Karele Ki Bhujia Recipe - Learn How To Make Karele Ki Bhujia

Benefits of Bitter gourd or Karela are innumerable ranging from curing respiratory diseases, liver problems, skin ailments, constipation to providing assistance in curing type-2 diabetes. Its natural bitter taste may not be liked by everyone but this Karele ki Bhujia is sure to add a unique flavor to your meal. It is very healthy because of the high amount of health benefits provided by this vegetable and tasty  even when cooked in very less amount of oil. Prepare this healthy bhujia for your family and add a healthy star to the quality of your meal with a detailed recipe, step by step photos and video given below:

Recipe Yield: 4-5 servings

Ingredients for making Karele Ki Bhujia:

  • Bitter Gourd or Karele - 4 big size
  • Onion - 1 big size
  • Turmeric Powder - 1 tea spoon
  • Salt as per taste
  • Fenugreek Seeds - 1/2 tea spoon
  • Mustard Oil - 1 table spoon

Procedure for making Karele Ki Bhujia:

  1. Take 4 big size bitter gourds or karela and leave them immersed in water contained in a deep vessel for 5 minutes. This will help in removing all the dirt  from them.
  2. After 5 minutes remove the bitter gourds or karela from water and wash them nicely with plain water. Now cut off both the ends and then cut the bitter gourd or karela at its center along the length. Then remove the seeds and fibre from its center and chop the bitter gourds or karela into thin slices as shown in the images below.
  3. Take on big size onion, peel it, wash it and chop it into thin slices.
  4. Now heat a kadhai and add mustard oil to it.
  5. When the oil is heated completely then add fenugreek seeds to it and allow them to crackle. Do not blacken the fenugreek seeds.
  6. Then add chopped slices of bitter gourds or karela and onion to the kadhai. Stir to mix the ingredients.
  7. Now add turmeric powder and salt to the kadhai. Stir to mix the cooking ingredients well and then lower the flame. Cover the kadhai with a lid and allow the ingredients to cook together over low flame.
  8. Remove the lid at regular intervals to check if the pieces of bitter gourds or karela are cooked and have become soft. Cook in this manner for almost 15 minutes till the pieces of bitter gourds or karela become soft.
  9. After 15 mintes remove the lid and increase the flame. If required add 1 tea spoon mustard oil to the kadhai. Stir regularly and cook like this for 2-3 minutes, till the pieces of bitter gourds or karela appear reddish in color.
  10. Then turn off flame and transfer the hot karele ki bhujia to a serving plate and serve.

करेले की भुजिया बनाने की प्रक्रिया:

  1. 4 बड़े आकार के करेला लें और 5 मिनट के लिए चारों करेले को एक गहरे बर्तन में पानी भरकर उसमें डूबा कर छोड़ दें। ऐसा करने से करेले के ऊपर लगी हुई सारी गंदगी को अच्छे से धोने में मदद मिलेगी।
  2. 5 मिनट के बाद पानी से सारे करेलों को पानी से निकाल लें और सादे पानी के साथ फिर से अच्छी तरह धो लें। अब एक करेला लें और उसके दोनों कोनों को काट लें। फिर करेलों को उनके बीच से लंबाई में काट कर दो हिस्सों में बॉट लें। अब उसके बीच से बीज और फाइबर हटा दें और करेले को पतले स्लाइसेस में काट लें (जैसा कि नीचे दी गई छवियों में दिखाया गया है)।
  3. एक बड़े आकार का प्याज लें, इसे छीलकर साफ पानी से धो लें और इसको भी पतले स्लाइसेस में काट लें।
  4. अब एक कढ़ाई गरम करें और इसमें सरसों के तेल डालें।
  5. जब तेल पूरी तरह गरम होजाए तो उसमें मेथी का दाना डालें और उन्हें चटकने दें। मेथी के दानों को काला नहीं करना है।
  6. फिर कढ़ाई में कटा हुआ करेला और प्याज डालें। सामग्री को एक साथ चलाकर मिलाएं।
  7. अब कढ़ाई में हल्दी पाउडर और स्वाद अनुसार नमक डालें। सामग्री को एक साथ चलाकर अच्छी तरह से मिलाएं और फिर आँच को कम कर दें। कढ़ाई को ढक्कन के साथ कवर करें और सामग्री को कम आँच पर धीरे-धीरे पकने दें।
  8. नियमित अंतराल पर ढक्कन हटाकर सामग्री को कल्छी से चलाएं जिस्से कि करेले के सारे टुकड़े समान रूप से पक जाएं। करेले के टुकड़ों को पकने में लगभग 15 मिनट तक का समय लगेगा।
  9. 15 मिनट के बाद ढक्कन हटा दें और आँच को बढ़ा दें। यदि आवश्यकता हो तो 1 छोटी चम्मच सरसों तेल और डालें और नियमित रूप से चलाएं। 2-3 मिनट के लिए इसी तरह से पकाएं, जब तक कि करेले के टुकड़े भुन्नकर हल्के लाल-लाल से से प्रतीत न होने लगें।
  10. फिर गैस बंद कर दें और ताजी, क्रिस्पी करेले की भुजिया को एक प्लेट में निकाल लें और परोसें।
