Tortilla Sheet Recipe - Learn How To Make Tortilla Sheet

These Mexican Food like tortilla rolls, burrito and quesadilla are quite famous among the kids and young generation and Tortilla Sheet is the base ingredient for all of them. Tortilla sheets are available in market but why buy them when you can make them easily and smartly in your kitchen. They are soft, chewy and so easy to make, that you may not buy them from market again. Learn how to make these Tortilla Sheets with the help of detailed recipe and step by step photos given

Recipe Yield: 4 Tortilla Sheets

Ingredients for making Tortilla Sheets / सामग्री:

  • All Purpose Four - 1 cup; (मैदा)
  • Corn Four - 1/2 cup; (मकई का आटा)
  • Salt - 1/2 tea spoon; (नमक)
  • Sugar - 1/2 tea spoon; (चीनी)
  • Baking Powder - 2 pinch; (बेकिंग पाउडर)
  • Water - as per requirement for making dough; (पानी)
  • Refined Oil - 2 table spoon, optional; (रिफाइंड तेल)

Procedure for making Tortilla Sheets:

  1. Take all prupose flour, corn flour, baking powder, salt and sugar in a big mixing plate or mixing bowl. Mix the dry ingredients well. (You may add refined oil to make the dough. Here we have not used refined oil to make the dough.)
  2. Now add water slowly to the dry mixture and start kneading a medium soft dough (the dough should be soft as the dough made for normal chapati).
  3. Now cover the dough with a clean and moist cloth, and leave it to rest for half hour (30 minutes). After half an hour remove the cloth and knead the dough again nicely and soften it.
  4. Then prepare small and equal sized balls of the dough. Take one ball and roll it until smooth. Then press it to form a peda or tikki and dust it with some dry all purpose flour. Now roll the peda or tikki into a flat, thin and even sheet like chapati. Remember to roll the tortilla sheet as thin as possible.
  5. Now heat a tawa, lower the flame to medium level and place the raw tortilla sheet over it. Take a clean kitchen cloth and fold it to use it to press the raw tortilla sheet, so that it gets cooked uniformly and swells.
  6. When one side gets cooked flip to cook the other side in the same manner. Flip and cook until light brown colored spots appear on either sides. Then remove it from the tawa and prepare other tortilla sheets in the same way. Tortilla sheet are made like the Indian chapatis, except the ingredients used are different. Place the prepared tortilla sheets in contaier covered with cloth so that they remain soft. (These tortilla sheets can be used for making tortilla rolls, quesadilla and burrito.)

टॉर्टिला शीट बनाने की प्रक्रिया:

  1. एक बड़े प्लेट या मिक्सिंग कटोरे में मैदा, मकई का आटा, बेकिंग पाउडर, नमक और चीनी लें। अच्छी तरह से सूखी सामग्री को मिलाएं (आप आटा गूंधने के लिए रिफाइंड तेल जोड़ सकते हैं। यहां हमने आटा बनाने के लिए रिफाइंड तेल का इस्तेमाल नहीं किया है।)
  2. अब धीरे-धीरे सूखे मिश्रण में पानी डालें और एक मध्यम नरम आटा गूंधना शुरू करें (यह आटा सामान्य चपाती के लिए गूंधे हुए आटा के जैसा नरम होना चाहिए)।
  3. अब एक साफ और नम कपड़े के साथ आटा को कवर करें, और उसे आधे घंटे (30 मिनट) के लिए अलग रख दें। आधे घंटे के बाद कपड़े को हटा दें और आटे को फिर से अच्छी तरह से गूंध लें और इसे चिकना करें।
  4. फिर आटा के छोटे और बराबर आकार की लोई तैयार करें। एक लोई लें और अच्छे से चिकना करें। फिर इसे दबाकर पेड़ा या टिक्की के जैसा बनाएं। अब थोड़ा सूखा मैदा छिड़क कर पेड़ा या टिक्की को एकदम पतला बेल लें। जितन पतला बेलेंगे उतनी अच्छी टॉर्टिला शीट बनेगी।
  5. अब एक तवा गरम करें और उस पर कच्ची टॉर्टिला शीट डालें। एक साफ रसोई का कपड़ा लें और उस्से कच्ची टॉर्टिला शीट को दबा-दबाकर सेकें, ताकि टॉर्टिला शीट समान रूप से पक जाए।
  6. जब एक तरफसे पक जाए तो दूसरी तरफ से पकाने के लिए पलट दें और हल्के भूरे रंग के रंग के धब्बे पड़ने तक दबा-दबाकर पकाएं। तब इसे तवा से हटा दें और उसी तरह बाकि टॉर्टिला शीट तैयार करें। टॉर्टिला शीट सामान्य रोटी/चपाती की तरह ही बनाई जाती है, बस इसको बनाने के लिए अलग सामग्री का इस्तेमाल करते हैं। एक बरतन में कपड़ा लगाकर तैयार टॉर्टिला शीट को रखें ताकि वे नरम रहें। (इन टॉर्टिला शीट का इस्तेमाल टॉर्टिला रोल, केसाडिला और बुरितो बनाने के लिए किया जा सकता है।)
