Gudamma Recipe - Learn How To Make Gudamba or Khattmithhi

A quick and easy dish to spice up your simple lunch in summers. It can be served with dal and rice or enjoyed with plain pooris or parathas.

Ingredients for making Gudamma:

  • Raw Mangoes or Kachcha Aam - 2
  • Whole wheat flour or gehun ka ata - 1 table spoon
  • Fenugreek Seeds or methi - 1 tea spoon
  • Cumin Seeds or jeera - 1 tea spoon
  • Salt or namak - 1/2 tea spoon
  • Whole red chillis or sabut lal mirch - 3
  • Jaggery or gud - 200 grams
  • Water - 2 cups
  • Refined oil - 2 table spoon

Procedure for making Gudamma:

  1. Peel off the raw mangoes and cut out long slices or pieces of it (remove the seeds), as shown in the images below.
  2. Place 200 grams jaggery in a deep vessel and add 2 cups water to it. Stir once and allow the jaggery to dissolve slowly in water.
  3. When the jaggery is completely dissolved in water then pour it through a sieve into another vessel to strain out the solid dirt particles from the jaggery syrup.
  4. Heat a kadhai and add 1 table spoon whole wheat flour to it. Stir and dry roast the wheat flour. When the wheat flour gets roasted (changes its color to brownish pink), then take it out in a plate and keep it aside to be used later.
  5. Now add 2 table spoon refined oil to the hot kadhai. Add fenugreek seeds whole red chillis and cumin seeds to the hot oil.
  6. Allow the seeds to crackle and then add raw mango slices or pieces to it. 
  7. Add 1/2 tea spoon salt the cooking raw mango pieces and cook till they appear reddish on the surface.
  8. Then add raosted whole wheat flour to the cooking raw mango slices or pieces. Stir and cook the ingredients for some time.
  9. Now add the clear jaggery syrup to the kadhai. Allow the syrup to come to a boil and then lower the flame to medium level. Allow the ingredients to boil and cook in the jaggery syrup for 5 minutes and then turn off the flame. Tasty gudamma is ready.

गुड़म्मा बनाने की प्रक्रिया:

  1. कच्चे आम को छील लें और नीचे दी गई छवियों के अनुसार उन्हें लंबे स्लाइस या टुकड़ों (बीज को हटा दें) में काट लें।
  2. एक गहरे पतीले में 200 ग्राम गुड़ डालें और इसमें 2 कप पानी डालें। एक बार चम्मच/हाथ से चलाकर मिलाएं और गुड़ को पानी में धीरे-धीरे घुलने दें।
  3. जब गुड़ पूरी तरह से पानी में घुल जाए तो गुड़ के सिरप को छान कर दूसरे बर्तन में डाल लें।
  4. एक कढ़ाई गरम करें और इसमें 1 बड़ा चम्मच गेहूं का आटा डालें। गेहूं के आटे को सूखा भुनें। जब गेहूं भुन जाए (और  हल्का गुलाबी रंग का दिखने लग जाए), तो फिर इसे प्लेट में निकाल लें और इसे बाद में इस्तेमाल करने के लिए अलग रखें।
  5. अब गरम कढ़ाई में 2 बड़ा चम्मच रिफाइंड तेल डालें। फिर इसमें मेथी दाना, सूखी लाल मिर्च और जीरा डालें।
  6. बीज को चटकने दें और फिर इसमें कच्चे आम के स्लाइस या टुकड़े डालें।
  7. 1/2 छोटी चम्मच नमक डालें और मिलाएं। सामग्री को तब तक भूनें जब तक आम के स्लाइस या टुकड़े सतह पर लाल होते न दिखाई देने लगें।
  8. फिर कढ़ाई में भुना हुआ गेहूं का आटा डालेंऔर मिलाएं।
  9. अब कढ़ाई में छाना हुआ गुड़ का सिरप डालें। सिरप को उबाल आने दें और फिर लौ को मध्यम स्तर पर कम करें। सामग्री को फोड़ा और 5 मिनट के लिए गुड़ के सिरप में पकाएं और फिर लौ को बंद कर दें। स्वादिष्ट गुड़म्मा तैयार है।
