Aam Ka Meetha Achaar Recipe - Learn How To Make Aam Ka Meetha Achaar

An ancient recipe that is loved by peopl of all ages is the Aam Ka Meetha Achaar. Eat it with paratha or poori, or even a plain chapati it is sure to remind you of your childhood vacations at your granny's house. It is easy to make and can be stored in a cool dry place for prolonged use. Learn to make this achaar with the help of a detailed recipe and step by step photos given below:

Preparation Time: 15 minutes

Cooking Time: 3-4 hours for marinating the raw mangoes with sugar + 15 for cooking the achaar 

Ingredients for Aam Ka Meetha Achaar / सामग्री:

  • Raw Mango - 250 gm; (कच्चा आम)
  • Sugar - 200 gm; (चीनी)
  • Salt - 1 tea spoon heaped; (नमक) 
  • Ainseeds - 1/2 tea spoon; (सौंफ)
  • Fenugreek Seeds - 1/2 tea spoon; (मेथी दाना)
  • Onion Seeds - 1/2 tea spoon; (कलोंजी)
  • Carom Seeds - 1/2 tea spoon; (अज्वैन)
  • Cumin Seeds Powder - 1 tea spoon heaped; (जीरा पाउडर)
  • Black Pepper Powder - 1 tea spoon heaped; (काली मिर्च पाउडर)
  • Red Chilli Powder - 1 tea spoon heaped; (लाल मिर्च पाउडर)

Procedure for making Aam Ka Meetha Achaar:

  1. Wash the raw mangoes well with plain water and pat it dry with a clean dry cloth.
  2. Peel the raw mangoes and then cut the pulp into thin and long pieces. (Remove the seeds from all the raw mango)
  3. Then put the pieces of the raw mangoes in a glass vessel and add sugar to it. Mix the 2 ingredients well together. Then leave the mixture to rest for 3-4 hours. During this time the raw mango pieces will get nicely marinated with the sugar.
  4. Now heat a thick based kadhai and be careful not to use kadhai made of iron.
  5. Then add the raw mango and sugar mixture to it. Stir and cook the mixture over medium flame for 5 minutes. The raw mango pieces will start becoming soft during this time.
  6. After 5 minutes add salt, red chilli powder, cumin seeds powder, black pepper powder, carom seeds, fenugreek seeds, ainseeds and onion seeds to it. Mix all the ingredients well.
  7. Stir and cook for 8-10 minutes more so that the raw mango pieces become soft and tender. Remember that there should remain some sugar syrup in the kadhai. Do not overcook to evaporate the entire sugar syrup. Turn off the flame. The raw mango sweet pickle or "Aam ka meetha achaar" is now ready. Allow it to cool and then store it in glass jars. Serve this "Aam ka meetha achaar" with hot parathas, pooris, roti or rice.

आम का मीठा अचार बनाने की प्रक्रिया:

  1. कच्चे आमों को सादे पानी से धो लें और साफ सूखे कपड़े से पोछ कर सूखा लें।
  2. अब कच्चे आमों छील लें और फिर उनके गूदे को पतले और लंबे टुकड़ों में काट लें। (आमों से बीज निकाल लें)
  3. फिर एक कांच के बरतन में कच्चे आमों के टुकड़े डालें और उसमें चीनी जोड़ें। अच्छी तरह से एक साथ दोनों सामग्री को मिलाएं। फिर मिश्रण को 3-4 घंटे तक ढक कर छोड़ दें। इस समय के दौरान कच्चे आम के टुकड़े चीनी के साथ अच्छी तरह से मैरिनेट होजाएंगे और चीनी आम के रस के साथ अच्छे से मिल जाएगी।
  4. अब एक मोटे तले की कढ़ाई गरम करें (ध्यान रहे कि लोहे की कढ़ाई का उपयोग न करें)।
  5. फिर कच्चे आम और चीनी का मिश्रण इसमें डालें। चलाते हुए 5 मिनट के लिए मध्यम आँच पर मिश्रण को पकाएं। कच्चे आम के टुकड़े इस समय के दौरान नरम होना शुरू हो जाएंगे।
  6. 5 मिनट के बाद कढ़ाई में नमक, लाल मिर्च पाउडर, जीरा पाउडर, काली मिर्च पाउडर, अज्वैन, मेथी दाना, सौंफ और कलोंजी डालें। अच्छी तरह से सभी सामग्री को मिलाएं।
  7. चलाते हुए 8-10 मिनट के लिए मध्यम आँच पर मिश्रण को पकाएं ताकि कच्चे आम के टुकड़े नरम होजाएं। याद रखें कि कढ़ाई में कुछ चाशिनी बचनी चाहिए। चाशिनी को पूरा नहीं सुखाना है। फिर आँच बंद कर दें और आपका "आम का मीठा अचार" अब तैयार है। इसे ठंडा होने दें और फिर इसे कांच के जार में निकाल कर रखें। यह "आम का मीठा अचार" गरम पराठे, पूरी, रोटी या चावल के साथ परोसें।

(Tips: 1. The flame should be at medium level throughout the process of cooking the achaar; 2. Remember not to overcook and evaporate the entire sugar syrup. Some sugar syrup should remain with the other ingredients after cooking the achaar.; 3. do not use or add water during the entire process of cooking the achaar)
