Ingredients for making Raw Banana Cutlets or Raw Banana Pakora or Kacche Kele Ke Pakore or Kacche Kele Ke Cutlet:

  • Raw Bananas or kacche kele - 6
  • Salt as per taste
  • Gram Flour or besan - 2 table spoon
  • Turmeric Powder or haldi powder - 1/2 tea spoon
  • Cumin Seeds Powder or jeera powder - 1 tea spoon
  • Black Pepper Powder or kali mirch powder - 1/2 tea spoon
  • Red Chilli Powder or lal mirch powder - 1 tea spoon
  • Garam Masala Powder - 1/2 tea spoon
  • Cashews or kaju - 2 table spoon, finely chopped
  • Raisins or kismis - 2 table spoon
  • Green Chilli or hari mirch - 4, finely chopped
  • Coriander Leaves or hara dhaniya patti - as per requirement, finely chopped
  • Refined Oil or Mustard Oil - as per requirement for frying the Raw Banana Cutlets or Raw Banana Pakora or Kacche Kele Ke Pakore

Procedure for making Raw Banana Cutlets or Raw Banana Pakora or Kacche Kele Ke Pakore or Kacche Kele Ke Cutlet:

  1. Wash the raw bananas well with clean water and then transfer them to a vessel filled with water.
  2. Cover this vessel with its lid and place it on the gas stove over medium flame to cook the raw bananas in the water.
  3. After sometime remove the lid from the vessel and poke a knife into the raw bananas to see if they are cooked and have become soft or not. If they still appear raw then cook in the same manner for some more time. Then turn off the flame.
  4. Take out the soft and cooked bananas from the hot water to a big plate and allow them to cool.
  5. Then remove their peel and mash all of them to form a fine paste like texture.
  6. Now add gram flour, powder spices (turmeric powder, red chilli powder, cumin seeds powder, black pepper powder and garam masala powder) and salt to the mashed bananas. Mix all the ingredients well.
  7. Then add chopped coriander leaves, green chilli, cashews and raisins to the banana mixture. Mix well again.
  8. Heat a kadhai and add refined oil to it to fry the cutlets. When the oil is hot enough for cooking then lower the flame to low level.
  9. Now prepare small round tikki like cutlets of the banana mixture. You can give your desired shape to these cutlets.
  10. Then put these cutlets into the hot oil for deep frying. Set 3-4 cutlet to fry at one time.
  11. Allow these cutlets to fry over low flameuntil they turn light pink in color. Flip carefully to fry uniformly on both the sides. Then transfer the fried cutlets to a plate. Fry the remaining cutlets in the same way and serve hot cutlets with chutney or sauce.

कच्चे केले के कटलेट बनाने की प्रक्रिया:

  1. कच्चे केलों को साफ पानी से धो लें और फिर उन्हें पानी से भरे हुए एक बड़े पतीले या कढ़ाई में डालें।
  2. इस पतीले या कढ़ाई को ढक दें और फिर कच्चे केलों को पानी पकाने के लिए पतीले या कढ़ाई को मध्यम आँच पर रख दें।
  3. कुछ समय बाद पतीले या कढ़ाई से ढक्कन को हटा दें और केलों में चाकू डालकर देखें कि केले पक कर और नरम हो गए हैं या नहीं। यदि केले अभी भी कच्चे लगें हैं तो कुछ और समय के लिए केलों को उसी तरीके से पकने दें। फिर गैस बंद कर दें
  4. और पतीले या कढ़ाई से नरम और पके हुए केलों को निकाल कर एक बड़ी प्लेट में रखें और उन्हें ठंडा होने दें।
  5. फिर केलों का छिलका हटा दें और अपने हाथों से उन सभी को मैश करके एक चिकने पेस्ट जैसा बना लें।
  6. अब मैश किये हुए केलों में बेसन, पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, जीरा पाउडर, काली मिर्च पाउडर और गरम मसाला पाउडर) और नमक डालें। सारी सामग्री को अच्छी तरह से मिलाएं।
  7. फिर इसमें कटी हुई धनिया पत्ती, हरी मिर्च, काजू और किशमिश डालें। फिर से अच्छी तरह से मिलाएं।
  8. एक कढ़ाई गरम करें और कटलेट तलने के लिए इसमें आवश्यक्तानुसार रिफाइंड तेल डालें। जब तेल तलने के लिए पर्याप्त गरम होजाए तो आँच को कम कर दें।
  9. अब केले के मिश्रण के गोल टिक्की के जैसे छोटे कटलेट तैयार करें। आप इन कटलेट को मन चाहे आकार दे सकते हैं।
  10. फिर इन कटलेट को गर्म तेल में तलने के लिए सावधानी से डालें। आप एक बार में 3-4 कटलेट को तल सकते हैं।
  11. इन कच्चे केले के कटलेट को कम आँच पर समान रूप से गुलाबी रंग का होने तक तलें। सभी तरफ पर समान रूप से तलने  के लिए कच्चे केले के कटलेट को ध्यान से सावधानी के साथ उलट-पलट कर तलें और फिर तले हुए कटलेट को एक प्लेट में निकाल लें। इसी तरह शेष कच्चे केले के कटलेट को भी तल लें और फिर इन्हें चटनी या सॉस के साथ गरमा-गरम परोसें।
