Badaam Matka Kulfi Recipe - Learn How To Make Badaam Matka Kulfi

Kulfi reminds us of our childhood. It was the kind of ice-cream that our parents would easy give approval for (actually, not that easily). It is a famous since ages and loved by everyone. Learn how to make this awesome dish with the help of an authentic recipe given below:

Preparation Time: 10 minutes

Cooking Time: 25 minutes for making kulfi mixture + 30 minutes for cooling it + 10 minutes for preparing kulfi moulds and garnishing + 14 hours for freezing the kulfi

Recipe Yield: 4 servings

Ingredients for Badaam Matka Kulfi / सामग्री:

  • Milk - 1 litre (दूध)
  • Ground Almonds - 10-15 (पिसा हुआ बादाम)
  • Finely chopped Pistachios - 10-15 (बारीक कटा हुआ पिस्ता)
  • Finely chopped Cashews - 5-6 (बारीक कटा हुआ काजू)
  • Crushed Cardamom - 1 tea spoon (कुटी हुई छोटी इलायची)
  • Saffron Strands - as per requirement for garnishing (केसर)
  • Sugar - 2 table spoon (चीनी)

Procedure for making Badaam Matka Kulfi:

  1. Grind the almonds into small granular pieces. Finely chop the cashews and pistachios and crush the cardamom to form powder. Keep all thre dry fruits and crushed cardamom seperately to be used in the following steps.
  2. Pour the milk in a heavy based deep vessel and set it to boil over low flame. Stir at regular intervals until the milk reduces to half its original volume.
  3. Then add sugar and crushed cardamom to it and mix well.
  4. Now add the ground almonds and finely chopped cashews and pistachios to it. Mix all the ingredients and allow the kulfi mixture to boil for 2 more minutes. Then turn off the flame.
  5. Allow the kulfi mixture to cool to room temperature and then pour it into kulfi moulds or earthen pots. Then garnish with saffron strands and cover the cotainers with their lids. (If either of kulfi moulds or earthen pots is unavailable then pour the mixture into a steel container and cover it with its lid.)
  6. Then place the kulfi in the freezer for atleast 14 hours. The kulfi will be ready to serve after 14 hours. (A better texture of kulfi can be prepared if you leave the kulfi to freeze overnight).

बादाम मटका कुल्फी बनाने की प्रक्रिया:

  1. बादाम छोटे दानेदार टुकड़ों में पीस लें। काजू और पिस्ता को बारीक काट लें और छोटी इलायची को कूट के पाउडर बना लें। चारों सामग्री को अलग-अलग रखें।
  2. दूध को एक मोटे तले के गहरे पतीले में डालें और कम आॅच पर उबलने दें। नियमित अंतराल पर चलाएं जब तक दूध अपनी मूल मात्रा से कम होकर आधी मात्रा में न रह जाए।
  3. फिर इसमें चीनी और कुटी हुई छोटी इलायची डालें और अच्छी तरह से मिलाएं।
  4. अब पिसा हुआ बादाम और बारीक कटा हुआ काजू और पिस्ता को इसमें डालें। सभी सामग्री को मिलाएं और कुल्फी मिश्रण को दो मिनट के लिए उबालें। फिर आॅच बंद कर दें।
  5. गर्म कुल्फी मिश्रण को समान तापमान तक ठंडा होने दें और फिर इसे कुल्फी मोल्ड या मिट्टी के मटके में डाल दें। फिर कुल्फी मिश्रण को केसर के साथ गार्निश करें और कोटेनर्स को उङ्के ढक्कन से कवर करें। (यदि कुल्फी मोल्ड या मिट्टी के मटके में से कोई भी उपलब्ध नही है तो मिश्रण को एक स्टील के बर्तन में डालें और उसको ढक्कन के साथ कवर कर दें।)
  6. फिर कम से कम 14 घंटे के लिए फ्रीज़र में कुल्फी को ठंडा होने केलिए रखें। आपकी कुल्फी 14 घंटे बाद परोसने के लिए तैयार हो जाएगी। ( अगर आप इसे पूरी रात फ्रीज़र में रखेंगे तो कुल्फी का टेक्सचर और भी अच्छा आएगा)

(Tips: 1. The volume of kulfi increases as it will cool and freeze. Therefore, leave 1/2 inch space from the top, in the mould or the steel container; 2. Always cover the containers with a lid when you keep the kulfi to freese in the freezer; )
