Shahi Paneer Recipe - Learn How To MaKe Shahi Paneer

Shahi means royal, and hence as the name suggests shahi paneer is a dish of succulent paneer cubes cooked in a rich and creamy gravy made with some aromatic and flavorful spices. The ground cashews and almonds along with cream gives a smooth and palatable texture to the gravy of shahi paneer. This dish is mostly relished with hot phulkas, tandoori rotis and jeera rice. Garnished with fresh coriander or mint leaves and cream makes it a beautiful dish for the menu when you special guest for dinner at home.

Ingredients for making Shahi Paneer / सामग्री:

  • Paneer - 2oo gms; (पनीर)
  • Cashews - 6; (काजू)
  • Almonds - 4-5; (बादाम)
  • Whole Cumin Seeds - 1/2 tea spoon; (जीरा)
  • Cloves - 2; (लौंग)
  • Green Cardamom - 1; (इलायची)
  • Cinnamon sticks - 1-2; (दालचीनी)
  • Onion - 1 medium size, finely chopped; (प्याज)
  • Green Chilli - 2; (हरी मिर्च)
  • Ginger - 1 inch piece; (अदरक)
  • Tomato - 2 medium size, finely chopped; (टमाटर)
  • Salt as per taste; (नमक)
  • Shudh Desi Ghee - as per requirement; (देसी घी)
  • Turmeric Powder - 1/2 tea spoon; (हल्दी पाउडर)
  • Coriander Powder - 1 tea spoon; (धनिया पाउडर)
  • Red Chilli Powder - 1/2 tea spoon or as per requirement; (लाल मिर्च पाउडर)
  • Cumin Seeds Powder - 1/2 tea spoon; (जीरा पाउडर)
  • Black Pepper Powder - 1/2 tea spoon; (कालीमिर्च पाउडर)
  • Milk - 1 big cup; (दूध)
  • Fresh Cream - 1 small cup; (फ्रेश क्रीम या मलाई)

Procedure for making Shahi Paneer:

  1. Heat a kadhai and add desi ghee to it. Allow the ghee to melt and then add cumin seeds, cinnamon stick, cloves, cardamom, cashews and almonds to it. STir and allow the cumin seeds to crackle.
  2. Then add the finely chopped onion, ginger and green chillis to the kadhai. Stir to mix and cook the ingredients together.
  3. Now add chopped tomato and a little salt to the kadhai. Stir and cook the ingredients until the tomato pieces start becoming soft. Then turn off the flame.
  4. Transfer these sauteed ingredients to a mixer jar and grind them together to form a fine paste. If required ad 2-3 table spoon water to the mixer jar for grinding the ingredients.
  5.  Now take a fresh and clean kadhai and heat 1 table spoon desi ghee in it.
  6. Add turmeric powder, cumin seeds powder, coriander powder, black pepper powder and red chilli powder to it and stir to mix the spices.
  7. Stir and cook the spices for 1-2 seconds and then quickly add the paste prepared in step 4 to the kadhai. Stir to mix the spices uniformly with the paste and cook them together to form a uniform gravy masala.
  8. When the gravy masala is cooked and oil begins to seperate, then add 1 small cup fresh cream or malai to the kadhai and stir rigorously so that no lumps are formed and the gravy masala attains a uniform creamy texture.
  9. Then add the paneer cubes to the kadhai and mix with the creamy gravy masala.
  10. Now add 1 big cup milk to the kadhai and stir to mix the ingredients and form a uniform creamy gravy.
  11. Then taste the salt with the help of spoon and add more salt, if required as per your taste.
  12. Now lower the flame and cover the kadhai with a lid to cook creamy shahi paneer for 5 minutes.
  13. Turn off the flame after 5 minutes and then transfer the hot ,creamy and tempting shahi paneer to a serving dish. Garnish it with chopped green chilli and fresh coriander leaves, or fresh mint leaves and serve. 

शाही पनीर बनाने की प्रक्रिया:

  1. एक कढ़ाई लें और उसमें देसी घी डालकर गरम करें। घी को पिघलने दें और फिर जीरा, दालचीनी, लौंग, इलायची, काजू और बादाम को इसमें जोड़ें। खड़े मसालों को कुछ देर भूनें और जीरा को चटकने दें।
  2. फिर कढ़ाई में बारीक कटा हुआ प्याज, अदरक और हरी मिर्च डालें। सारी सामग्री को एक साथ चलाकर भूनें।
  3. अब कढ़ाई में कटा हुआ टमाटर और थोड़ा नमक डालें। सारी सामग्री को एक साथ चलाकर पकाएं और जब टमाटर के टुकड़े नरम होना शुरू होजाए तो फिर आँच बंद कर दें।
  4. एक मिक्सर जार में इस भुनी हुई सामग्री को डालें और पीसकर एक बारीक पेस्ट बना लें। यदि आवश्यकता हो तो, सामग्री को पीसने के लिए मिक्सर जार में 2-3 बड़ा चम्मच पानी डालें और सामग्री को पीसकर एक बारीक पेस्ट बना लें।
  5. अब एक साफ कढ़ाई लें और इसमें 1 बड़ा चम्मच देसी घी डालें।
  6. इसमें हल्दी पाउडर, जीरा पाउडर, धनिया पाउडर, कालीमिर्च पाउडर और लाल मिर्च पाउडर डालें और मसालों को मिलाकर मिश्रण करें।
  7. 1-2 सेकंड के लिए मसालों को चलाकर भूनें और फिर कढ़ाई में चरण 4 में तैयार किये हुए पेस्ट को जल्दी से डालें। मसालों को समान रूप से पेस्ट के साथ मिश्रण करें और इस ग्रेवी के मसाला को चलाते हुए पकाएं।
  8. जब ग्रेवी का मसाला अच्छे से  पक जाए और तेल अलग होने लगे, तो कढ़ाई में एक छोटा कप फ्रेश क्रीम या मलाई डालें। ग्रेवी के मसाले और क्रीम को तेजी से मिलाएं जिस्सेकि एक समान क्रीमयुक्त ग्रेवी बन सकें।
  9. फिर पनीर के क्यूब्स को कढ़ाई में जोड़ें और क्रीमयुक्त ग्रेवी के साथ मिलाएं।
  10. अब कढ़ाई में 1 बड़ा कप दूध डालें और सामग्री को मिश्रण करने के लिए चलाते हुए मिलाएं।
  11. फिर चम्मच की मदद से नमक चख कर देख लें और यदि आवश्यकता हो तो स्वाद के अनुसार नमक जोड़ें।
  12. अब आँच को कम करके क्रीमी शाही पनीर को 5 मिनट के लिए कढ़ाई को ढककर पकाएं।
  13. 5 मिनट के बाद आँच बंद करें और फिर गरमा-गरम और क्रीमी शाही पनीर को एक सुन्दर डिश में निकाल लें। इसे कटी हुई हरी मिर्च और ताजी धनिया की पत्ती, या ताजी पुदीना की पत्ती के साथ गार्निश करें और परोसें।
