Lady-finger or Okra or Bhindi is among the most favorite and easily available vegetable in almost every Indian household. Besides its delightful taste, it has innumerable health benefits ranging from high fibre content that aids in weightloss, good folate content, high amount of Vit K, helps in digestion, protects from sunstroke and many more.

Bharwan Bhindi Masala is a tasty variant prepared from lady-finger. It can be prepared in many ways and recipe varies from region to region. Bharwan Bhindi Masala can be served as a main course dish for lunch or dinner with rotis or parathas. It makes a great dish for house parties and get togethers. Given below is a recipe of Bharwan Bhindi Masala prepared using mustard seeds and garlic petals. It is one of the most relished vegetable dish in my family and can be made easily.

Ingredients for making Bharwan Bhindi Masala:

  • Lady-Finger - 250 gms; (भिंडी)
  • Mustard Oil - 2-3 table spoon; (सरसों के तेल)
  • Salt as per taste; (स्वाद के अनुसार नमक)
  • Mustard seeds and garlic paste - 2 table spoon; (लहसुन और सरसों के पेस्ट)
  • Tumeric Powder - 1 tea spoon; (हल्दी पाउडर)
  • Red Chilli Powder - 1/2 tea spoon; (लाल मिर्च पाउडर)
  • Black Pepper Powder - 1/2 tea spoon; (काली मिर्च पाउडर)
  • Cumin Seeds Powder - 1/2 tea spoon; (जीरा पाउडर)
  • Coriander Powder - 1/2 tea spoon; (धनिया पाउडर)
  • Raw Mango Powder - 1/2 tea spoon; (आमचूर)
  • Water - 2 table spoon; (पानी)

Procedure for making Bharwan Bhindi Masala:

  1. Take all the lady-fingers and leave them immersed in water for 5-10 minutes. Now wash them with plain water and chop off the top and bottom ends (as shown in the image below).
  2. Now cut them with a knife at their center along the length. Open the slit and check each of them if they are ripe and in good condition.
  3. In a plate take the paste of garlic and mustard seeds and add the powdered spices (turmeric powder, red chilli powder, black pepper powder, cumin seeds powder, coriander powder and raw mango powder) to it.
  4. Add salt as per taste and 2 table spoon water to the ingredients in the plate and mix them well to form a uniform masala paste for Bharwan Bhindi Masala.
  5. Now take one lady-finger and open it along the slit with the help of one hand and fill in the masala paste (prepared in the previous step) with the other hand. Then apply some masala paste on the outer surface of the lady-finger. Marinate and prepare all the lady-fingers in the same manner for Bharwan Bhindi Masala.
  6. Now heat a non-stick pan and grease it with 1 table spoon mustard oil. Place all the marinated lady-fingers on to the non-stick pan. Lower the flame and cover the pan with its lid. Cook the marinated lady-fingers for 5 minutes over low flame.
  7. After 5 minutes, remove the lid and flip the lady-fingers. Cover the non-stick pan again with its lid and cook for 2-3 minutes.
  8. After 2-3 minutes remove the lid. The lady-fingers will get cooked and shall become soft during this time. Then increase the flame and pour 1 table spoon mustard oil along the edges of the pan. Cook the lady-fingers for 3-4 minutes over high flame until they turn crispy golden in color.
  9. Turn off the flame after 3-4 minutes. The spicy and mouth-watering Bharwan Bhindi Masala is ready to be served.

भरवां भिंडी मसाला बनाने की प्रक्रिया:

  1. सभी भिंडी को लेकर 5-10 मिनट के लिए पानी में डूबा कर छोड़ दें। अब उन्हें दोबारा साफ और सादे पानी से धो लें और ऊपर और नीचे के हिस्से को काट लें (जैसा कि नीचे की छवि में दिखाया गया है)।
  2. अब भिंडी को बीच से चीरा लगाकर काट लें, और देखें कि वे अंदर में कोई कीड़ा न लगा हो।
  3. एक प्लेट में लहसुन और सरसों के पेस्ट का पेस्ट डालें और इसमें सारे पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, काली मिर्च पाउडर, जीरा पाउडर, धनिया पाउडर और आमचूर) जोड़ें।
  4. ऊपर बताई गई सामग्री में स्वाद के अनुसार नमक और 2 बड़ा चम्मच पानी डालें और सबको मिलकर भरवां भिंडी मसाला के लिए एक समान मसाला पेस्ट बनाकर तैयार करें।
  5. अब एक भिंडी को लें और एक हाथ की मदद से उसका चीरा खोलकर, दूसरे हाथ की मदद से भिंडी में मसाले पेस्ट (जो कि पिछले चरण में तैयार) भरें। फिर भिंडी की बाहरी सतह पर थोड़ा मसाला पेस्ट लाग लें। इसी तरह से भरवां भिंडी मसाला के बाकि भिंडी को तैयार करें।
  6. अब एक नाॅन-सटिक पैन गरम करें और उसपर 1 बड़ा चम्मच सरसों के तेल डालकर फैला लें। सभी मैरिनेटेड भिंडी को नाॅन-सटिक पैन पर रखें। आँच को कम करें और नाॅन-सटिक पैन को ढक्कन से कवर करें। अब 5 मिनट के लिए मैरिनेटेड भिंडी को कम आँच पर पकाएं।
  7. 5 मिनट के बाद, ढक्कन को हटा दें और मैरिनेटेड भिंडी को पलट  दें। नाॅन-सटिक पैन को ढक्कन के साथ फिर से कवर करें और 2-3 मिनट के लिए पकाएं।
  8. 2-3 मिनट के बाद ढक्कन को हटा दें। इतनी देर में भिंडी पक कर नरम होजाएगी। फिर आँच को बढ़ाएं और पैन के किनारों के साथ 1 बड़ा चम्मच सरसों का तेल घुमा कर डालें। भिंडी को तेज आँच पर 3-4 मिनट के लिए खस्ता सुनहरा होने तक पकाएं।
  9. 3-4 मिनट के बाद आँच बंद करें और आपकी स्वादिश्ट भरवां भिंडी मसाला परोसने के लिए तैयार है।
