Quinoa Kheer Recipe - Learn How To Make Quinoa Ki Kheer or Quinoa Pudding

Having a sweet craving and yet want to have something really healthy. Then Quinoa Kheer or Quinoa Pudding is one appetizing, delicious and extremely healthy dish that will pamper your sweet tooth and leave you guilt-free.

It is really easy to make and has a heavenly taste. Given below is an easy and detailed recipe of making this tempting sweet dish for your small sweet cravings:

Ingredients for making Quinoa Kheer:

  • Quinoa - 1 small cup
  • Milk or doodh - 4 small cup
  • Sugar or cheeeni - as per taste and requirement
  • Green Cardamom - 2 or as per taste and requirement; crushed
  • Dry Fruits: as per taste and requirement
    • Raisins or kismis
    • Cashews or kaju - finely chopped into small pieces
    • Almonds or badaam - finely chopped into small pieces
  • Saffron strands or kesar - 1 pinch
  • Refined Oil - 1 table spoon

Procedure for making Quinoa Kheer:

  1. Take one small cup quinoa in a deep vessel and rinse it well with clean water. Then strain off the excess water from the quinoa with the help of a sieve.
  2. Then heat a kadhai and add 1 table spoon refined oil to it.
  3. When the refined oil is hot enough for cooking then add the washed quinoa to it and stir to roast it in the hot oil.
  4. Now add more the half the milk taken for making quinoa kheer, to the kadhai and allow the contents to boil and cook. Lower the flame to low level when the milk comes to a boil.
  5. Allow the contents to cook on low flame for 20 minutes. The quinoa will becomes soft during this time.
  6. Then add the remaining milk to the kadhai. Stir and cook the ingredients till you achieve a thick and creamy consistency.
  7. When the cooking ingredients become thick and creamy in consistency, then add sugar as per taste and crushed cardamom to it and mix well.
  8. Add dry fruits as per requirement and then turn off the flame.
  9. Transfer it to a serving bowl and garnish with remaining dry fruits and saffron strands. Serve hot or chilled as per requirement.

किनोआ खीर  बनाने की प्रक्रिया:

  1. एक गहरे पतीले में एक छोटा कप किनोआ डालें और इसे साफ पानी से धो लें। फिर एक चलनी की मदद से किनोआ को छान लें।
  2. फिर एक कढ़ाई गर्म करें और इसमें 1 बड़ा चम्मच रिफाइंड तेल डालें।
  3. जब रिफाइंड तेल पर्याप्त गरम होजाए तो उसमें धुला हुआ किनोआ डालें और लगातार चलाते हुए भूनें।
  4. अब कढ़ाई में किनोआ खीर बनाने के लिए लिया गए दूध को आधी से ज्यादा मात्रा में डालें और सामग्री को उबलते हुए  पकने दें। दूध में उबाल आने पर आंच को कम कर दें।
  5. सामग्री को 20 मिनट के लिए कम आंच पर पकाने दें। इतनी देर में किनोआ नरम हो जाएगा।
  6. फिर कढ़ाई में शेष दूध भी डाल दें और सामग्री को गाढ़ा होने तक चलाते हुए पकाएं।
  7. जब सामग्री पक कर गाढ़ी होजाए, तो इसमें स्वाद के अनुसार चीनी और छोटी इलायची डालें और अच्छी तरह से मिलाएं।
  8. आवश्यकता के अनुसार ड्राई फ्रूट्स डालें और फिर गैस बंद कर दें।
  9. किनोआ खीर  को एक सुन्दर से सर्विंग डिश में निकालें और ड्राई फ्रूट्स और केसर के साथ गार्निश करें। आवश्यकता के अनुसार किनोआ खीर  को गरम या ठंडा परोसें।
