा की बर्फी बनाने की प्रक्रिया:

  1. छुहारा को साफ पानी में रात भर भिगोएँ, ताकि वे नरम हो जाएं। अगली सुबह उन्हें पानी से बाहर निकाल लें और उनको काट कर बीज निकाल कर अलग कर दें।
  2. फिर भीगे हुए छुहारा को एक मिक्सर जार में डालें और 1 छोटे कप दूध इसमें जोड़ें। (आवश्यकतानुसार ही दूध जोड़ें।)
  3. छुहारा को पीसकर बारीक पेस्ट बना लें।
  4. अब एक मोटी तले की कढ़ाई गरम करें और इसमें 1 बड़ा चम्मच देसी घी डालें।
  5. फिर कढ़ाई में छुहारा का पेस्ट डालें और आँच को मध्यम स्तर तक कम करें। केवल मध्यम आँच पर 15 मिनट के लिए छुहारा के पेस्ट को चलाते हुए भूनें।
  6. अब अपने हाथों से खोया या मावा को हल्का सा मसल कर कढ़ाई में डालें। अच्छी तरह से सामग्री मिलाएं और लगातार चलाते हुए मध्यम आँच पर 5 मिनट के लिए सामग्री एक साथ पकाएं।
  7. जब दोनों सामग्री एक साथ मिलकर, समान रूप से हल्के गुलाबी रंग की दिखाई देने लगे तो, तो गैस बंद कर दें।
  8. अब इस मिश्रण को एक प्लेट या ट्रे में ठंडा करने के लिए निकाल लें और इससे बर्फी बनाने के लिए सेट होने दें। गर्म मिश्रण को ठंडा होकर सेट होने केलिए 1/2 घंटे के लिए अलग रख दें।
  9. अब कुछ मोटे तौर पर पिसा हुआ बादाम लें और ठंडे मिश्रण पर एक समान परत के रूप में फैलाएं।
  10. फिर उस पर मोटी तौर पर कटा हुआ पिस्ता की एक परत फैलाएं।
  11. हल्के हाथों से बादाम और पिस्ता के इस परत को दबाएं और फिर चाकू या स्टेंसिल से मन्न चाहे आकार की बर्फी काट लें। आपकी सुंदर और स्वादिष्ट "छुहारा की बर्फी" या "ड्राई डेट्स बर्फी" परोसने के लिए तैयार हैं।

(Tips: Extra sugar is not required to be added into this dish, because all ingredients have the basic sweet taste. If needed, you can add as per your requirement.)
