A healthy and tasty combination of protein rich Bengal Gram or chana dal and vitamin C rich bottle-gourd or lauki or doodhi or ghiya. Bengal Gram or chana dal has high amount of protein and is a healthy dish for people with diabetes. On other hand bottle-gourd or lauki or doodhi or ghiya has high amount of water content that helps in keeping the body ydrated and is a rich source of Vitamin C and K and Calcium. Bengal-Gram or chana dal can be made in various ways and is liked almost by everyone, but not everyone likes the taste of bottle-gourd or lauki or doodhi. So here we present to your an easy and extremely tasty dish made by combining the 2 healthy ingredients known as "Lauki Wali Chana Dal". Have it with phulkas, or chapati or steamed rice it just tastes awesome.

Prepare this healthy and nutritious dish with the help of a detailed recipe, step by step photos and video given below:

Preparation Time: 4 hours for soaking the Bengal Gram or Chana Dal + 10 minutes for preparing all the ingredients

Cooking Time: 20 minutes

Recipe Yield: 4 servings

Ingredients for making Lauki Wali Chana Dal / :

  • Bottle-Gourd or lauki or doodhi - 250 gm; (लौकी)
  • Soaked Bengal Gram or chana dal - 1 small cup; (चना दाल)
  • Onion - 1 medium size, finely chopped; (प्याज)
  • Green Chilli - 2, finely chopped; (हरी मिर्च)
  • Ginger - 1 inch, finely chopped; (अदरक)
  • Garlic - 8 petals, finely chopped; (लहसुन की कलि)
  • Turmeric Powder - 1 tea spoon; (हल्दी पाउडर)
  • Red Chilli Powder - 1 tea spoon; (लाल मिर्च पाउडर)
  • Cumin Seeds Powder - 1/2 tea spoon; (जीरा पाउडर)
  • Black Pepper Powder - 1/2 tea spoon; (काली मिर्च पाउडर)
  • Garam Masala Powder - 1/2 tea spoon; (गरम मसाला पाउडर)
  • Bay Leaf - 1 small size; (तेज़ पत्ता)
  • Cumin Seeds - 1/2 tea spoon; (जीरा)
  • Asafoetida - 1 pinch; (हींग)
  • Salt as per taste; (नमक)
  • Mustard Oil - 1 table spoon; (सरसों का तेल)

Procedure for making Lauki Wali Chana Dal:

  1. Peel off the bottle-gourd or lauki and then cut it at its center along the length. Then remove the seeds and fibre from its center. Now cut 1.5 inch big pieces of the bottle-gourd or lauki and leave them immersed in water for 5 minutes. Then strain off the water and wash them nicely with clean water 1-2 times.
  2. Now gather all the other required ingredients for preparing the Lauki wali chana dal.
  3. Heat a kadhai and add 1 table spoon mustard oil in it.
  4. When the oil is heated nicely then add asafoetida or hing, cumin seeds or jeera and bay leaf or tej patta to it.
  5. Allow the cumin seeds or jeera to crackle and then quickly add finely chopped onion or pyaz, garlic petals or lehsun ki kali, ginger or adrak and green chilli or hari mirch to it.
  6. Saute the ingredients till the onion pieces turn light red in color.
  7. Then add the soaked Bengal Gram or chana dal to it and mix it with the other ingredients. Stir and cook for 1 minute.
  8. Now add all the powdered spices (turmeric powder, red chilli powder, cumin seeds powder, black pepper powder and garam masala powder) and salt to the kadhai.
  9. Mix and cook the ingredients together for 1-2 minutes.
  10. Then add the bottle-gourd or lauki pieces to the kadhai and mix all the ingredients together.
  11. Add 1 small cup water to the kadhai and stir to mix the ingredients again.
  12. Transfer all the ingredients of the kadhai to the pressure cooker and cover the cooker with its lid.
  13. Pressure cook the ingredients for 1 whistle over high flame and then lower the flame.
  14. Turn off the flame after 5 minutes and allow the pressure cooker to cool on its own.
  15. When the pressure cooker open on its own then transfer the hot lauki wali chana dal to a serving dish. Garnish with finely chopped coriander leaves and serve hot with phulkas, chapatis, parathas or rice.

लौकी वाली चना दाल बनाने की प्रक्रिया:

  1. लौकी को छील कर और इसे बीच से लंबाई में काट लें। फिर इसके बीच से बीज और फाइबर निकाल लें। अब लौकी के 1.5 इंच के बड़े टुकड़े काट लें और उन्हें 5 मिनट के लिए पानी में डूबा कर छोड़ दें। फिर पानी से लौकी के टुकड़ों को निकाल लें और साफ पानी से 1-2 बार अच्छे से धो लें।
  2. अब लौकी वाली चना दाल की तैयारी के लिए सभी आवश्यक सामग्री इकट्ठा करें।
  3. फिर एक कढ़ाई गरम करें और इसमें 1 बड़ा चम्मच सरसों का तेल जोड़ें।
  4. जब तेल को अच्छी तरह से गरम हो जाए तो उसमें हींग, जीरा और तेज़ पत्ता जोड़ें।
  5. जीरा को चटकने की अनुमति दें और फिर बारीक कटा हुआ प्याज, लहसुन की कलि, अदरक और हरी मिर्च को कढ़ाई में डालें।
  6. प्याज के टुकड़ों को हल्का लाल रंग का होने तक भूनें।
  7. फिर कढ़ाई में चना दाल डालें और इसे बाकि सामग्री के साथ मिलाएं। अच्छे से सामग्री को चलाकर मिलाएं और 1 मिनट तक पकने दें।
  8. अब सारे पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, जीरा पाउडर, काली मिर्च पाउडर और गरम मसाला पाउडर) और नमक को कढ़ाई जोड़ें।
  9. मिश्रण और सामग्री को एक साथ 1-2 मिनट के लिए पकाएं।
  10. फिर कढ़ाई में लौकी के टुकड़े डालें और सभी सामग्री को एक साथ चलाकर मिलाएं।
  11. कढ़ाई में 1 छोटा कप पानी जोड़ें और फिर से सामग्री को मिश्रण करने के लिए चलाएं।
  12. अब कढ़ाई की सारी सामग्री को प्रेशर कुकर में स्थानांतरित करें और कुकर को ढक्कन के साथ ढक दें।
  13. फिर तेज आँच पर 1 सीटी आने तक सामग्री को पकाएं और फिर आँच कम कर दें।
  14. 5 मिनट के बाद गैस बंद करें और प्रेशर कुकर को अपने आप ठंडा होने दें।
  15. जब प्रेशर कुकर अपने आप में खुलता है तो गर्म लौकी वाली चना दाल को एक सुन्दर से बरतन में निकालें। इसे बारीक कटा हुआ धनिया पत्ती के साथ गार्निश करें और फुलका, चपाती, पराठा या चावल के साथ गरमा-गरम परोसें।
