Lal Saag Recipe - Learn How To Make Laal Saag

Amaranth Leaves or Red Spinach Or Lal Palak or Lal Saag or Chaulai Ka Saag is a famous for being the powerhouse of iron, vitamins, minerals, proteins, carbohydartes and fibres. Its juice extracted from amaranth leaves help in treating diarrhoea and haemorrhage conditions. Regular consumption of Amaranth Leaves or Red Spinach Or Lal Palak or Lal Saag or Chaulai Ka Saag helps in easing digestion, excessive menstruation and weight management. Being high in iron content and dietary fibre, it is good for anaemic patients, and reduces cholesterol and risks of cardiovascular diseases. This leafy vegetable is gluten free and hence a good diet supplement for people with liver problems. The presence of an essential amino acids called lysine along with other elements are said to help fight against free radicals that result in aging or the formation of malignant cells. Highly nutritious and flavorful, this saag is very easy to make and can be prepared in very less time.

Prepare this nutritious dish with the help of a detailed recipe, step by step photos and video given below:

Preparation Time: 10 minutes for immersing the red spinach in water + 5 minutes for preparing the ingredients

Cooking Time: 10 minutes

Recipe Yield:  4 servings

Ingredients for making Laal Saag:

  • Red Spinach or Lal Saag or Chaulai Ka Saag - 500 gm
  • Garlic Petals - 4-5, finely chopped
  • Asafoetida - 1 pinch
  • Fenugreek Seeds - 1/2 tea spoon
  • Salt as per taste
  • Red Chilli Flakes - 1/2 tea spoon
  • Mustard Oil - 1 table spoon

Procedure for making Laal Saag:

  1. Cut off the roots and hard stem of the red spinach or lal palak and then place the entire bunch immersed in water for 10 minutes.
  2. Then strain off the water in which the red spinach or lal palak was soaked. Wash the leaves of the red spinach or lal palak with clean water 2-3 times nicely with clean water. This entire process will help to wash off all the dirt from the leafy vegetabele.
  3. Now cut the red spinach or lal palak into 1 inch big equal sized pieces.
  4. Take a thick based kadhai and heat 1 table spoon mustard oil to it.
  5. When the oil is completely heated then add asafoetida or hing and fenugreek seeds or methi dana to it.
  6. Allow the fenugreek seeds or methi dana to crackle and turn light brown in color, and then add finely chopped garlic petals and red chilli flakes to it. Saute them till they turn reddish brown in color.
  7. Now add the chopped pieces of the red spinach or lal palak and salt to the kadhai. Mix the ingredients well and cover the kadhai with a lid. Lower the flame and then cook ingredients together for 5 minutes.
  8. Remove the lid after 5 minutes, stir again from the base of the kadhai and then cover the kadhai with a lid to cook for 5 minutes more in the same way.
  9. Therefore after total 10 minutes, remove the lid of the kadhai and you shall see that the quantity of the red spinach or lal palak has reduced to 1/2 its original quantity.
  10. When almost all the water has dried up and only a little remains at the base of the kadhai, then increase the flame to high level. Stir and cook till all the water is dried up. The lal saag or lal palak ka saag or lal shak bhaja or lal chaulai ka saag or laal saag is ready to be served hot with hot rotis, chapatis, parathas or rice.

लाल साग बनाने की प्रक्रिया: 

  1. लाल पालक के पत्तों की जड़ों और सख्त डंडी को काट कर अलग कर लें और फिर 10 मिनट के लिए पूरी तरह से पानी में डुबाकर रख दें।
  2. फिर लाल पालक के पत्तों को उस पानी से निकाल लें। अब लाल पालक के पत्तों को 2-3 बार साफ पानी से अच्छे से रगड़-रगड़ कर धो लें। इस पूरी प्रक्रिया को करने से लाल पालक के पत्तों से सभी प्रकार की गंदगी निकल जाती है।
  3. अब लाल पालक के पत्तों को 1 इंच के बराबर आकार के टुकड़ों में काट लें।
  4. एक मोटी आधार वाली कढ़ाई लें और उसमें 1 बड़ा चम्मच सरसों का तेल डालें।
  5. जब तेल पूरी तरह से गरम हो जाए तो उसमें हींग और मेथी के दाने जोड़ें।
  6. जब मेथी के दाने चटक कर हल्के भूरे रंग के होजाएं, तो फिर इसमें बारीक कटी हुई लहसुन की पंखुड़ी और रेड चिली फ्लेक्स जोड़ें। उनको हल्का भूरे रंग का होने तक भूनें।
  7. अब लाल पालक के कटे हुए टुकड़ों को और नमक को कढ़ाई में डालें। सामग्री को अच्छी तरह से मिलाएं और कढ़ाई को ढक्कन के साथ कवर करें। आँच को कम कर दें और फिर 5 मिनट के लिए सामग्री को पकने दें।
  8. 5 मिनट के बाद ढक्कन को हटा दें, कढ़ाई के आधार से सामग्री को चलाएं और फिर से कढ़ाई को एक ढक्कन के साथ ढक कर और 5 मिनट के लिए सामग्री को उसी तरह पकाने दें।
  9. अब 10 मिनट के बाद, कढ़ाई के ढक्कन को हटा दें और आप देखेंगे कि लाल पालक की मात्रा उसकी मूल मात्रा से कम होकर मात्रा में ½ रह गई है।
  10. जब लगभग सारा पानी सूख जाए और कढ़ाई के आधार में बहुत थोड़ा सा ही रह जाए, तो आँच पर लाल साग को चलाते हुए पकाएं जब तक सारा पानी न सूख जाए। आपका लाल साग या लाल पालक का साग या लाल शाक भाजा या लाल चौलाई का साग को गर्म रोटी, पराठा या चावल के साथ गरमा-गरम परोसें।
