Chhuhara Ki Chutney or Dry Dates Chutney Recipe

Chhuhara Ki Chutney or Dry Dates Chutney  is sweet and spicy chutney that has a perfect blend of flavors. This chutney goes well with hot pooris and parathas. It can also goes well with aloo tikki chaat and dahi bhalla. 

Prepare this chutney with the help of an easy and detailed recipe given below:

Preparation Time: 6-8 hours for soaking the dry dates or chhuhara + 5 minutes for gathering the ingredients

Cooking Time: 15 minutes

Ingredients for making Chhuhara Ki Chutney or Dry Dates Chutney / सामग्री:

  • Dry Dates or Chhuhara - 10-12
  • Dry Fruits - 1 table spoon
    • Cashews
    • Almonds
    • Raisins
  • Jaggery - 100 gm
  • Dry Mango Powder - 1 table spoon
  • Red Chilli Powder - 1/2 tea spoon
  • Cumin Seds Powder - 1/2 tea spoon
  • Black Pepper Powder - 1/2 tea spoon
  • Salt - 1/2 tea spoon

Procedure for making Chhuhara Ki Chutney or Dry Dates Chutney:

  1. Soak the dry dates or chhuhara in clean and plain water overnight. Then next day take out the dry dates from the water in which they were soaked and remove their seeds.
  2. Now transfer the soaked dry dates or chhuhara to a mixer jar and grind it to form a fine paste.
  3. Then heat a thick based kadhai and add the paste of dry dates or chhuhara to it.
  4. Crumble the jaggery and add it to the kadhai and mix it well with the paste of dry dates or chhuhara. Lower the flame to medium level and stir and cook the ingredients for 3-4 minutes.
  5. Then add 1 small cup of water to the kadhai and stir well to get a uniform solution. Allow the ingredients to boil.
  6. When the ingredients come to a boil add dry mango powder, red chilli powder, cumin seeds powder, black pepper powder and salt as per taste to it. Mix all the ingredients well and then lower the flame to medium level. Cook the ingredients like this for 5-7 minutes.
  7. Add chopped cashews and raisins. Mix the ingredients and then turn off the flame.
  8. Transfer the hot dry dates chutney or chhuhara chutney into a serving bowl, garnish with some dry fruits and serve it with hot poori or paranthas.

छुआरा की चटनी बनाने की प्रक्रिया:

  1. छुआरा को साफ और सादा पानी में रात भर के लिए भिगोएँ। अगले दिन भीगे हुए छुआरों को पानी में से निकाल लें।
  2. अब मिक्सर जार में भीगे हुए छुआरों को डालें और इसे बारीक पेस्ट बनाने के लिए पीस लें।
  3. फिर एक मोटे तले की कढ़ाई गरम करें और छुआरे के पेस्ट को इसमें डालें।
  4. गुड़ को तोड़ेंकर कढ़ाई में जोड़ें और छुआरे के पेस्ट के साथ अच्छी तरह मिलाएं। आँच को मध्यम स्तर तक कम करें और चलाते हुए 3-4 मिनट के लिए सामग्री को पकाएं।
  5. फिर कढ़ाई में 1 छोटा कप पानी जोड़ें और एक समान समाधान प्राप्त करने के लिए अच्छी तरह से मिलाएं। सामग्री को उबलने दें।
  6. अब उबलते हुई सामग्री में आमचूर पाउडर, लाल मिर्च पाउडर, जीरा पाउडर, काली मिर्च पाउडर और नमक जोड़ें। सभी सामग्री को अच्छी तरह से मिलाएं और फिर आँच को मध्यम स्तर तक कम करें। 5-7 मिनट के लिए इस तरह से सामग्री को पकाएं।
  7. कटा हुआ काजू और किशमिश जोड़ें और तैयार की जा रही चटनी के साथ मिलाएं और फिर गैस बंद कर दें।
  8. छुआरा की चटनी को एक सुन्दर कटोरे में निकालें, फिर उसे ड्राई-फ्रूट्स के साथ गार्निश करें और इसे गर्म पूरी या परांठे के साथ परोसें।
