Bihari Style Sehjan Ki Sabji Recipe - Learn How To Make Sehjan Ki Sabji Bihari Style

Sehjan or drumstick or munga is a vegetable with Indian origin and incredible amount of nutritional and health benefits. Learn to make this extremely healthy dish with the help of step by step photos and detailed recipe given below:

Ingredients for Shehjan ki Sabji Bihari Style / सामग्री:

  • Drumsticks - 250 gms or 6-7
  • Tomato - 2; finely chopped
  • Mustard Seeds - 1 table spoon
  • Fenugreek Seeds - 1 tea spoon
  • Garlic Petals - 7-8
  • Turmeric Powder - 1 tea spoon
  • Coriander Powder - 1 tea spoon
  • Cumin Seeds Powder - 1/2 tea spoon
  • Black Pepper Powder - 1/2 tea spoon
  • Red Chilli Powder - 1 tea spoon
  • Salt as per taste

Procedure for making Bihari Style Sehjan ki Sabji:

  1. Chop the drumsticks into 1.5 inch big pieces. Then wash them with plain water nicely for 2-3 times.
  2. Take 1 table spoon mustard seeds in a mixer jar and add the galic petals to it. Add 2-3 tea spoon water and then grind the ingredients together to form a fine paste. (Add a little more water 1-2 tea spoon if required) 
  3. Now transfer the paste into a plate and add turmeric powder, cumin seeds powder, black pepper powder, red chilli powder, coriander powder and salt as per taste to it. Mix all the spices and salt to form a uniform paste.
  4. Place a kadhai on the gas staove and heat 1 table spoon mustard oil in it. Add the fenugreek seeds to it and allow them to crackle.
  5. Then add the paste of mustard seeds to it and allow it to cook till the oil seperates.
  6. Now add the chopped tomatoes to it. The spices and salt in the masala being prepared will allow the tomatoes to cook easily.
  7. When the tomato pieces appear tender and cooked then mash them with the ladle.
  8. Now add 1.5 big cup water to the kadhai. (Add water as per requirment. Usually a gravy of thin consistency is preferred for this dish) Check if more salt is required and add to it.
  9. Now add the chopped pieces of drumstick to the cooking gravy. Lower the flame and cover the kadhai with a lid. Allow the the drumsticks to cook in the gravy like this for 10 minutes. Turn off the flame after 10 minutes. The healthy, flavorful and hot dish "sehjan ki sabji" is ready to be served with rice or rotis.

सहजन की सब्जी बनाने की प्रक्रिया:

  1. सहजन को 1.5 इंच बड़े टुकड़ों में काट लें। फिर इन्हे 2-3 बार अच्छी तरह से सादे पानी के साथ धो लें।
  2. एक मिक्सर जार में 1 चम्मच सरसों के बीज और 7-8 लेहसुन की कली डालें। 2-3 छोटी चम्मच पानी डालें और फिर इन्हे पीसकर एक महीन पेस्ट बना लें। (यदि आवश्यकता हो तो 1-2 छोटे चम्मच पानी और डालें)
  3. अब एक थाली में इस पेस्ट को निकालें और इसमें हल्दी पाउडर, जीरा पाउडर, काली मिर्च पाउडर, लाल मिर्च पाउडर, धनिया पाउडर और स्वाद अनुसार नमक डालें। सारे मसालों और नमक को मिलाकर एक समान पेस्ट बनालें।
  4. अब एक कढ़ाई में 1 बड़ा चम्मच तेल डालकर गर्म करें और इसमें मेथी दाना डालें। मेथी दाना को लाल होने तक चटकने दें।
  5. फिर इसमें सरसों के बीज का पेस्ट डालें और इसे तब तक पकाने दें जब तक तेल अलग न होने लगे।
  6. अब इसमें कटा हुआ टमाटर डालें। मसालों और नमक के साथ टमाटर आसानी से पक जाते हैंं।
  7. जब टमाटर के टुकड़े पक जायें तो उन्हे एक करछुल के साथ मैश कर लें।
  8. अब कढ़ाई में 1.5 बड़ा कप पानी डालें। (पानी अन्दाज से डालें। आम तौर पर यह सब्जी पतली ग्रेवी के साथ पसंद की जाती है) यदि आवश्यकता हो तो और नमक डाल सकते हैं।
  9. अब ग्रेवी में कटा हुआ सहजन डालें। गैस की आॅच कम कर दें और एक ढक्कन लगाकर सहजन को 10 मिनट के लिए इग्रेवी में पकाने दें। 10 मिनट के बाद गैस बंद कर दें। आपकी स्वादिष्ट और गर्म "सहजन की सब्जी" तैयार है। इसे गर्म-गर्म चावल या रोटी के साथ परोसें।
