An extremely healthy twist to the cream-cheese sandwich available in market is this Mishti Doi Sandwich or Sweet Curd Sandwich or Hung Curd Sandwich or Yogurt Sandwich or Dahi Sandwich. Being sweet-n-spicy in taste this sandwich is loved by people of all ages. And the sweet creamy filling covered by crispy and buttery toasted bread is sure to woo your heart as well. Preparation Time: 5 minutes for preparing all the ingredients + 2 hours to drain off extra water from the curd if you are using homemade curd

Cooking Time: 10-12 minutes for preparing all sandwiches to be cooked + 3-4 minutes for cooking one sandwich

Recipe Yield: 4 sandwiches (8 pieces when each is cut into 2 triangular halves)

Ingredients for making Mishti Doi Sandwich or Sweet Curd Sandwich:

  • Mishti Doi or Normal curd or Dahi - 7-8 table spoon or as per requirement
  • Bread Slices - 8, preferrably big size
  • Mint Leaves or pudhina ki patti - as per taste or requirement, broken into small pieces or finely chopped
  • Onion - 1, finely chopped; Add chopped onion as per your taste in each sandwich
  • Chaat Masala Powder - 1 tea spoon, sprinkle as per requirement
  • Red Chilli Powder or Lal Mirch Powder - 1 tea spoon, sprinkle as per requirement
  • Salt as per taste
  • Butter or Makkhan - as per requirement

Procedure for making Mishti Doi Sandwich or Sweet Curd Sandwich:

  1. Spread a clean cotton or muslin cloth over a big bowl and transfer the curd to it. (You can use any mishti doi/sweetened curd available in market or any plain curd.)
  2. Then bring the corners and sides of the cloth together to form a potli (or pouch). Squeeze and tighten the cloth potli (or pouch) with hands to strain any excess water from the curd. Leave the curd inside the cloth potli/pouch for 2 hours in this way.
  3. Now take out the curd from the cloth pouch/potli and add powdered sugar to it. Mix it well. Your homemade mishti doi/seetened curd is ready.
  4. Take one bread slice and a spoonful of mishti doi/sweetened curd. Spread the sweetened curd/mishti doi on the bread slices.
  5. Sprinkle some chaat masala powder over this layer of mishti doi/sweetened curd.
  6. The sprinkle some red chilli powder and then spread a layer of finely chopped onion.
  7. Sprinkle some mint leaves and then cover it with another bread slice. Prepare remaining sandwiches in the same way and keep them ready to be toasted.
  8. Heat a tawa/non-stick pan and place some butter over it. (Use butter as per requirement.)
  9. As soon as the butter melts, then place one sandwich over it and allow it toast on one side .
  10. Apply some butter on the top side and carefully flip the sandwich to toast in the same manner on this side. Toast the sandwich till both sides of the sandwich turns crispy golden-red in color. Prepare the remaining Mishti Doi Sandwiches in the same way.
  11. The tasty, creamy, sweet-n-spicy and fresh Mishti Doi Sandwiches or Sweet-Curd Sandwiches or hung-curd sandwiches are ready to served. Serve them as a whole big sandwich or cut it into 2 triangular halves.

मिश्टी दोई सैंडविच या स्वीट-कर्ड सैंडविच बनाने की प्रक्रिया:

  1. एक बड़े कटोरे पर एक साफ सूती या मलमल का कपड़ा फैलाएं और उसमें सादे दही को डालें। (आप बाजार में उपलब्ध कोई भी मिश्टी दोई या मीठे दही का उपयोग कर सकते हैं।)
  2. फिर कपड़े के किनारों को एक साथ लाकर पकड़ें और कपड़े की पोटली बना लें। अपने हाथों से इस सादे दही की पोटली को दबाएं जिससे कि दही से अतिरिक्त पानी निकल जाए। फिर इस सादे दही की पोटली को 2 घंटे के लिए अलग रख दें।
  3. 2 घंटे के बाद इस सादे दही की पोटली से दही को एक थाली या कटोरे में निकाल लें और इसमें स्वादनुसार पाउडर चीनी डालें। इसे अच्छी तरह मिलाएं। आपका ताजा और होम-मेड मिश्टी दोई तैयार है।
  4. फिर एक ब्रेड-स्लाइस लें और इसके ऊपर एक चम्मच से मिश्टी दोई या मीठा दही डालें और एक परत के रूप में फैलाएं।
  5. अब इस मिश्टी दोई या मीठे दही की परत के ऊपर थोड़ा चाट मसाला पाउडर छिड़के।
  6. फिर थोड़ा लाल मिर्च पाउडर छिड़कें और फिर बारीक कटा हुआ प्याज डालें।
  7. थोड़े पुदीने के पत्ते छिड़कें और फिर इसके ऊपर दूसरा ब्रेड-स्लाइस रखें। इसी तरह शेष सैंडविच तैयार करें और उन्हें सेंकने के लिए एक थाली में तैयार करके रखें।
  8. एक तावा / नॉन-स्टिक पैन गरम करें और उस पर थोड़ा मक्खन डालकर तावा को चिकना करें। (मक्खन का प्रयोग आवश्यकता के अनुसार ही करें।)
  9. जैसे ही मक्खन पिघला जाए, तो उसके ऊपर एक सैंडविच रखें और इसे एक तरफ पर क्रिस्पी-लाल होने तक सेंकें।
  10. फिर इस सैंडविच के ऊपर तरफ थोड़ा मक्खन लगाएं और इस तरफ भी क्रिस्पी-लाल होने तक सेंकने केलिए सैंडविच को सावधानी से पलट दें। सैंडविच को दोनों तरफ पर क्रिस्पी-लाल होने तक सेंकें। उसी तरह शेष मिश्टी दोई सैंडविच/मीठे दही के सैंडविच तैयार करें।
  11. आपके स्वादिष्ट और मलाईदार मिश्टी दोई सैंडविच या स्वीट-कर्ड सैंडविच परोसने के लिए तैयार हैं। आप चाहें तो उन्हें एक  बड़े सैंडविच के रूप में परोसें या इसे 2 त्रिकोणीय हिस्सों में काट लें और फिर परोसें।
