Hare Matar Ki Ghugni Recipe - Learn How To Make Hare Matar Ki Ghugni

We present to you a healthy and quick evening snack (or breakfast) recipe made from green peas. This protein rich recipe is prepared by cooking the green peas with spiced up tangy tomato and very little oil. Ingredients for making Hare Matar Ki Ghugni:

  • Green Peas or hare matar ke dane or हरी मटर के दाने - 1 big cup (you can use frozen green peas if the fresh ones are not available)
  • Onion or pyaz or प्याज - 1 finely chopped
  • Tomato or tamatar or टमाटर - 1 finely chopped
  • Ginger or adrak or अदरक - 1 inch piece finely chopped
  • Green Chilli or hari mirch or हरी मिर्च - 3-4 finely chopped
  • Salt as per taste or namak swaad anusar or नमक
  • Turmeric Powder or haldi powder or हल्दी पाउडर - 1 tea spoon
  • Cumin Seeds Powder or jeera powder or जीरा पाउडर - 1/2 tea spoon
  • Black Pepper Powder or kali mirch powder or काली मिर्च पाउडर - 1/2 tea spoon
  • Red Chilli Powder or lal mirch powder or लाल मिर्च पाउडर - 1/2 tea spoon
  • Coriander Powder or dhaniya powder or धनिया पाउडर - 1 tea spoon
  • Asafoetida or Hing or हींग - 1 pinch
  • Mustard Oil or sarson ka tel or सरसों का तेल - 1 table spoon, or you can use refined oil

Procedure for making Hare Matar Ki Ghugni:

  1. Heat 1 table spoon oil in a kadhai and then add asafoetida, finely chopped ginger (adrak), green chilli (hari mirch) and onion (pyaz) to it. Saute the ingredients till they turn slightly brown in color.
  2. Now add the powdered spices (haldi powder, jeera powder, kali mirch powder, lal mirch powder, coriander powder) and salt as per taste (namak swaad anusar) to it. Stir and cook the spices for about 15 seconds.
  3. Then add finely chopped tomato (tamatar) to it. The tomato (tamatar) will be cooked easily due to the presence of spices and salt in the kadhai.
  4. When the tomato (tamatar) is cooked and become soft then add green peas (hare matar ke dane) to the kadhai. Stir and cook for 1 minute. Then cover the kadhai with a lid and lower the flame. Cook the green peas (hare matar ke dane) in this manner for 5 minutes and then remove the lid.
  5. Now stir and cook the green peas (hare matar ke dane) with the spices for 2 minutes. Then check 1-2 green peas (hare matar ke dane) with hands if they have become soft and are cooked. (If the green peas (hare matar ke dane) are still raw then cook for some more time.)  Then turn off the flame and transfer the hare matar ki ghugni prepared to a serving bowl and garnish with chopped coriander leaves (hara dhaniya patti), grated radish (mooli), chopped onions (pyaz) and green chillis ( hari mirch). The hot har matar ki ghugni is now ready to be served.

हरे मटर की घुगनी बनाने की प्रक्रिया:

  1. कढ़ाई में 1 बड़ा चम्मच सरसों का तेल डालकर गरम करें और फिर हींग, बारीक कटा हुआ अदरक, हरी मिर्च और प्याज को इसमें डालें। सामग्री को रंग में सुन्हरा भूरे रंग का होने तक भूनें।
  2. अब कढ़ाई में सारे पाउडर मसाले (हल्दी पाउडर, जीरा पाउडर, काली मिर्च पाउडर, लाल मिर्च पाउडर, धनिया पाउडर) और स्वाद के अनुसार नमक डालें। सामग्री को अच्छे से मिलाएं और लगभग 15 सेकंड के लिए मसालों को चलाते हुए भूनें।
  3. फिर इसमें बारीक कटा हुआ टमाटर डालें। नमक डालने से टमाटर आसानी से पक जाएगा।
  4. जब टमाटर पका जाए और नरम हो जाए तो हरी मटर के दानों को कढ़ाई में डालें। सामग्री को अच्छे से मिलाएं और 1 मिनट के लिए चलाते हुए पकाएं। फिर कढ़ाई को ढक्कन के साथ ढक दें और आँच को कम कर दें। हरी मटर के दानों को 5 मिनट तक इस तरह पकाएं और फिर ढक्कन हटा दें।
  5. ढक्कन हटाने के बाद सामग्री को 2 मिनट तक चलाते हुए पकाएं। फिर 1-2 हरी मटर के दानों को दबाकर देखें कि वे नरम होकर और पक गए हैं या नहीं। (यदि हरे मटर के दाने अभी भी कच्चे हैं तो कुछ और समय के लिए कढ़ाई को ढक्कन के साथ ढक दें और सामग्री को आँच को कम करके पकाएं।) फिर गैस को बंद कर दें और हरे मटर की घुगनी को एक कटोरे में निकालें और कटी हुई धनिया पत्ती (या कद्दु-कस की हुई मूली या बारीक कटा हुए पयाज़ और हरी मिर्च) के साथ गार्निश करें। गरमा-गरम हरे मटर की घुगनी अब परोसने के लिए तैयार है।
