Kaddu Ki Kheer or Pumpkin Pudding Recipe

An easy to make and delicious dessert is Kaddu Ki Kheer or Pumpkin Pudding, also referred to as gummadikaya or pumpkin payasam, is an ancient Indian dessert dish. It is a delectable and creamy dessert, that can be made in very less time on any occasion. Learn how to make this delightful dessert dish with the help of detailed recipe and step by step photos given below:

Ingredients for making Kaddu Ki Kheer or Pumpkin Pudding / सामग्री:

  • Pumpkin - 250 gm; (कद्दू)
  • Thickened Milk or Full Cream Milk - 500 ml; (गाढ़ा किया हुआ दूध या फुल क्रीम दूध)
  • Sugar - as per taste; (चीनी)
  • Cardamom Powder - 1/2 tea spoon; (इलायची पाउडर)
  • Dry Fruits - 2 table spoon
    • Cashews; (काजू)
    • Almonds; (बादाम)
    • Pistachios; (पिस्ता)
    • Desi Ghee - 1 table spoon; (देसी घी)

Procedure for making Kaddu Ki Kheer or Pumpkin Pudding:

  1. Peel off the pumpkin nicely and remove the seeds. Then wash the pumpkin with plain water and grate it.
  2. Boil some water in a big deep vessel and then add the grated pumpkin to it. Allow the grated pumpkin to boil in the water for 3-4 minutes.
  3. After boiling for 3-4 minutes then turn off the flame. Pour the contents of the vessel into a sieve and strain off the water so that the grated and boiled pumpkin remains in the sieve.
  4. Now heat 1 table spoon desi ghee in a kadhai and add the grated and boiled pumpkin to it.
  5. Stir and lightly saute the pumpkin in ghee, over high flame for 2 minutes. 
  6. Now add thickened milk or full cream milk, cardamom powder and sugar to the kadhai. Stir and cook the ingredients over high flame for 4-5 minutes. Turn off the after 4-5 minutes. Transfer the hot pumpkin pudding to a serving bowl.
  7. Then add chopped dry fruits (cashews, almonds and pistachios) to the hot pumpkin pudding or kaddu ki kheer. Keep the bowl of hot pumpkin pudding or kaddu ki kheer in the fridge for some time for cooling. The yummy and beautiful pumpkin pudding dessert or kaddu kheer is then ready to be served.

कद्दू की खीर या पम्पकिन पुडिंग बनाने की प्रक्रिया:

  1. कद्दू को अच्छी तरह से छीलकर और उसका बीज हटा दें। फिर सादे पानी के साथ कद्दू धो लें और इसे बारीकी से कद्दूकस करें।
  2. एक बड़ा गहरे पतीले में थोड़ा पानी उबाल लें और फिर इसमें कद्दूकस किया हुआ कद्दू डालें। कद्दूकस किये हुए कद्दू को पानी में 3-4 मिनट के लिए उबाल लें।
  3. 3-4 मिनट उबालने के बाद आँच बंद कर दें। अब पतीले की सारी सामग्री को छलनी में डालें और कद्दूकस किये हुए कद्दू को पानी से कद्दूकस किया हुआ कद्दू पानी से अलग होजाए।
  4. अब कढ़ाई में 1 बड़ा चम्मच देसी घी गरम करें और इसमें उबाला और कद्दूकस किया हुआ कद्दू डालें।
  5. कल्छी से हल्के-हल्के चलाते हुए कद्दू को घी में 2 मिनट के लिए तेज आँच पर सेकें।
  6. अब कढ़ाई में गाढ़ा किया हुआ दूध या फुल क्रीम दूध, इलायची पाउडर और चीनी डालें। कल्छी से चलाएं और 4-5 मिनट के लिए तेज आँच पर पकाएं। 4-5 मिनट के बाद आँच बंद करें एक कटोरे में गर्म कद्दू की खीर या पम्पकिन पुडिंग को निकालें।
  7. फिर बारीक कटे हुए ड्राई-फ़्रूट्स (काजू, बादाम और पिस्ता) को गर्म कद्दू की खीर या पम्पकिन पुडिंग में डालें। अब गर्म कद्दू की खीर या पम्पकिन पुडिंग को ठंडा होने केलिए फ्रिज में रखें। आपकी स्वादिष्ट कद्दू की खीर या पम्पकिन पुडिंग तैयार हैं।
