Almonds Barfi or Badaam Barfi or Badam Burfi Recipe

Almonds Barfi or Badaam Barfi or Badam Burfi is a healthy substitute for candies, that is rich in flavour and contains the goodness of almonds and fresh home-made mawa or khoya. It can be made during fastings or vrats, auspicious occasions and festivals. It is easy to make and tastes delicious. 

This festive season try out this easy recipe to make fresh Almonds Barfi or Badaam Barfi or Badam Burfi, with the help of the detailed recipe, step by step photos and video given below:

Preparation Time: 5 minutes

Cooking Time: 25 minutes for making khoya and grinding the almonds + 5 minutes for dry roasting the powder of almonds + 5 minutes for making barfi

Recipe Yield: 6 pieces

Ingredients for making Almonds Barfi or Badaam Barfi or Badaam Burfi / सामग्री:

  • Almonds - 1 small cup; (बादाम)
  • Home-made Mawa or Khoya - 1 small cup; (मावा या खोया)
  • Powdered Sugar - 2 tea spoon or can vary with taste; (पीसी हुई चीनी)
  • Roughly chopped Dry Fruits - as per requirement
    • Almonds; (बादाम)
    • Cashews; (काजू)  
    • Pistachios; (पिस्ता)

Procedure for making Almonds Barfi or Badaam Barfi or Badaam Burfi:

  1. Take 1 litre full cream milk in a deep vessel and set it to boil. When the milk begins to boil then lower the flame to low level and allow it to boil and become thick in consistency. Stir at regular intervals and continue this process till the milk thickens and dries up to form creamy mawa or khoya.
  2. Meanwhile take the almonds into a mixer jar and grind them to form a fine powder.
  3. Heat a non-stick pan and then lower the flame to low level. Transfer the powder of almonds (prepared in previous step) to the non-stick pan. Stir continuously to dry roast the powder of almonds in the non-stick pan for 5 minutes over low flame only.
  4. When the color of the powder of almonds begin to change slightly then quickly turn off the flame and transfer the roasted powder of almonds to a big plate. (Transfer the roasted powder of almonds quickly to avoid darkening of its color.)
  5. Add the freshly prepared mawa or khoya and powdered sugar to it.
  6. Mix the 3 ingredients well nicely as if forming a dough.
  7. Now roll this dough flat with a rolling pin to cut out the barfis from it (as shown in the image below). You can alter the thickness of the barfi as per your requirement.
  8. Now add a layer of chopped dry fruits (cashews, almonds and pistachios) and slightly press them with the help of the rolling pin (as shown in the image below).
  9. Then cut out barfis of desired shape from it. Your tasty, fresh, purely home-made and beautiful "Almonds Barfi or Badaam Barfi or Badaam Burfi" are ready to be served.

बादाम बर्फी बनाने की प्रक्रिया:

  1. एक लीटर फुल क्रीम दूध एक गहरे बर्तन में डालें और इसे उबाल लें। जब दूध उबालना शुरू होजाए तो आँच को कम कर दें और इसे धीरे-धीरे गाढ़ा होने दें। नियमित अंतराल पर चलाएं और इस प्रक्रिया को जारी रखें जब तक कि दूध पूरा सूख कर गाढ़ा और क्रीमी न होजाए। आपका ताजा मावा या खोया बन कर तैयार है।
  2. इस दौरान बादाम को एक मिक्सर जार में डालें और उन्हें पीसकर बारीक पाउडर बना लें।
  3. एक नाँन-स्टिक पैन गरम करें और फिर आँच को एकदम कम कर दें। नाँन-स्टिक पैन में बादाम का पाउडर डालें (जो कि पिछले चरण में तैयार किया गया था) और इसे कम आँच पर 5 मिनट लगातार चलाते हुए भूनें।
  4. जब बादाम के पाउडर का रंग थोड़ा बदलना शुरू होजाए तो जल्दी से गैस बंद कर दें और बादाम के भुने हुए पाउडर को एक बड़ी प्लेट में निकाले लें। (भूने हुए बादाम के पाउडर को काला होने से बचाने के लिए, इसे जल्दी से एक प्लेट में निकाल लें)
  5. इसमें ताजा तैयार किया हुआ मावा या खोया और पीसी हुई चीनी जोड़ें।
  6. तीनों सामग्री को अच्छी तरह से मिलाएं, और आटा के जैसा गून्ध लें।
  7. अब इससे बर्फी बनाने केलिए बेलन की सहायता से चपटा बेल लें (जैसा कि नीचे दी गई छवि में दिखाया गया है)। आपको जितनी मोटी बर्फी बनानी हो उतना मोटा बेल लें।
  8. अब इस पर कटे हुए ड्राई-फ्रूट्स (काजू, बादाम और पिस्ता) को डालें और बेलन की सहायता से हल्के से दबा कर एक समान परत बना लें (जैसा कि नीचे दी गई छवि में दिखाया गया है)।
  9. फिर इसे मन्न-चाहे आकार में काट लें। आपकी स्वादिष्ट, ताजी और सुन्द्अर "बादाम बर्फी" परोसने के लिए तैयार हैं।
