Chana Dal Ki Pakori or Chana Dal Ka Pakora Recipe

Chana Dal Ki Pakori or Chana Dal Ka Pakora are a great, crispy and spicy snacks that go well with a hot cup of tea in the evening. They are my personal favorite snack during the rainy season. I love to eat them with any chutney or tomato ketchup, for my evening tea -time snack when it is raining heavily outside. 

Like other pakoris, Chana Dal Ki Pakori is also easy to make and taste very good when served hot with some spicy chutney. Learn to make these tasty pakora or pakoris with the help of detailed recipe and step by step photos given below:

Preparation Time: 4 hours for soaking the Bengal Gram + 10 minutes for gathering ingredients and preparing the ground Bengal Gram mixture + 5 minutes for allowing the ground Bengal Gram mixture to rest

Cooking Time: 5 minute in one batch (4-5 pakori in one batch)

Recipe Yield: 2 servings (5 Chana Dal Ki Pakori or Chana Dal Ka Pakora per serving)

Ingredients for making Chana Dal Ki Pakori / सामग्री:

  • Bengal Gram - 1 big cup, soaked for 4 hours in plain water; (चना दाल)
  • Onion - 1 big size, finely chopped; (प्‍याज)
  • Coriander Leaves - 2 table spoon, finely chopped; (धनिया पत्ती)
  • Ginger - 1 inch piece, finely chopped; (अदरक)
  • Green Chilli - 5-6 or as per taste, finely chopped; (हरी मिर्च)
  • Salt as per taste; (नमक)
  • Turmeric Powder - 1 tea spoon; (हल्दी पाउडर)
  • Water - for grinding the soaked Bengal Gram; (पानी)
  • Mustard Oil - as per requirement for frying the Chana Dal Ki Pakori; (सरसों का तेल)

Procedure for making Chana Dal Ki Pakori:

  1. Wash the Bengal Gram well with plain water and then soak in clean, plain water for 4 hours.
  2. After 4 hours wash the strain off the water in which the Bengal Gram was soaked. Then wash it again with clean and plain water.
  3. Transfer the soaked Bengak Gram into a mixer jar and add 1-2 table spoon water to it. Then grind the soaked Bengal Gram into a granular form. Transfer the ground Bengal Gram into a mixing bowl.
  4. Add turmeric powder and salt to it, and mix well. If the mixture appears very thick then add 2 table spoon water (only if it is required). Mix it well.
  5. Now add chopped onion, green chilli, coriander leaves and ginger to the ground Bengal Gram. Mix all the ingredients to form a uniform mixture.
  6. Then leave the mixture to rest for 5 minutes.
  7. Heat a kadhai and pour some mustard oil in it. When the oil is heated completely then lower the flame.
  8. After 1 -2 minutes make a small dumpling of the Bengal Gram mixture and press it to form a flat tikki like shape. Now transfer the dumpling slowly into the hot oil. Prepare 4-5 dumpling aand set them to fry at a time in one batch.
  9. When one side appears light crispy red in color then flip them slowly to fry on the other side. Fry the dumplings till they turn crispy red uniformly on both sides.
  10. Then transfer the fried dumpling or Chana Dal Ki Pakori to a plate covered with tissue paper. Prepare Chana Dal Ki Pakori of the remaining Bengal Gram mixture in the same way. Serve the hot, crispy and spicy Chana Dal Ki Pakori with some chutney.

चना दाल की पकौड़ी बनाने की प्रक्रिया:

  1. चना दाल को सादे पानी के साथ अच्छी तरह से धो लें और फिर 4 घंटे के लिए साफ, सादे पानी में भिगोएँ।
  2. चार घंटों के बाद चना दाल को भिगोए हुए पानी से छान लें। फिर साफ और सादे पानी के साथ इसे फिर से धो लें।
  3. अब भीगी हुई चना दाल को मिक्सर जार में डालें और इसमें 1-2 बड़ा चम्मच पानी जोड़ें। फिर चना दाल को दरदरा पीस लें। पिसी हुई चना दाल को मिश्रण कटोरे में निकाल लें।
  4. अब इसमें हल्दी पाउडर और नमक जोड़ें, और अच्छी तरह से मिलाएं। यदि मिश्रण बहुत गाढ़ा प्रतीत होता है तो उसमें 2 बड़ा चम्मच पानी जोड़ें (यदि आवश्यक हो तो)। अच्छी तरह से मिलाएं।
  5. अब कटी हुई हरी मिर्च, धनिया पत्ती, प्‍याज और अदरक को पिसी हुई चना दाल में जोड़ें। एक समान मिश्रण बनाने के लिए सभी सामग्री को मिलाएं।
  6. फिर इस मिश्रण को 5 मिनट तक अलग रख दें।
  7. कढ़ाई गरम करें और उसमें थोड़ा सरसों का तेल डालें। जब तेल पूरी तरह गरम होजाए है तो आँच कम कर दें।
  8. 1 -2 मिनट के बाद चना दाल के मिश्रण की छोटी पकोड़ी बनाएं और इन्हें एक फ्लैट टिक्की का आकार देने केलिए दबाएं। अब धीरे-धीरे गर्म तेल में पकौड़ी को डालें। एक बार में 4-5 पकौड़ी तैयार करें और एक साथ तलें।
  9. जब एक तरफ हल्का लाल रंग दिखाई देता है तो दूसरी तरफ तलने के लिए उन्हें धीरे से पलट दें। दोनों पक्षों पर समान रूप से कुरकुरा लाल होने तक मध्यम आँच पर तलें।
  10. फिर तली हुई चना दाल की पकौड़ी को टिशू पेपर के साथ कवर की एक प्लेट में निकल लें। इसी तरह शेष चना दाल के मिश्रण की पकौड़ी तैयार करें। गरमा-गरम चना दाल की पकौड़ी को चटनी के साथ परोसें।

(Tips: 1. Fry the Chana Dal Ki Pakori only over medium flame and slowly, otherwise the Chana Dal Ki Pakor will remain uncooked from inside.)
