Sooji Ka Halwa Recipe - Learn How To Make Sooji Ka Halwa

Sooji Ka Halwa or Rawa Kesari or Sheera is an easy to make and extremely delicious dish to satisfy your sweet tooth that can be prepared with least effort. Sooji Ka Halwa is famous throughout the nation and prepared in almost every household on special occasions. It is tasty and can be prepared in just 15 minutes.

Preparation Time: 5 minutes

Cooking Time: 7 minutes to roast the semolina (or sooji / suji or rawa) + 4-5 minutes to prepare the sugar solution for making Sooji Ka Halwa (Suji Ka Halwa, Rawa Kesari, Sheera, Rava Kesari) + 4-5 minutes to finally prepare Sooji Ka Halwa (Suji Ka Halwa, Rawa Kesari, Sheera, Rava Kesari)

Ingredients for Sooji Ka Halwa:

  • Semolina or Sooji (Suji or Rawa or Rava) - 1 small cup
  • Sugar or cheeni or चीनी - 1 small cup
  • Dry Fruits - as per requirement for garnishing
    • Almonds or बादाम
    • Raisins or किशमिश
  • Water or पानी - 1.5 small cup (1.5 times of sooji)
  • Clarified Butter or Desi Ghee or देसी घी - 2 table spoon
  • Saffron Stands or Kesar or केसर - 8-10 strands

Procedure for making Sooji Ka Halwa:

  1. Take fresh semolina and sieve it nicely to remove all sorts of dirt from it.
  2. Take a thick based kadhai and heat 2 table spoon desi ghee in it.
  3. When the ghee is hot enough for cooking, then lower the flame to medium-low level and add semolina to it. Stir and roast the semolina till it changes to pinkish brown in color and you can feel the aroma of roasted semolina. Roast the semolina over low flame only
  4. Remove the roasted semolina to a plate.
  5. Now take a kadhai and add 1 small cup sugar and 1.5 small cup water to it. The amount of water should be 1.5 times the amount of semolina taken for making Sooji Ka Halwa.
  6. Allow the ingredients in the kadhai to boil, so that the sugar is completely dissolved in the water to form a uniform sugar solution.
  7. Then add the saffron strands to the sugar solution and boil the solution for a few seconds more, so that the saffron strands release their color and flavor into the sugar solution.
  8. Now add the roasted semolina to the boiling sugar solution. Stir and mix the ingredients well.
  9. After some time the semolina will swell and soak up all the sugar solution, to gain a texture like that of halwa or paste. Then add crushed cardamom powder to it. Stir the halwa (sooji ka halwa) prepared from the base of the kadhai.
  10. Now transfer the prepared Sooji Ka Halwa to a plate and spread to form a uniform layer.
  11. Garnish the Sooji Ka Halwa with chopped almonds and raisins and then allow the Sooji Ka Halwa to cool.
  12. Now cut out pieces of Sooji Ka Halwa of desired shapes and serve.

सूजी का हलवा बनाने की प्रक्रिया:

  1. ताजा सूजी लीजिए और इसे अच्छी तरह से छान लें।
  2. एक मोटी आधार की कढ़ाई लें और इसमें 2 बड़ा चम्मच देसी घी डालें।
  3. जब घी पर्याप्त गरम होजाए तो आंच को मध्यम कर दें और सूजी को इसमें डालें। सूजी को हल्का भूरा होने तक भूनें। सूजी को मध्यम आंच पर ही भूनें।
  4. भुनी हुई सूजी को एक प्लेट में निकाल लें।
  5. अब एक कढ़ाई लें और इसमें 1 छोटा सा कप चीनी और 1.5 छोटा कप पानी डालें। सूजी का हलवा बनाने के लिए पानी की मात्रा, सूजी की मात्रा की 1.5 गुना होनी चाहिए।
  6. कढ़ाई की सामग्री को उबलने दें, ताकि चीनी पानी में पूरी तरह से घुल जाये और चाशिनी तैयाअर होजाए।
  7. फिर चाशिनी में केसर डालें। इसे कुछ सेकंड और उबलने दें, ताकि केसर का रंग और स्वाद भी चाशिनी में घुल जाए।
  8. अब भुनी हुई सूजी को उबलती हुई चाशिनी में डालें। सामग्री को अच्छी तरह से चलाकर मिलाएं।
  9. कुछ समय बाद, सूजी फूल जाएगी और चाशिनी सोख लेगी। फिर तैयार सूजी के हल्वे में कुचली हुई इलायची का पाउडर डालें। तैयार सूजी के हल्वे को कढ़ाई की तली से कल्छी सटाकर अच्छे से मिलाएं।
  10. अब तैयार सूजी के हल्वे को एक प्लेट में निकालें और फैलाएं।
  11. तैयार सूजी के हल्वे पर कटा हुआ बादाम और किशमिश डालकर गार्निश करें और फिर सूजी के हल्वे को ठंडा होनें दें।
  12. अब सूजी का हलवा को मन चाहे टुकड़ों काट लें और परोसें।
