Ingredients for making Dry Fruits Pudding or Mewa Pudding or Mewe Ki Kheer or Dry Fruits Ki Kheer or Kaju Badaam Ki Kheer:

  • Almonds or Badaam - 2 table spoon; (बादाम)
  • Cashews or Kaju - 2 table spoon; (काजू)
  • Raisins or Kismis - 2 table spoon; (किसमिस)
  • Walnuts or Akhrot - as per taste or requirement; (अखरोट)
  • Crushed Cardamom or Elaichi - 2; (कुचली हुई इलायची का पाउडर) 
  • Sugar - as per taste; (चीनी)
  • Full Cream Milk - 1/2 litre or 500 ml; (फुल क्रीम दूध)

Procedure for making Dry Fruits Pudding or Mewa Pudding or Mewe Ki Kheer or Dry Fruits Ki Kheer or Kaju Badaam Ki Kheer:

  1. Take the almonds or badaam, cashews or kaju and walnuts or akhrot in a mixer jar, and grind them coarsely.
  2. Pour 1/2 litre full cream milk into a deep vessel and set it to boil.
  3. When the milk begins to boil, then lower the flame to lowest level. Allow the milk to boil over low flame for 5 minutes.
  4. After 5 minutes add the coarsely ground almonds or badaam, cashews or kaju and walnuts or akhrot and raisins or kismis to the boiling milk.
  5. Stir continuously and cook the ingredients together for 5 minutes.
  6. Now add crushed cardamom powder and sugar to the cooking ingredients. Stir continuously to mix the ingredients, until the sugar is dissolved completely.
  7. When the sugar is dissolved completely, then turn off the flame. Allow the pudding or kheer prepared to cool a little and then transfer it to a serving bowl. PIf you wish you can place this bowl in the fridge for some time. Cooling the pudding or kheer for some time will allow it to become thick and more creamy.
  8. After cooling the Dry Fruits Pudding or Mewa Pudding or Mewe Ki Kheer or Dry Fruits Ki Kheer for desired time, serve the pudding or kheer into dessert bowls and serve.

ड्राई फ़्रूट्स पुडिंग या मेवा पुडिंग या मेवे की खीर या काजू बादाम की खीर बनाने की प्रक्रिया:

  1. एक मिक्सर जार में बादाम, काजू और अखरोट को डालें, और उन्हें मोटे तौर पर या दरदरा पीस लें।
  2. अब एक पतीले में 1/2 लीटर फुल क्रीम दूध डालें और इसे उबलने केलिए तेज आँच पर चढ़ा दें।
  3. जब दूध उबलना शुरू होजाए, तो आँच को एकदम कम कर दें। दूध को 5 मिनट के लिए कम आँच पर उबलने दें।
  4. 5 मिनट के बाद मोटे तौर पर पिसे हुए या दरदरा पीसे हुए बादाम, काजू और अखरोट, किसमिस को डालें।
  5. सारी सामग्री को लगातार चलाते हुए मिलाएं और 5 मिनट तक सामग्री को लगातार चलाते हुए पकाएं।
  6. अब इस मिश्रण में कुचली हुई इलायची का पाउडर और चीनी डालें। चीनी के पूरी तरह से घुलने तक मिश्रण को लगातार चलाते हुए पकाएं।
  7. जब चीनी मिश्रण में पूरी तरह से घुल जाए तो गैस बंद कर दें। तैयार पुडिंग या खीर को थोड़ा ठंडा होने दें और फिर उसे एक सर्विंग डिश या एक सुन्दर से कटोरे में परोसें। फिर इस सर्विंग डिश या कटोरे को फ्रिज में कुछ समय के लिए ठंडा होने केलिए रख दें। कुछ देर ठंडा होने के बाद यह पुडिंग या खीर गाढ़ी और अधिक क्रीमी होजाएगी।
  8. ड्राई फ़्रूट्स पुडिंग या मेवा पुडिंग या मेवे की खीर को आवश्यकतानुसार ठंडा करने के बाद कटोरियों में परोसें और इस स्वादिश्ट पुडिंग या खीर का मज़ा उठाएं।
