Raw Mango Jam or Kacche Aam Ka Jam Recipe - Learn How To Make Kacche Aam Ka Jam

Homemade Raw Mango Jam or Kacche Aam Ka Jam is an amazing and easy to make bread spread. It is healthier as compared to the ones available in market because it is free from preservatives. It can be prepared easily at home and store in refrigerators for prolonged usage. Learn how to make Raw Mango Jam or Kacche Aam Ka Jam with the help of a detailed recipe and step by step photos given below:

Preparation Time: 10 minutes

Cooking Time: 12-15 minutes

Ingredients for making Raw Mango Jam or Kacche Aam Ka Jam / सामग्री:

  • Raw Mangoes - 4; (कच्चे आम)
  • Sugar - amount of sugar is equal to the amount of grated rawmmango pulp; (चीनी)

Procedure for making Raw Mango Jam or Kacche Aam Ka Jam:

  1. Wash the raw mangoes well with plain water and then pat them dry with a clean cloth.
  2. Now peel off all of the raw mangoes and then grate the mango pulp finely. (Remove the seeds)
  3. Heat a thick based kadhai and then add the grated raw mango pulp and sugar to it. Lower the flame to medium level and start stirring to mix the ingredients with each other. Continuous stirring is required otherwise the ingredients may stick to the base of the kadhai.
  4. After some time of continuous stirring and cooking, the sugar will melt to in the form of syrup and will begin to boil. Stir continuously.
  5. Then again after some more time you will notice that the grate raw mango pulp will start becoming soft and the sugar syrup will become thick in consistency. Stir and cook continuously until the grated raw mango pul gets cooked and blends completely with the thickened sugar syrup. Now lower the flame and continue to stir. The raw mango jam is almost ready.
  6. Keep some water in a bowl and drop a spoon full of the hot raw mango jam into it. If the jam stays as one piece in water and solidifies then the raw mango jam is ready to be cooled. Otherwise, if it spreads and start blending in the water, then you need to cook the raw mango jam for few more minutes over low flame. Also, you can touch the jam with you index finger and thumb to check if it is ready. If the jam is sticky then it is ready to be cooled.

कच्चे आम का जैम बनाने की प्रक्रिया:

  1. कच्चे आमों को सादे पानी के साथ अच्छी तरह धो लें और फिर साफ कपड़े से उन्हें पोछ कर सूखा लें।
  2. अब सभी कच्चे आमों को छीलें और आम का गूदा को बारीक रूप से कद्दू कस कर लें। (आमों के बीज को निकाल दें)
  3. एक मोटे तले की कढ़ाई गरम करें और फिर इसमें कच्चे आम का कद्दू कस किया हुआ गूदा और चीनी को डालें। आँच को मध्यम स्तर तक कम करें और दोनों सामग्री को एक-दूसरे के साथ मिलाना शुरू करें। कल्छी से लगातार चलाते रहें अन्यथा सामग्री कढ़ाई के तले पर चिपकने लगेगी।
  4. कुछ समय तक लगातार चलाने और पकाने के बाद, चाशिनी के रूप में पिघल जाएगी और उबलने लगेगी। इसी तरह लगातार चलाते रहें।
  5. फिर कुछ और समय के बाद आप देखेंगे कि कच्चे आम का कद्दू कस किया हुआ गूदा नरम होने लगेगा और चाशिनी भी गाढ़ी हो जाएगी। लगातार चलाते हुए तब तक पकाएँ जब तक कच्चे आम का कद्दू कस किया हुआ गूदा और चाशिनी एक साथ मिलकर एकसे ना दिखने लगें। अब आँच कम करें और कल्छी से चलाना जारी रखें। कच्चे आम का जैम लगभग तैयार है।
  6. एक कटोरी में थोड़ा पानी रखें और उसमें एक चम्मच से थोड़ा सा गरम कच्चे आम का जैम डाल दें। यदि जैम पानी में एक टुकड़े के रूप में रहता है और जम जाता है तो इसका मतलब है कि जैम तैयार है और अब ठंडा होने के लिए रखा जा सकता है। यदि यह फैले और पानी में घुलने लगे, तो आप इसे कम आँच के ऊपर कुछ और मिनटों के लिए पकाएँ। इसके अलावा, आप जैम को अपने हाथ से छूकर भी देख सकते हैं कि यह तैयार हुआ है या नहीं। अगर जैम एक तार की चाशिनी किओ तरह चिपचिपा है तो यह ठंडा होने के लिए तैयार है। अन्यथा कुछ और देर पकाएँ और फिर ठंडा करें।

(Note: You can add 1/2 tea spoon salt, cumin seeds powder and red chilli powder as per your taste and requirement to the jam. Here we have not added salt and spices to it as we like the simple sweet taste of the jam.)

(Tips: 1. Do not over cook the jam otherwise the sugar syrup will dry up and the jam will become hard. The presence of sugar syrup will help the jam to set when cooled.; 2. Cook the jam over medium flame.)
