Figs Curry or Gular Ki Sabji or Anjeer Ki Sabji Recipe

Figs also known as gular or anjeer are a native to wertern Asia. They are known for their natural sweetness and abundant nutritional value. Figs or Gular or Anjeer have high amount of soluble dietary fibres, natural sugars, minerals including potassium, calcium, magnesium, iron and copper and are a good source of antioxidant vitamins A, E and K that contribute to health and wellness. Being highly nutritious figs are really helpful in curing intestinal and digestive disorders, lowering blood pressure and strengthening bones. Dried figs are available throughout the year but this is the season of fresh figs. Fresh Figs are available in market from August through to early October . 

So here we bring to you a healthy recipe of one of the most healthiest food. Try out this recipe yourself with the help of detailed recipe and step by step photos given below:

Recipe Yield: 4 servings

Ingredients for making Figs Curry or Gular Ki Sabji or Anjeer Ki Sabji /:

  • Figs - 250 gm;
  • Onion - 1 big size; finely chopped;
  • Garlic Petals - 5-6, finely chopped;
  • Green Chilli - 3-4, finely chopped
  • Ginger - 1 inch piece, finely chopped;
  • Bay Leaf - 1, small size;
  • Cloves -3;
  • Salt as per taste;
  • Turmeric Powder - 1 tea spoon;
  • Red Chilli Powder - 1/2 tea spoon;
  • Coriander Powder - 1 tea spoon;
  • Cumin Seeds Powder - 1/2 tea spoon;
  • Black Pepper Powder - 1/2 tea spoon;
  • Mustard Oil - as per requirement;

Procedure for making Figs Curry or Gular Ki Sabji or Anjeer Ki Sabji:

  1. Slice off the top and bottom ends of the figs and then cut each of them into 2 halves. Now scrape the figs with a knife at their center nicely to remove all sort of dirt and fibre from its inside.
  2. Now transfer all the figs to a vessel containing luke warm water and rub and wash them nicely.
  3. Heat a kadhai and mustard oil to it. When the oil is hot enough to cook add the bay leaf and cloves to it. Saute the ingredients for a few seconds.
  4. Now add finely chopped onion, ginger and garlic petals to it and saute the ingredients till they turn golden red in color.
  5. Then add the chopped pieces of figs to it and mix all the ingredients together.
  6. Take all the powdered spices (turmeric powder, red chilli powder, coriander powder, cumin seeds powder and black pepper powder) and salt in a plate. Add 2-3 table spoon water to it and mix the ingredients together to form a smooth solution of spices.
  7. Now add the solution of spices to the ingredients cooking in the kadhai and increase the flame. Cook the figs in the spices nicely.
  8. When the spices get cooked then transfer all the ingredients of the kadhai to a pressure cooker and add 1 small cup water to it for gravy. Cover the pressure cooker with its lid and cook the ingredients over high flame for one whistle and then lower the flame to cook the like this for 2-3 minutes more. Then turn off the flame and the Figs Curry or Gular Ki Sabji or Anjeer Ki Sabji is ready to be served.

फ़िग्स करी या गुलर की सबजी या अंजीर की सबजी बनाने की प्रक्रिया:

  1. अंजीरों (या गूलर) के ऊपर और निचले छोर को काट कर हटा दें और फिर उन सबको 2 हिस्सों में काट लें। अब उनके अंदर की सारी गंदगी और फाइबर को चाकू से खुर्च कर निकाल लें।
  2. अब सभी अंजीरों (या गूलर) को हल्के गरम पानी से भरे हुए एक पतीले में डालें और अच्छी तरह से उन्हें रगड़-रगड़ कर धो लें।
  3. अब एक कढ़ाई लें और उसमें सरसों का तेल डालकर गरम करें। जब तेल खाना पकाने लायक गरम होजाए तो उसमें तेज पत्ता और लौंग को जोड़ें। कुछ सेकंड तक दोनों सामग्री को चलाकर भूनें।
  4. अब इसमें बारीक कटा हुआ प्याज, अदरक और लहसुन डालें और सुनहरा लाल रंग का होनें तक सामग्री को भूनें।
  5. फिर इसमें कटे हुए अंजीर (या गूलर) के टुकड़े जोड़ें और सभी सामग्री को एक साथ मिलाएं।
  6. सभी पाउडर मसालों (हल्दी पाउडर, लाल मिर्च पाउडर, धनिया पाउडर, जीरा पाउडर और काली मिर्च पाउडर) और नमक को एक प्लेट में डालें। इनमें 2-3 बड़ा चम्मच पानी जोड़ें और मसाले को घोल कर एक चिकना समाधान बनाएं।
  7. अब कढ़ाई में मसालों के घोल को डालें और आँच को बढ़ाएं। अंजीर (या गूलर) को मसालों के साथ मिलाकर अच्छी तरह से भूनें।
  8. जब मसाले अच्छे से भुन जाए तो कढ़ाई की सभी सामग्री को प्रेशर कुकर में डालें और ग्रेवी के लिए इसमें 1 छोटा कप पानी जोड़ें। प्रेशर कुकर को अपने ढक्कन के साथ कवर करें और तेज आँच पर एक सीटी आने तक सामग्री को पकाएं और फिर 2-3 मिनट के लिए इस तरह से पकाने के लिए आँच को कम करके पकाएं। फिर गैस को बंद कर दें और आपकी स्वादिश्ट और स्वास्थ से भरपूर फ़िग्स करी या गुलर की सबजी या अंजीर की सबजी परोसने के लिए तैयार हैं।
