Plain Nachos Recipe - Learn How To Make Plain Nachos

Nachos belongs to the Tex-Mex cuisine and is quite popular in the western countries. These days Nachos is a craze among kids and young folk. You can find nachos at almost every grocery store and it's priced quite highly as compared to other chips. But do you know it's really easy to make nachos at home? So follow the recipe given below and impress everyone with your wide range of cooking expertise:

Preparation Time: 5 minutes

Cooking Time: 15-20 minutes

Ingredients for making Plain Nachos / सामग्री:

  • Corn Flour - 1 big cup (मकई का आटा)
  • All Purpose Flour - 1/2 cup (मैदा)
  • Salt as per taste (स्वाद के अनुसार नमक)
  • Refined Oil - 3 table spoon for making dough (रिफाइंड तेल)
  • Plain water at normal temperature (पानी)
  • Cumin Seeds or Ajwain - tea spoon (जीरा या अज्वैन)
  • Refined Oil - as per requirement for frying (रिफाइंड तेल)

Procedure for making Plain Nachos:

  1. Take 1 big cup corn flour in a big mixing bowl and add 1/2 cup all purpose flour to it. 
  2. Add salt as per taste to it and 1 tea spoon of cumin or carom seeds. Mix all the dry ingredients with hands nicely.
  3. Now add 3 table spoon refined oil to the mixture and mix again as if forming a dough till the flour mixture begins to bind. 
  4. Then slowly add little water and form a medium hard dough of the flour mixture. (Do not leave the flour to rest, otherwise it will become soft)
  5. While forming the dough of the flour mixture place a kadhai over the gas stove and add refined oil to it. Allow the oil to heat up slowly over low flame while the dough gets ready.
  6. Now form equal sized small balls of the dough. The size of the balls should be same as the size of wheat dough balls made for rotis. Now dust some dry flour and take one ball to roll it flat into a thin round chapati.
  7. Then use a fork or knife to make small cut marks on this chapati. These cut marks will not allow the nachos to swell as we fry them.
  8. Now cut the chapati into nachos shape (as shown in the images below). Prepare nachos from all the balls in the similar manner.
  9. Then take a tiny ball of the dough and put it into the kadhai to check if the oil is hot enough to fry the nachos. If the ball rises to the top and does not sink then the oil is hot enough for frying the nachos.
  10. Now fry the raw nachos 2-3 at a time slowly over low flame. Flip and fry the nachos till they turn uniformly golden on all sides. Fry all the nachos in the same manner.
  11. Transfer the fried nachos to serving bowl or dish and sprinkle some chaat masla powder over it. Now serve the crispy nachos are with some spicy chutney or sauce.

नाचोस बनाने की प्रक्रिया:

  1. एक बड़े कटोरे में में 1 बड़ा कप मकई का आटा लें और इसमें 1/2 कप मैदा डालें।
  2. फिर स्वाद के अनुसार नमक और 1 छोटी चम्मच जीरा या अज्वैन डालें। सभी सूखी सामग्री को हाथों से अच्छी तरह से मिलाएं।
  3. अब मिश्रण में 3 बड़ा चम्मच रिफाइंड तेल डालकर मिलाएं और मोइन करें  जिस्से कि यह आटे का मिश्रण बँधना शुरु हो जाए।
  4. फिर धीरे-धीरे करके थोड़ा-थोड़ा पानी डालकर हल्का सख्त आटा गून्ध कर बनालें। (आटा गून्ध कर स्थिर नही छोड़ना है, अन्यथा यह नरम हो जाएगा)
  5. आटा गून्धने के दौरान गैस स्टोव पर एक कढ़ाई रखें और इसमें रिफाइंड तेल डालें। आटा तैयार होने तक तेल को कम आॅच पर धीरे-धीरे गर्म होने दें।
  6. अब गून्धे हुए आटे की बराबर आकार छोटी लोई तैयार करें। लोई का आकार रोटी की लोई के आकार के समान होना चाहिए। अब थोड़ा सूखे आटा छिड़कें और एक लोई को एक पतली चपाती में बेल लें।
  7. फिर इस चपाती पर कांटा या चाकू के उपयोग से छोटे कट के निशान बना लें। ये कट लगाने से नाचोस तलते समय नही फूलेंगे।
  8. अब चपाती को नाचोस आकार में कट करें (जैसा कि नीचे दी गई छवियों में दिखाया गया है)। इसी तरह से सभी लोई से नाचो तैयार करें।
  9. फिर आटे की एक छोटी सी लोई लें और कढ़ाई में डाल दीजिए। अगर लोई ऊपर की ओर आजाती है और डूबती नहीं है तो आपका तेल नाचोस तलने के लिए गर्म होगया है।
  10. अब एक बार में 2-3  कच्चे नाचोस बार कढ़ाई में डालकर धीरे-धीरे कम आॅच पर तलें। नाचोस को सभी तरफ से समान रूप से हल्का सुनहरा होने तक तलिये। इसी तरीके से सभी नाचोस तलिये।
  11. तले हुए नाचोस को कटोरे में निकालें और ऊपर से थोड़ा चाट मसाला पाउडर छिड़कें। अब कुरकुरा नाचोस को चटनी या सॉस के साथ परोसें।

(Tips: 1. Prepare the nachos and fry them as soon as the dough is prepared otherwise it will become soft; 2. Make cut marks over the chapati and then cut into nachos; 3. Fry the nachos over low flame so that they are crisp and are cooked till inside)
