Ingredients for making Pise Huye Chana Masala or Pise Huye Chane Ki Sabji:

  • Black Chicpeas or Kala Chana - 1 small cup, soaked in plain water for 6 hours
  • Onion or pyaz - 1 medium size, finely chopped
  • Turmeric Powder or haldi powder - 1 tea spoon
  • Red Chilli Powder or lal mirch powder - 1 tea spoon
  • Cumin Seeds Powder or jeera powder - 1/2 tea spoon
  • Black Pepper Powder or kali mirchi powder - 1/2 tea spoon
  • Coriander Powder or dhaniya powder - 1 tea spoon
  • Garam Masala Powder - 1/2 tea spoon
  • Salt or namak - 1 tea spoon
  • Asafoetida or hing - 1 pinch
  • Bay Leaf or tej patta - 1 small size
  • Mustard Oil or sarson ka tel - as per requirement

Procedure for making Pise Huye Chana Masala or Pise Huye Chane Ki Sabji:

  1. Soak black chickpeas or kala chana in plain water for 6 hours. Then strain off the excess water from the soaked black chickpeas or kala chana and wash them again with clean water.
  2. Then transfer these black chickpeas or kala chana to a mixer jar and grind them coarsely. Leave a few black chickpeas or kala chana as it is without grinding them to be added later while making the curry.
  3. Gather the ingredients required for making the Pise Huye Chana Masala or Pise Huye Chane Ki Sabji and then finely chop the onion.
  4. Now heat 2 table spoon mustard oil or sarson ka tel in a kadhai. Then and add asafoetida or hing and bay leaf or tej patta to the hot oil.
  5. Then add the finely chopped onion  to the kadhai and saute the onion till it turns golden brown in color.
  6. Now add the powdered spices (turmeric powder, red chilli powder, coriander powder, cumin seeds powder and black pepper powder) and salt to the kadhai. Mix and saute the ingredients together for 1 minute over low flame.
  7. When the oil begins to seperate from the cooking ingredients then add the coarsely ground black chickpeas or kala chana and the few whole black chickpeas or kala chana to the kadhai. Stir to mix the ingredients together and saute them together for 2 minutes.
  8. Now add garam masala powder to the cooking ingredients and mix well.
  9. Now add water as per requirement to the kadhai to prepare the gravy. Add 1/2 cup water more than required to the kadhai, because the black chickpeas or kala chana will soak up the water while getting cooked in it.
  10. Cover the kadhai with a lid, lower the flame and allow the curry to cook for 15-20 minutes.
  11. Remove the lid after 15-20 minutes and check 1-2 chickpeas with your hands if they are cooked or not. If they get mashed easily then turn off the flame otherwise again cover the kadhai and cook the curry for a few minutes more.
  12. Then turn of the flame and garnish the Pise Huye Chana Masala or Pise Huye Chane Ki Sabji with finely chopped fresh coriander leaves and serve hot.

पिसे हुए चना मसाला या पिसे हुए चने की सब्जी बनाने की प्रक्रिया:

  1. 1 छोटे कप काले चने को 6 घंटे के लिए सादे और साफ पानी में भिगो दें। फिर भीगे हुए काले चने से पानी निकाल दें और उन्हें फिर से साफ पानी से धो लें।
  2. फिर इन काले चने को मिक्सर जार में डालें और उन्हें दरदरा पीस लें। कुछ साबुत काले चने बाद में करी बनाने के लिए बिना पिसे छोड़ दें।
  3. पिसे हुए चना मसाला या पिसे हुए चने की सब्जी बनाने के लिए जरूरी सामग्री इकट्ठा करें और फिर प्याज को बारीक काट लें।
  4. अब कढ़ाई में 2 बड़ा चम्मच सरसों का तेल डालकर गरम करें। फिर और गरम तेल में हींग और तेज़ पत्ता डालें।
  5. फिर कढ़ाई में बारीक कटा हुआ प्याज डालकर रंग में सुनहरा भूरा होने तक भूनें।
  6. अब कढ़ाई में सारे पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, धनिया पाउडर, जीरा पाउडर और काली मिर्च पाउडर) और नमक डालें। कम आँच पर 1 मिनट के लिए सामग्री को चलाते हुए पकाएं।
  7. जब तेल मसालों से अलग होने लगे, तो कढ़ाई में दरदरे रूप से पिसे हुए काले चने या साबुत काले चने डालें। सामग्री को मिलाएं और उन्हें 2 मिनट तक सामग्री को चलाते हुए पकाएं।
  8. अब सामग्री में गरम मसाला पाउडर डालें और अच्छी तरह मिलाएं।
  9. अब कढ़ाई में आवश्यकता के अनुसार ग्रेवी के लिए पानी डालें। आवश्यकता से 1/2 कप पानी ज्यादा डालें, क्योंकि काला चना पकते समय पानी सोखलेंगे।
  10. कढ़ाई को ढक्कन के साथ ढक दें, आँच को कम कर दें और ग्रेवी को 15-20 मिनट के लिए पकने दें।
  11. ढक्कन को 15-20 मिनट के बाद हटाएं और 1-2 चनों को हाथ से मसल कर देखें कि वे पके हैं या नहीं। अगर चने आसानी से मसल जाएं तो गैस बंद कर दें, नहीं तो कढ़ाई को फिर से ढक दें  और कुछ मिनट और के लिए पकने दें।
  12. फिर गैस की बंद कर दें और गरमा-गरम पिसे हुए चना मसाला या पिसे हुए चने की सब्जी को बारीक कटे हुए ताजे धनिया के पत्तों के साथ गार्निश करके परोसें।
