Besan Aur Khoye Ki Barfi or Besan Ki Barfi Recipe - With Lakshmi Recipes

A traditional sweet of India and Pakistan that is tasty and really easy to make is Besan aur Khoya Ki Barfi. Prepare these tasty barfis with an easy and quick recipe given below:

Cooking Time: 20 minutes

Recipe Yield: 8-10 barfis

Alternate Names: Besan aur khoye ki barfi, Besan Ki barfi, Besan Chakki

Ingredients for making Besan aur Khoye Ki Barfi:

  • Gram Flour or Besan - 1 big cup
  • Khoya or Mawa - 200 gram
  • Powdered Sugar or cheeni - as per requirement or 2 table spoon
  • Crushed cardamom or Kuti hui elaichi - 1 tea spoon
  • Shudh Desi Ghee - 2 table spoon
  • Muskmelon seeds or kharbuje ke beej - as per requirement

Procedure for making Besan aur Khoye Ki Barfi:

  1. Heat a non-stick pan and add muskmelon seeds to it. Dry roast the muskmelon seeds till you can feel its aroma.
  2. Transfer the roasted muskmelon seeds to a plate.
  3. Now transfer 200 gms khoya to the heated pan. Stir and roast the khoya till it turns light red in color. Transfer the khoya to a plate.
  4. Then heat 2 table spoon ghee in a non-stick pan and add 1 table spoon gram flour to it. Lower the flame to low level. Stir and roast the gram flour till it changes its color to light brown and you can feel its aroma.
  5. Now turn off the flame and allow the roasted gran flour to cool slightly. Transfer the roasted gram flour to a plate so that it cools down easily and quickly. Remember, not to cool the gram flour completely other wise it will be difficult to mix the sugar. Also, if you will add sugar into hot gram flour then it will melt into liquid form and it will be difficult to set the barfis into shape.
  6. Then add the preapred khoya to the roasted gram flour and mix well.
  7. Add muskmelon seeds and cardamom powder to this mixture and mix again.
  8. Now add powdered sugar as per taste and mix again.
  9. Transfer this mixture to a tray/mould/plate and spread into a uniform layer and cut into barfis of desired shapes. The "Besan aur Khoye Ki Barfis" are ready to be served.

बेसन और खोये की बर्फी बनाने की प्रक्रिया:

  1. एक नोन-स्टिक पैन को गरम करें और इसमें खरबूजे के बीज डालकर इन्हें सूखा ही भून लें। भुना हुए खरबूजे के बीज को एक प्लेट में निकाल लें।
  2. अब गरम नॉन-स्टिक पैन में 200 ग्राम खोया डालें और इसे भी हल्का लाल रंग का होने तक भून लें। भुने हुए खोये को एक प्लेट में निकाल लें।
  3. फिर एक नॉन-स्टिक पैन में 2 बड़ा चम्मच देसी घी गरम करें और इसमें 1 बड़ा चम्मच बेसन डालें। आंच को कम कर दें। लगातार चलाते हुए बेसन को भूनें जब तक कि यह हल्के भूरे रंग में न बदल जाए और आप इसकी सुगंध महसूस करने लगें।
  4. अब गैस को बंद कर दें और भुने हुए बेसन को थोड़ा ठंडा होने दें। भुने हुए बेसन को एक प्लेट में निकाल लें ताकि वह आसानी से और जल्दी से ठंडा हो जाए। याद रखें कि, बेसन को पूरी तरह से ठंडा न करें नहीं तो चीनी को मिलाने में मुश्किल होगी। और यदि आप एकदम गरम बेसन में चीनी डाल देंगे तो यह पिघल जाएगी और इसे बर्फी का आकार देने मुश्किल होगी।
  5. फिर भुने हुए बेसन में भुना हुआ खोया डालें और अच्छी तरह से मिलाएं।
  6. अब इस मिश्रण में भुने हुए खरबूजे के बीज और इलायची पाउडर डालें और फिर से मिलाएं।
  7. फिर इस मिश्रण में स्वाद के अनुसार पाउडर चीनी डालें और फिर से मिलाएं।
  8. इस मिश्रण को एक ट्रे / मोल्ड / प्लेट में निकाल लें और एक समान परत के रूप में फैलाएं और मन चाहे आकार की बर्फी में काट लें। "बेसन और खोये की बर्फी" परोसे जाने के लिए तैयार हैं।
