Gobhi Ke Pakode Recipe - Learn How To Make Gobhi Ke Pakore

Gobhi Ke Pakode are one of the most loved tea time snacks made specially during winters or monsoon evenings. They are easy to make and are just irresistible. Enjoy the taste of these crispy and yummy gobhi ke pakode with a cup of hot masala chai.

Given below is an easy and detailed recipe, step by step photos and recipe video to make Gobhi Ke Pakode:

Preparation Time: 5 minutes

Cooking Time:  22-25 minutes (10 minutes to make batter and keep it to rest + 5 minutes to partially cook the cauliflower florets in boiling water + 2-3 minutes to cool and dry the partially cooked cauliflower florets + 3-4 minutes to fry one batch of Gobhi Ke Pakode (I have fried 3-4 Gobhi Ke Pakode in one batch))

Recipe Yield: 2 servings (4-5 Gobhi Ke Pakode in one serving)

Ingredients for making Gobhi Ka Pakoda:

  • Cauliflower Florets or फूलगोभी के टुकड़े - 8-10
  • Gram Flour or बेसन - 2 table spoon
  • Salt as per taste or नमक
  • Turmeric Powder or हल्दी पाउडर- 1/2 tea spoon
  • Cumin Seeds Powder or जीरा पाउडर - 1/2 tea spoon
  • Black Pepper Powder or काली मिर्च पाउडर - 1/2 tea spoon
  • Red Chilli Powder or लाल मिर्च पाउडर - 1/2 tea spoon
  • Water or पानी - as per requirement to make the Gram Flour batter for coating the Cauliflower florets for making Gobhi Ka Pakoda, and for partially cooking the Cauliflower florets
  • Mustard Oil or सरसों का तेल - as per requirement, for frying the Gobhi Ka Pakoda

Procedure for making Gobhi Pakoda:

  1. Cut out the cauliflower florets from the bunch and wash them well with clean water.
  2. Take gram flour in a big mixing bowl and add all the powdered spices (turmeric powder, black pepper powder, cumin seeds powder, red chilli powder) and salt to it.
  3. Now slowly add water to the dry ingredients and mix well to form a thick batter to coat the Cauliflower florets for making Gobhi Ka Pakoda. Remember that no lumps should be formed in the batter. The batter should be of thick consistency and smooth.
  4. Leave the batter to rest for 10 minutes.
  5. During this time boil some water in a deep vessel and add the caulifower florets to it.
  6. Allow the caulifower florets to cook in boiling water for 5 minutes and then remove them to a plate to cool. This process will allow the caulifower florets to get partially cooked (approximately 60%). Also the cauliflower florets will absorb less oil as we fry them.
  7. Now  heat a thick based kadhai and add mustard oil to it.
  8. When the oil is hot enough for frying then take one cauliflower floret and dip it in the gram flour batter. Coat it nicely with the batter and then carefully put it in the hot oil for frying. Lower the flame to medium level. You can fry 3-4 cauliflower florets at one time.
  9. Fry the cauliflower florets slowly on medium flame so that they get nicely cooked and become crispy. Transfer the hot and crispy gobhi ke pakode to a plate and fry the remaining caulifower florets in the same way. Then serve the winter special, hot, crispy and tasty gobhi ke pakode with chutney, tomato sauce or any dip.

गोभी के पकोड़े बनाने की प्रक्रिया:

  1. फूलगोभी को काट लें और फिर उसे साफ पानी से अच्छी तरह से धो लें।
  2. एक बड़े कटोरे में बेसन डालें और फिर उसमें सारे पाउडर मसाले (हल्दी पाउडर, काली मिर्च पाउडर, जीरा पाउडर, लाल मिर्च पाउडर) और नमक को डालें।
  3. अब सूखी सामग्री में धीरे-धीरे पानी डालकर मिलाएं और गोभी के पकोड़े बनाने के लिए बेसन का गाढ़ा घोल तैयार करें। याद रखें कि बेसन के घोल में कोई गुठली नहीं होनी चाहिए। बेसन का घोल गाढ़ा और चिकना होना चाहिए।
  4. बेसन के घोल को तैयार करके 10 मिनट तक अलग रख दें।
  5. इस समय के दौरान एक गहरे बर्तन में थोड़ा पानी डालकर उबाल लें और फिर इसमें फूलगोभी के टुकड़ों डालें।
  6. फूलगोभी के टुकड़ों को 5 मिनट के लिए उबलते पानी में पकने दें और फिर उन्हें एक प्लेट में निकाल कर ठंडा करें। ऐसा करने से फूलगोभी के टुकड़े आंशिक रूप से पक जाएंगे (लगभग 60% तक पक जाएंगे) और तलते समय कम तेल सोखेंगे।
  7. अब एक मोटे तले की कढ़ाई गरम करें और इसमें सरसों का तेल डालें।
  8. जब तेल गोभी के पकोड़े तलने के लिए पर्याप्त गर्म होजाए तो एक फूलगोभी का एक टुकड़ा लें और बेसन के घोल मे डालकर अच्छे से डुबोएं। फूलगोभी के टुकड़े को बेसन के घोल से अच्छी तरह से कोट करें और फिर इसे तलने के लिए गरम तेल में सम्भाल कर डाल दें। आँच कद मध्यम स्तर तक कम कर दें। आप एक बार में 3-4 फूलगोभी के पकोड़े तल सकते हैं।
  9. फूलगोभी के पकोड़ों को धीरे-धीरे मध्यम आँच पर तलें ताकि वे अच्छे से पक जाएं और कुरकुरे हो जाएं। गरम और खस्ता गोभी के पकोड़ों को एक प्लेट में निकाल लें और शेष फूलगोभी के पकोड़ों को उसी तरह से तल लें। फिर गर्मा-गरम, खस्ता और स्वादिष्ट गोभी के पकोड़ों को चटनी, टमाटर सॉस या किसी अन्य डिप के साथ परोसें।
