Punjabi Dhaba Style Baingan Ka Bharta Recipe - Baingan Ka Bharta Dhaba Style Recipe

Smooth texture, smoky flavor with a burst of spicy flavors in every bite, reminds me of the delicious Baingan Ka Bharta served at the road side dhabas on highway in North India. It makes a great combination with tandoori roti and phulkars.

Procedure for making Punjabi Styled Baingan Ka Bharta:

  1. Wash the brinjal well with water and make a cut at its centre to check if it is not rotten inside. (Do not cut the brinjal completely. It should remain intact at one end.)
  2. Now place a steel stand over the gas stove and lower the flame to low level. Place the this brinjal over this stand and then flip and cook the brinjal till it is nicely roasted and becomes soft at the centre.
  3. When the brinjal is nicely roasted then turn off the flame and remove it to a plate. Allow the brinjal to cool and then remove the peel and mash them.
  4. Then take the boiled potatoes and peel and mash them. Take some fresh green peas and remove their peel.
  5. Now heat some oil in a kadhai and add finely chopped onion, green chilli and garlic to it. Saute the ingredients till they become golden brown in color.
  6. Then add the green peas and saute it lightly with the other ingredients.
  7. After some time add chopped tomato. Stir and cook the tomato pieces till they become soft.
  8. Then add turmeric powder, red chilli powder, cumin powder and salt to the kadhai. Stir and mix with the cooking ingredients.
  9. Add garam masala powder, mix and cook for some time. Press and mash the ingredients with the back side of the ladle. Check a few pea grains if they are cooked and have become soft.
  10. Now add mashed boiled potato and mashed roasted brinjal to the kadhai. Mix the ingredients in the ladhai well.
  11. Add some water and lower the flame to medium level. Mix and then allow the ingredients to cook together for 5 minutes.
  12. After five minutes mix and mash the ingredients with the ladle again. Turn off the flame and add chopped coriander leaves to it. Transfer the prepared Baingan Ka Bharta Punjabi Dhaba Style to a serving bowl and serve hot.

पंजाबी स्टाइल का बैंगन का भर्ता बनाने की प्रक्रिया:

  1. बैंगन को पानी से अच्छी तरह से धो लें और उसके बीच में चीरा लगा कर देखें कि यह अंदर से टीक है या नहीं। (बैंगन को पूरा नहीं काटना है।)
  2. अब गैस स्टोव पर एक स्टील का स्टैंड रखें और आँच को कम कर दें। इस स्टैंड पर इस बैंगन को रखें और फिर उलट-पलट कर बैंगन को कम आँच पर अच्छे से भूनें।
  3. जब बैंगन को अच्छी तरह से भुन जाए तो गैस को बंद कर दें और इसे प्लेट में निकाल दें। बैंगन को ठंडा होने दें और फिर बैंगन का छिलका हटा दें और मैश कर लें।
  4. फिर उबले हुए आलू लें और उन्हें छील कर मैश करें। थोड़ी ताजा हरी मटर लें और उन्हें छील लें।
  5. अब कढ़ाई में थोड़ा तेल गरम करें और उसमें बारीक कटा हुआ प्याज, हरी मिर्च और लहसुन डालें। सामग्रियों को तब तक भूनें जब तक कि वे रंग में सुनहरे भूरे रंग के न हो जाएं।
  6. फिर हरी मटर डालें और इसे बाकि सामग्री के साथ हल्का सा भून लें।
  7. कुछ समय बाद कटा हुआ टमाटर डालें और उसे नरम होने तक भूनें।
  8. फिर हल्दी पाउडर, लाल मिर्च पाउडर, जीरा पाउडर और नमक डालें और मिलाएं।
  9. अब गरम मसाला पाउडर डालें, मिलाएं और कुछ समय तक भूनें। कल्छी से सारी सामग्री को मिलाएं और मटर के दानों को मैश करके जांच लें कि वे पक गये हैं या नहीं।
  10. अब कढ़ाई में मैश किए हुए उबले आलू और मैश किया हुआ भुना हुआ बैंगन डालें और मिलाएं।
  11. थोड़ा पानी डालें और आंच को मध्यम स्तर पर कम कर दें। सामग्री को 5 मिनट तक एक साथ पकाएं।
  12. पांच मिनट के बाद फिर से कल्छी से मिलाएं और मैश कर दें। फिर गैस बंद कर दें और इसमें बारीक कटी हुई धनिया पत्ति डालें। तैयार पंजाबी ढाबा स्टाइल के बैंगन के भर्ता को एक कटोरे में निकालें और गर्मा-गरम परोसें।
