Milkmaid Kalakand Recipe - Learn How To Make Milkmaid Kalakand

Kalakand is an authentic sweet dish of India that is made during festivals like Holi, Diwali, Eid etc. and other celebrations. It an exquisitely beautiful and milky sweet dish that can be served as a dessert or can be made during fasting as well. 

The recipe below describes the easiest way to make kalakand with just 3 ingredients, and no sugar because the condensed milk is already sweet. Prepared by mashing the home-made paneer or chhena coarsely and cooking it with milkmaid condensed milk, this dish is very easy to make. Learn how to make this tempting and delicious sweet with the help of step by step photos and detailed recipe given below:    

Preparation Time: 10 minutes for making chhena + 5 minutes preparing ingredients

Cooking Time: 12-15 minutes

Recipe Yield: 9 servings

Ingredients for making Milkmaid Kalakand / सामग्री:

  • Chhena - prepared from 1 litre milk (Click on the highlighted link to follow the steps to make chhena); (छेना)
  • Condensed Milk - 1/2 tin or 200 gms; (कंडेंस्ड मिल्क)
  • Cardamom Powder - as per taste; (इलायची पाउडर)

Procedure for making Milkmaid Kalakand:

  1. In a deep vessel pour 1 litre milk and set it to boil on high flame.
  2. When the milk comes to boil, pour in 2 table spoon of vinegar diluted in 1 small cup of water and stir with a ladle. Remember to do this process of curdling the milk on high flame. Notice that milk will begin to curdle  after 1 minute into big lumps. (You can also use lemon juice to curdle the milk, instead of vinegar.)
  3. Now spread a clean cotton cloth over a deep vessel or bowl and pour the curdled milk to seperate the chena  formed, from the liquid.
  4. Strain off the liquid from the chhena. Gather the cloth from all sides in the form of pouch and rinse the chena left in the cloth with water. Squeeze the cloth with hands lightly so that the extra liquid is drained out. (Do not over squeeze the pouch. The chhena should remain moist.)
  5. Now heat a non-stick pan and lower the flame to medium level.
  6. Then transfer the chhena to the hot non-stick pan and stir for 2 minutes.
  7. After stirring the chhena for 2 minutes add the condensed milk to the pan and stir continuously to mix the two ingredients.
  8. Stir the ingredients continuously over low flame only. When the texture of the ingredients appears like that of thickened milk and kalakand, then add the cardamom powder to it. Stir and mix for 2 minutes more. Stir the ingredients by moving the ladle from the base of the kadhai.
  9. After 2 minutes turn off the flame and transfer the milkmaid kalakand to a tray or some plate to set it in desired shape. Allow it to cool till room temperature and set. Then cut it into desired shape and the milkmaid kalakand is ready to eat.

मिल्कमेड कलाकंद बनाने की प्रक्रिया:

  1. एक गहरे पतीले में 1 लीटर दूध डालें और इसे तेज आँच पर उबलने के लिए रखें।
  2. जब दूध में उबाल आजाए, तो 1 छोटा कप पानी में 2 बड़ा चम्मच सिरका डाल कर एक पतला घोल बनाएं और दूध में डालें। सिरका डालते समय लगातार चलाएं। आप देखेंगे कि 1 मिनट के बाद दूध फटना शुरू हो जाएगा और छेना पानी से अलग होजाएगा। (आप सिरका के बजाय दूध को फाड़ने के लिए नींबू का रस भी इस्तेमाल कर सकते हैं।)
  3. अब एक गहरे बर्तन या कटोरे पर एक साफ सूती कपड़े फैलाएं और फाड़े हुए दूध को इस्से छान कर, छेना अलग कर लें।
  4. छाने हुए छेना को थोड़ा साफ पानी डालकर धो लें। कपड़े की पोटली बना कर हल्के हाथों से पोटली को निचोड़ लें, ताकि छेना से अतिरिक्त पानी निकल जाए। (पोटली को ज्यादा न दबाएं, चहेना नम रहना चाहिए।)
  5. अब एक नाँन-स्टिक पैन गरम करें और फिर आँच को मध्यम स्तर तक कम करें।
  6. फिर छेना को गरम नाँन-स्टिक पैन में डालें और 2 मिनट तक लगातार चलाएं।
  7. छेना को 2 मिनट तक लगातार चलाने के बाद पैन में कंडेंस्ड मिल्क डालकर दोनों सामग्री को अच्छे से मिलाएं।
  8. कम आँच पर दोनों सामग्री को लगातार चलाते रहें। जब दोनों सामग्री एक साथ मिलकर कलाकंद के जैसे दिखने लगें, तो इसमें इलायची पाउडर जोड़ें। अच्छे से मिलाते हुए और 2 मिनट के लिए पकाएं। (सामग्री को पैन के तले से सटा कर चलाते रहना है।)
  9. 2 मिनट के बाद आँच बंद कर दें और मिल्कमेड कलाकंद को एक ट्रे या किसी प्लेट को निकाल लें ताकि वह ट्रे या प्लेट आकार में सेट होजाए। इसे ठंडा होने दें। फिर इसे मन चाहे आकार में काट लें और आपका मिल्कमेड कलाकंद खाने के लिए तैयार है।

(Tips: Do not add sugar while making milkmaid kalakand as the milkmaid is already very sweet in taste.)
