Kachori Chaat Recipe - Learn How To Make Kachori Chaat

Kachori Chaat is an irresistable and flavorsome chaat dish that is among the top Indian street foods. Crispy pooris stuffed with spiced up filling, chutneys and soothened curd also make up a great snack for house-parties and celebrating special occasions. Learn how to make this palatable dish in your kitchen with the help of the detailed recipe given below:

Recipe Yield: 2 servings (2 kachori per serving)

Ingredients for making Kachori Chaat /  सामग्री:

  • Pooris for Kachori Chaat  (click on the link for making pooris for kachori chaat) - 4; (कचौरी चाट के लिए पूरी)
  • Curd - 1 cup; (दही)
  • Sugar - 1 table spoon; (चीनी)
  • Imli ki Meethi Chutney (click on the link for making imli ki meethi chutney) - as per taste and requirement; (इमली की मीठी चटनी) 
  • Hari Teekhi Chutney (click on the link for making hari teekhi chutney) - as per taste and requirement; (हरी तीखी चटनी)
  • Chaat Masala Powder - as per taste and requirement; (चाट मसाला पाउडर)
  • Black Rock Salt - as per taste and requirement; (काला नमक)
  • Normal Salt - as per taste and requirement; (सफेद नमक)
  • Red Chilli Powder - as per taste and requirement; (लाल मिर्च पाउडर)
  • Cumin Seeds Powder - as per taste and requirement; (जीरा पाउडर)
  • Boiled Potato - 2 medium size, chopped into small sized cubes; (उबले हुए आलू)
  • Pomegranate Seeds - 2 table spoon; (अनार दाना)
  • Sprouted Green Gram - 1 table spoon; (अंकुरित करी हुई हरी मूंग)
  • Besan ki namkeen boondi - 2-3 table spoon; (बेसन की बूंदी)

Procedure for making Kachori Chaat:

  1. Take the curd in a bowl and add 2 table spoon sugar to it. Whisk well until the sugar is completely dissolved in it and the curd becomes smooth.
  2. Take a plate and place a poori for kachori chaat (click on the link to learn the procedure for making poori for kachori chaat) in it and make a small opening in each of them with your thumb (as shown in the image below).
  3. Add the small cubes of boiled potato in it, followed by sprouted green gram and besan ki namkeen boondi.
  4. Now pour the smoothened and sweetened curd, imli ki meethi chutney and hari teekhi chutney in the poori for kachori chaat.
  5. Again put some besan ki boondi, pomegranate seeds and fill the poori for kachori chaat with sweetened and smoothened curd.
  6. Add a little imli ki meethi chutney and hari teekhi chutney in it again.
  7. Sprinkle black rock salt, normal salt, chaat masala powder, cumin seeds powder and red chilli powder over it as per your taste and requirement.
  8. Then top it with besan ki boondi and pomegranate seeds. The irresistible and flavorsome kachori chaat is ready to be served.

कचौरी चाट बनाने की प्रक्रिया:

  1. एक कटोरे में दही लें और इसमें 2 बड़े चम्मच चीनी डालकर अच्छे से मिलाएं। जब तक चीनी में पूरी तरह से घुल न जाए और दही चिकना न हो जाए, तब तक अच्छी तरह से मिलाते रहें।
  2. अब एक प्लेट लें और कचौरी चाट के लिए एक पूरी (कचौरी चाट के लिए पूरी बनाने की प्रक्रिया सीखने के लिए लिंक पर क्लिक करें) और अपने अंगूठे के साथ प्रत्येक पूरी को उपर से फोड़ दें (जैसा कि नीचे दिये गए चित्रों में दिखाया गया है)।
  3. फिर उसमें उबले हुए आलू के छोटे से क्यूब्स डालें, उसके बाद अंकुरित करी हुई हरी मूंग और बेसन की नमकीन बूंदी डालें।
  4. अब कचौरी चाट की पूरी में चिकना किया हुआ और मीठा दही, इमली की मीठी चटनी और हरी तीखी चटनी डालें।
  5. फिर कुछ बेसन की बूंदी, अनार दाना डालकर कचौरी चाट की पूरी को मीठे और चिकना किये हुए दही से भर दें।
  6. इसमें दोबारा थोड़ी इमली की मीठी चटनी और हरी तीखी चटनी डालें।
  7. अपने स्वाद और आवश्यकता के अनुसार इसमें काला नमक, सफेद नमक, चाट मसाला पाउडर, जीरा पाउडर और लाल मिर्च पाउडर छिड़क दें।
  8. फिर बेसन की बूंदी और अनार दाना डालकर गार्निश करें। आपका स्वादिष्ट कचौरी चाट परोसने के लिए तैयार है।
