Lauki Pancake Recipe - Learn How To Make Lauki Pancake

Health benefits of bottle-gourd or lauki or doodhi or dudhi are known to everyone but it is not liked by everyone. Here we present to you an easy, yet tempting and delicious way of adding a healthy star to your diet. These lauki pancakes can be relished with evening tea, or as brunch and can be carried in lunch box as well.

Enjoy these tasty lauki pancakes with the help of a detailed recipe, step by step photos and video given below:

Preparation Time: 10 minutes

Cooking Time: 8 minutes for cooking one batck of lauki pancakes (2-3 lauki pancakes can be prepared in 1 batch)

Recipe Yield: 5 servings (1 pancake in each serving)

Ingredients for making Lauki Pancake:

  • Bottle-gourd or Lauki - 250 gm
  • Ginger - 1 inch piece, finely grated
  • Green Chilli - 4-5 or as per taste, finely chopped
  • Coriander Leaves - 1 table spoon, finely chopped
  • Salt as per taste
  • Turmeric Powder - 1/2 tea spoon
  • Cumin Seeds Powder - 1/2 tea spoon
  • Black Pepper Powder - 1/2 tea spoon
  • Carom Seeds - 1/2 tea spoon
  • Gram Flour or Besan - 2 table spoon
  • Semolina or Sooji - 1 table spoon
  • Refined Oil - as per requirement

Procedure for making Lauki Pancake:

  1. Peel off the bottle-gourd or lauki and cut it into thick pieces along the length. Remove the seeds and fibre from the center and then finely grate the bottle-gourd or lauki.
  2. Transfer the grated bottle-gourd or lauki to a deep vessel. Add gram flour or besan and semolina or sooji to it.
  3. Then add finely chopped coriander leaves, green chilli and ginger to it. Mix all the ingredients well with your hands.
  4. Now add salt, turmeric powder, cumin seeds powder, black pepper powder and carom seeds to the mixture and mix well.
  5. The grated bottle-gourd or lauki will release liquid on adding salt. This liquid is enough for binding the ingredients together to form the batter for Lauki Pancake. Therefore do not add water to this batter for Lauki Pancake and leave it to rest for 5 minutes.
  6. Now heat a non-stick pan and grease it with 1/2 tea spoon refined oil.
  7. Take a handful of batter and place it on the non-stick pan. Spread it evenly in a round shape with your hand to form a medium thick pancake. Reduce the flame to medium level. Allow the pancake to cook for 3-4 minutes.
  8. When the base of the pancake turn crispy red then flip it carefully with a flat ladle and add 1/2 tea spoon refined oil around the cooking carrot pancake.
  9. Allow the pancake to cook until crispy red on the other side as well over medium flame only for 3-4 minutes. If you have a big sized non-stick pan then you can make 2-3 lauki pancakes at one time.
  10.  Now transfer the prepared pancakes to a serving dish, garnish it with grated cheese carrots or salad of your choice. Then serve hot with a cheese dip, sauce or mayonnaise.

लौकी पैनकेक बनाने की प्रक्रिया:

  1. लौकी को छीलकर लंबाई में मोटे टुकड़ों में काट लें। फिर इन लौकी के टुकड़ों के बीच से बीज और फाइबर निकाल दें और फिर इसे बारीकी से कद्दु-कस कर लें।
  2. कद्दु-कस की हुई लौकी को एक गहरी पतीले में डालें। इसमें बेसन और सूजी डालें।
  3. फिर बारीक कटा हुआ हरा धनिया, हरी मिर्च और अदरक को इसमें डालें। अपने हाथों से सभी सामग्री अच्छी तरह से मिलाएं।
  4. अब इस मिश्रण में नमक, हल्दी पाउडर, जीरा पाउडर, काली मिर्च पाउडर और अज्वैन डालें और अच्छी तरह से मिलाएं।
  5. लौकी में नमक डालने पर लौकी से पानी छूटेगा। यह लौकी का पानी "लौकी पैनकेक" का बैटर बनाने के लिए पर्याप्त है। इसलिए इस लौकी पैनकेक के बैटर को बनाने के लिए सामग्री में पानी नहीं डालना है। बैटर तैयार करके उसे 5 मिनट के लिए अलग रख दें।
  6. अब एक नॉन-स्टिक पैन गरम करें और इस पर ½ छोटी चम्मच रिफाइंड तेल डालकर अच्छे से फैला दें।
  7. अब इस लौकी पैनकेक के मिश्रण को अपने हाथ में लें और इसे नॉन-स्टिक पैन पर डालें। इसे एक गोल आकार में समान रूप से फैलाएं। आँच को मध्यम स्तर तक कम करें और लौकी पैनकेक के मिश्रण को 3-4 मिनट के लिए पकने दें।
  8. जब लौकी पैनकेक नीचे की तरफ से क्रिस्पी लाल होजाए तो इसे एक चपटी कल्छी से सावधानी से पलट दें और पकते हुए लौकी पैनकेक के चारों तरफ 1/2 छोटी चम्मच रिफाइंड तेल घुमा कर डालें।
  9. लौकी पैनकेक को दूसरी तरफ भी क्रिस्पी लाल होने के लिए 3-4 मिनट तक पकने दें, आँच को मध्यम ही रखें। यदि आपके पास एक बड़े आकार का नॉन-स्टिक पैन है तो आप एक समय में 2-3 लौकी पेनकेक्स बना सकते हैं।
  10. अब तैयार लौकी पैनकेक्स को एक सुन्दर डिश में निकालें, और इन्हें चीज़ या कद्दु-कस की हुई गाजर या किसी अन्य सलाद के साथ गार्निश करें। फिर चीज़ डिप, टोमैटो सॉस या मेयोनेज़ के साथ गरमा-गरम परोसें।
